ABSTRACT This exploratory study aims to explore the unknown needs among the unaccompanied youth population within a small urban community in West Texas. This cross-sectional study surveyed a convenience sample of 10 unaccompanied youth attending school within an independent school district. Data were collected using a social worker’s case load during the spring semester of 2020, during the COVID-19 global pandemic. Findings showed a certain level of need within this community, such as emergency shelters and further research on food insecurity for this population. This implies the need for practice and policy on multiple levels to help this population who …

In June 2009, a group of masters students from the University of Gastronomic Sciences in Italy spent nine days visiting the lands of the Tevere river, travelling from its springs on Monte Fumaiolo in Emilia-Romagna to Rome by way of Umbria and the Lake Trasimeno. This article is a gastro-historic portrait of the lands of the Tevere, linking contemporary social, cultural and economic activities around food and tourism to the rich and long history of the region and highlighting persistent patterns, continuity and change.

Consumer socialization literature has focused on individual socialization agents and their isolated effects. However, as John (1999) pointed out, children do not grow up in a social vacuum. Instead, the multitude of agents socializing children find their narratives interacting and their effects continually shaped and co-created. To understand how school-age children learn about food, I interrogate the complexity of socialization in three essays.

Fortification of rice by parboiling is considered a potential alternative to currently available fortification technologies to produce rice with higher mineral and vitamin content significantly contributing to nutrient intake in populations with high prevalence of micronutrient deficiencies. Higher nutrient retention rates and improved sensory characteristics are advantages of fortified parboiled rice compared to fortified rice obtained by currently used fortification technologies including dusting, coating, and extrusion. However, conventional parboiling processes employ excess water that presents an environmental hazard if discarded without treatment. This paper examines adoption of online grocery shopping, and potential cost and time savings compared to brick and mortar food retailers, by New York City public housing residents using Supplemental Nutrition Assistance Program (SNAP) benefits. A mixed methods action research project involving the co-creation of an online shopping club, the Farragut Food Club (FFC), recruited 300 members who registered to shop online using SNAP, and received waivers on delivery minimums and provided technical assistance and centralized food delivery. Purpose: This project aimed to measure the acceptability and feasibility of plant-based diets among low-income individuals with type II diabetes at the Samaritan House Food Pharmacy and to create a user-centered pilot program to encourage the adoption of a plant-based diet.

Background: Plant-based diets are effective for preventing, treating, and reversing type II diabetes, but there is not much evidence about the acceptability and feasibility of these diets.

High Fructose Corn Syrup is believed to be responsible for the increase of the obesity epidemic that is affecting both developed and developing countries, yet to date there are no rigorous analyses that quantify this effect. To estimate the impact of consumption of HFCS on obesity, I have paired country-specific data on imports of HFCS from the United Nations International Trade Statistics Database (UN Comtrade) with women and child health data from around 70 countries from 1985 to 2018. Dietary supplements containing bovine (subfamily Bovinae) liver are susceptible to fraud due to the lack of modern detection methods available for processed animal tissues and premium pricing for dietary supplements. Therefore, the objective of this research was to use molecular methods to authenticate dietary supplements claiming to contain “bovine liver” or “beef liver” through the verification of species and animal tissue. A total of 53 bovine/beef liver dietary supplements were purchased from online sources. Consequently, these shared exchanges can reveal much about the society and the individuals who engage in the act. How does the historical legacy of agriculture affect democratic traditions in contemporary societies? This paper provides empirical evidence that inherent crop yield and democracy exhibit an inverted U-shaped relationship. This finding is supported by cross-country data from up to 147 countries, 186 pre-colonial societies, and the U.S. states. The relationship thus exhibits a highly persistent pattern. Crop yield is measured by kilocalories per hectare per year under rain-fed conditions, which has the advantage of being highly exogenous. The hump-shaped relationship holds up to a battery of robustness tests.
