Current efforts to address food insecurity include developing and implementing policies, programs, and practices at the federal, state, and local levels. The Denison Pequotsepos Nature Center (DPNC) is a community organization that, through its various programming, works to perpetuate a vision of humans as part and parcel of the world. In 2013, when the Nature Center acquired the Coogan Farm property, the organization built a community garden called the Giving Garden to serve surrounding communities, expanding services to the foodservice sector educational programming around sustainable agriculture. DPNC’s partnership with the Robert G. Youngs Family Foundation, United Way of Southeastern Connecticut, and Gemma E. Malnutrition is an important public health issue in Burkina Faso where 30 % of children are underweight for their age and 92% suffer from iron deficiency. Such statistics indicate that there is a significant lack of adequate nutrition in the country. With approximately 80% of the population employed in the agricultural sector, development projects have focused on increasing agricultural production and commercializing output to ameliorate poor nutrition. The objective was to assess whether the food environment at the University of Nebraska-Lincoln (UNL) campuses supports healthy eating behaviors using components of the Healthy Campus Environmental Audit (vending, dining, and convenience store audits). Secondary aims were to compare the UNL food environment to other college campuses and explore whether there are existing health promotion and obesity prevention initiatives, programs, pledges and/or policies at UNL.

While much is known about the outcomes of providing opportunities for young people to be actively and civically engaged in their communities, there is a lack of research on the pathways, narratives, and experiences that bring young people into food justice activism.

The Slow Food Movement (SFM) has been characterized as a reminder of the centrality of the kitchen in the “good old days”. It has also been referred to as a poor use of science posing as a rallying point for the beleaguered middle class trying to reclaim psychological territory lost to the fast-paced commercialization of what was once private or leisure time. This paper argues that both these criticisms contain more than a kernel of truth. However, each misses the mark when it comes to explaining the relative successes of SFM. We Like Fried Things: Negotiating Health, Taste And Tradition Among Spanish Caribbean Communities In New York City, Melissa Fuster

The study was conducted to understand fried-food (FF) consumption among Hispanic Caribbean (HC) communities in New York City. Data were collected through qualitative interviews with 23 adults self-identified as Cuban, Dominican, or Puerto Rican. Most informants considered FFs an important part of their traditional diet. Potential explanations included taste, cost, convenience, and the emotive values attached to FF. FF consumption was contextualized in local foodscapes. Results include strategies to diminish FF consumption and differences across HC groups and migratory generations. The relevance for future nutrition interventions addressing health disparities in this community is discussed

Purpose: Using the Academy of Nutrition and Dietetics benchmarks as a framework, this study examined childcare providers’ (Head Start [HS], Child and Adult Care Food Program [CACFP] funded, and non-CACFP) perspectives regarding communicating with parents about nutrition to promote children’s health.

Design: Qualitative.

Setting: State-licensed center-based childcare programs.

Participants: Full-time childcare providers (n ¼ 18) caring for children 2 to 5 years old from varying childcare contexts (HS, CACFP funded, and non-CACFP), race, education, and years of experience.

Methods: In-person interviews using semi-structured interview protocol until saturation were achieved. Thematic analysis was conducted.

Food security among Puerto Rican households is low. Food security is defined as having “access by all people at all times to enough food for an active, healthy life” (1). Conversely, food insecurity implies limited or uncertain access to healthy foods (1). In this paper, I will explore the ways in which locals interact with new food options on the island of Bali. Specifically, I will explore dietary behaviors surrounding pre-­‐ packaged snacks and ‘fast-­‐food’ chains and determine whether the presence of these food options is affecting the Balinese’s relationship with more traditional cuisine. This study uses a narrative approach to explore the role of soup kitchens in the predominantly Coloured and English-speaking Wentworth community. Many of the community’s churches1 and non-profit organizations host soup kitchens regularly, rotating so that there is a meal available each day of the week.

Qualitative data was gathered through volunteering with the soup kitchens as a participant observer and having conversations and open-ended interviews with soup kitchen guests and hosts. Recent evidence predicts that by 2030, Ireland will have the highest rate of obesity in Europe. Consequently, there are concerns that health problems associated with this condition will present in childhood. Studies have shown that interventions based on increasing physical activity (PA) levels, reducing sedentary lifestyles and improving nutritional habits all pose protective mechanisms against obesity and its related disorders in youth. Yet, to date, there are no interventions being delivered in Ireland that concurrently target PA, nutritional habits and sedentary time amongst school children.

Objective: Dietary guidelines are important education and policy tools to address local nutrition concerns. The current paper presents a comparative analysis of nutrition messages from three Spanish-speaking Caribbean countries (Cuba, Puerto Rico and Dominican Republic) to explore how these dietary guidelines address common public health nutrition concerns, contextualized in different changing food environments and food culture similarities.

Design: Qualitative, comparative analysis of current dietary guideline documents and key recommendations.

More effective methods are needed to prevent the growth and recontamination of L. monocytogenes on ready-to-eat (RTE) food products. Rice drying operations can encounter problems of over drying and losses in head rice yield (HRY) through the formation of fissures. Typical rice drying methods also utilize large volumes of expensive fossil fuels to dry the kernels. Drying of rice with a solid desiccant such as silica gel has several potential advantages that avoid some of these problems. Two cultivars of long-grain rough rice, ‘Cheniere’ and ‘Wells’ with harvest moisture contents of 17.8% and 22.0%, respectively, were dried over a 48-h period with various ratios of rough rice-to-silica gel.
