Numerous stakeholders in Nevada have used a variety of efforts to combat the growth of food insecurity facing Nevadans. The purpose of this research project is to understand the association between food insecurity, community gardens, and property value. Following the wealth of scholarship on these topics and data collected from community garden agencies in Southern Nevada, the research questions for this project include: (1) Where are community gardens located in SNV? Thomson and Rodriguez discuss the issue of food insecurity on college campuses. We know that nutritious foods and quality physical activity are two of the fundamental needs for normal growth and development of children. Food based dietary guidelines and physical activity recommendations have universal evidence base but the teaching of fundamental movement skills is limited without support. Given the importance of prevention of childhood obesity the distal drivers also need to be examined including poverty. Interventions trialled in carefully controlled conditions while shown to have efficacy are not effective in the real world. This paper investigates what factors and characteristics of organic consumers affect annual organic food expenditure by using Nielsen’s consumer panel dataset from 2010 to 2014. To be specific, this paper explores new marketing opportunities by investigating organic consumer heterogeneity in different household income levels by utilizing the multilevel model. Findings in this study will contribute to the previous and existing literature in three-folds. First, we find that the organic consumers are more heterogeneous in the high-level of income groups (approximately above $60,000), as well as the low-income households between $35,000 and $45,000. The #MeToo movement and the growing spotlight on sexual harassment and misconduct has increasingly brought industries and individuals into the public eye. The restaurant industry is one such industry to receive this spotlight. While most of the coverage has stemmed from celebrities, the misconduct of celebrity chefs has been paralleled by the stories of servers and their customers. The NY Times published several articles on harassment in the restaurant industry and some specifically focusing on the abuses that tipped workers face. Often these workers were women. This analysis will explore the theoretical underpinnings of the neoliberal food regime in relation to American democracy, and how an alternative food regime of food sovereignty may help to expand American democracy. The latter regime has an integrative approach to promote democracy through realigning the food system with collective decisions at its base instead of distancing the people from food and providing the opportunity for a self-ruling demos to collectively govern. Current efforts to address food insecurity include developing and implementing policies, programs, and practices at the federal, state, and local levels. Specifically, local efforts target decreasing food insecurity through emergency food networks including food banks and food pantries. This report provides a deeper understanding of the food insecurity situation in Singapore. Food insecurity refers to the lack of physical and/or economic access to sufficient, safe and nutritious food. The report sheds light on those experiencing food insecurity and the factors affecting this experience. In addition, it identifies gaps in food support provision and makes recommendations on how these gaps might be filled for a smoother and targeted food support distribution system.

Inflammation is one of defense reactions of our body tissues against harmful stimuli such as infection and tissue injury. However, it has been reported that chronic inflammation can lead to chronic inflammatory diseases including diabetes, cardiovascular diseases and cancer. This transition from acute to chronic inflammation state is usually induced by pro-inflammatory mediators and cytokines including nitric oxide (NO), prostaglandin E2 (PGE2), interleukin-1β (IL-1β), interleukin-6 (IL-6), and tumor necrosis factor-α (TNF-α), which accelerate the development of other chronic diseases. Our final project aimed to validate indigenous knowledge and empower younger generations about their rich, organic farming practices while also debunking the stereotypes of American food culture. Additionally, we aimed to reverse the sense of inferiority about agricultural practices in Sikkim amongst young people. The first component will consist of a cooking activity focused around forgotten foods. The second part of the project compares the preparation process of two dishes– one made in Sikkim and the other from the United States. Abstract: In the context of introducing biofortification of staple crops as a food-based approach to combat micronutrient malnutrition in Sub Saharan Africa (SSA), we carried out a survey in Tamale, Ghana to elicit consumers’ preference of and willingness to pay for one of the highly nutritious biofortified staple crop processed product: the Orange Fleshed Sweet Potato (OFSP) bread. Our results indicate that scores of respondents in the sample show preference for OFSP bread. The most important determinants of OFSP bread preference are its sweet taste and soft texture and consumers are willing to pay 0.634 pesewas more for the attribute …

This paper explores North America’s food waste issue associated with our current industrial globalized food system. Through a sociocultural lens, this essay examines the new social movement of dumpster diving among food waste activists and ‘freegans’ in urban areas. Millions of people are currently unaware as to where their next meal will come from, yet Western households and supermarkets waste massive amounts of edible food. Objective: This paper investigates the role of peer support in food security among deaf college students. Participants: The sample included 166 college students who took the survey between May and October 2017. Methods: Participants completed a bilingual online survey in ASL and English. This survey included questions about peer support, the USDA’s 6-item food security module, and sociodemographic characteristics. Results: Out of 166 students (mean age=23; SD=6), 60.7% were food secure. About 26.4% (n= 43) were at-risk for food insecurity and another 12.9% (n=21) had very low food security. My graduate thesis project entitled “(In)visibility and Meaning in Food Labor: A Feminist Autoethnography” illuminates the gendered experiences of female food laborers and how women make meaning through their labor in this context. Gendered experiences do not stand apart from classed and raced identities, which I also reflexively analyze throughout this thesis. Women working within the food chain have been historically marginalized and made invisible, though they make up an increasingly significant portion of this workforce, a trend known as the “feminization of agriculture.” The discussion of the work that women do when discussing food in the academic literature also …

The Denison Pequotsepos Nature Center (DPNC) is a community organization that, through its various programming, works to perpetuate a vision of humans as part and parcel of the world. In 2013, when the Nature Center acquired the Coogan Farm property, the organization built a community garden called the Giving Garden to serve surrounding communities, expanding services to the foodservice sector educational programming around sustainable agriculture. The purpose of this study is to identify and describe the barriers that prevent local food producers from selling their food in a mainstream market. This study utilized both qualitative and quantitative analysis through a mixed-methods survey. Information collected through the study had a two-fold focus: barriers that producers face (or that they are providing assistance for) and what are consumers looking for in products that these producers are supplying.
