This paper considers a large mural of “The Modern Woman” painted in France by the American artist Mary Cassatt for the Woman’s Building at the World’s Columbian Exposition in Chicago in 1893. It focuses in particular on the large central panel of the mural titled Young Women Plucking the Fruits of Knowledge or Science that depicts women and girls apple-picking. Cassatt’s mural drew on various traditions and myths. Apple harvesting was a common sight in America. In 2017, Marije Vogelzang's interactive performance at the Museum of Rotterdam, 'Black Confectti', was designed to enable the experience of a difficult wartime past. Using authentic recipes from the war press, she prepared dishes based on the creativity of the crisis. In the face of starvation and the struggle for life, the selflessness of creative action in the kitchen and the effort of documentation in the form of recipes from the past and culinary fantasies from the past proved to be a helpful tool for surviving the most oppressive situation. This paper analyses and categorises the ways in which authors and their publishers have chosen to include the author’s culinary, food and personal memories within the texts of twenty twentieth century Irish Cookbooks. Cookbooks are subjects of culinary nostalgia with the reading of a recipe capable of triggering in the reader a memory of a meal enjoyed, a dish cooked in times past by a loved one, or recollections of the disgust felt for a food hated in childhood. During the mid-2000s to the early 2010s, the domestic ethanol industry witnessed substantial growth, with ethanol coproducts emerging as vital elements for plant profitability and livestock feeding. Initially serving as supplementary revenue streams, coproducts from ethanol production have evolved into diverse value-added offerings, bolstering revenue streams, and sustaining profit margins. This study reviews existing economic research on ethanol coproducts, detailing methodologies, product focus, and research locations. Initially gathering 972 articles from 9 databases, 110 articles were synthesized. We find that most studies primarily examined the growth and future of the ethanol industry with a limited focus on specific coproducts. Feed-use …

This paper investigates the relationship between refugee migration and urban food security, focusing on Somali migrants in Nairobi, Kenya. Despite the abundance of literature on urban refugees and their economic integration, scant research has addressed their food security challenges. Utilizing a household survey conducted in Nairobi’s Eastleigh neighborhood, the paper explores the levels, determinants, and spatial variations of food security among Somali refugees. Findings reveal that while migration to Nairobi generally improves food security compared to conditions in Somalia, substantial disparities exist within the refugee population, with a significant portion still facing severe food insecurity. This paper investigates the impact of migrant remittances on food security among multi-local households within Ghana and Qatar, focusing on the experiences of Ghanaian labour migrants. Through a mixed-methods approach comprising household surveys in Ghana and in-depth interviews with migrants in Qatar conducted from March to June 2023, the paper explores how remittances influence the food security status of recipient households and the socioeconomic conditions of migrants. The findings suggest that remittances play a critical role in enhancing household food security in Ghana by enabling better access to food and improving dietary diversity. Diet-related diseases impact populations across the globe. While intertemporal preferences—a fundamental preference for the distribution of benefits across time—have been used to explain low-quality food choices, the recent literature proposes another cause: inattention to the future implications (or opportunity costs) of the options faced. Food choices tend to become habitual to conserve cognitive resources, rather than carefully modeling future health impacts. Both low discount rates for future benefits and attention to future health impacts predict healthier decisions. While intertemporal preferences are stable, attention may provide an opportunity to intervene in the decision process to promote healthier decisions. In this study, …

The challenges and struggles of refugees are well documented, mainly within refugee camps. However, more needs to be documented and understood about the exertions and hardships of urban refugees, including the experiences of young South Sudanese urban refugees living in Kenya. Although Kenya is one of the major countries that hosts refugees from South Sudan, it has adopted disparate policies for refugees in camp settings and those outside the camps. This divergent approach placed urban South Sudanese refugee youth in highly precarious circumstances during the COVID-19 pandemic. The study examines the relationship between the corporate social responsibility (CSR) investments of a food firm, an activist’s incentive to target the firm to uncover and deter fraudulent behavior, and the firm’s incentive to commit food fraud. Specifically, we develop a game theoretic model to analyze the strategic interaction between a food firm that decides whether to provide a credence food attribute and whether to misrepresent the quality of its product, and an activist who decides whether to monitor the firm and launch a campaign to uncover and remove false/misleading quality claims. Although there has been much research into certain gluten-free food products, there remains a gap in understanding the sensory attribute differences between traditional and gluten-free cookies. The aim of this study was to determine differences in sensory attributes and consumer acceptance of gluten-free versus gluten-containing chocolate chip cookies. This study proposes strategies to better recognize and protect the food security needs of Kampala’s refugee population. Uganda is Africa’s largest refugee host, with a policy approach that has been widely lauded for its flexible settlement provisions and commitment to durable solutions. However, growing refugee populations and underfunding have led to serious pressures, severely exacerbated during the COVID-19 pandemic. Food insecurity in designated refugee settlements is at critical levels: 75% of residents are food insecure. One unique aspect of Uganda’s refugee governance approach is the allowance of refugee populations to self-settle outside of designated camps, in the capital city, Kampala. …

Unlocking The Secret To Weight Loss: Discovering The Most Effective Green Tea Products, Seoyeon Kim

SACAD: Scholarly Activities

To find the most effective green tea product that can replace

weight loss drugs, we compared the amount of catechin in six

different green tea products. The result was green tea latte

powder contained a significantly small amount of catechin

compared to other products, and the dried pearl green tea leaves

had the highest amount of catechin. Also, the unexpected result

was that green tea supplements had less amount of catechin

compared to dried leaves or even tea bags that are commonly

sold in markets.

Government and corporate policies have mandated a reduction in plastic packaging to combat issues of waste and climate change. This move towards sustainable packaging alternatives in the fresh food sector will increase costs for consumers. Much of the present research finds consumers are willing to pay more for sustainability, but their willingness to pay (WTP) does not align with real-world purchases, representing an attitude–behaviour gap. To combat this gap, it is posited that consumers’ current purchasing- and sustainability-related behaviours will meaningfully correlate with their WTP and bridge the attitude–behaviour gap.
