Numerous stakeholders in Nevada have used a variety of efforts to combat the growth of food insecurity facing Nevadans. The purpose of this research project is to understand the association between food insecurity, community gardens, and property value. We know that nutritious foods and quality physical activity are two of the fundamental needs for normal growth and development of children. Food based dietary guidelines and physical activity recommendations have universal evidence base but the teaching of fundamental movement skills is limited without support. Given the importance of prevention of childhood obesity the distal drivers also need to be examined including poverty. Interventions trialled in carefully controlled conditions while shown to have efficacy are not effective in the real world. Inflammation is one of defense reactions of our body tissues against harmful stimuli such as infection and tissue injury. However, it has been reported that chronic inflammation can lead to chronic inflammatory diseases including diabetes, cardiovascular diseases and cancer. This transition from acute to chronic inflammation state is usually induced by pro-inflammatory mediators and cytokines including nitric oxide (NO), prostaglandin E2 (PGE2), interleukin-1β (IL-1β), interleukin-6 (IL-6), and tumor necrosis factor-α (TNF-α), which accelerate the development of other chronic diseases. The purpose of this descriptive study was to determine the reasons why 38% of the students at the University of Arkansas experience food insecurity, yet only 1% of students have used the Jane B. Not So Bizarre Foods is a summer-term program designed for upper-level Culinary Arts students from Johnson and Wales University, Providence. Unlike other programs serving students in the Culinary Arts, this unique model includes multiple locations and an internship. The proposed program features three month-long modules based in Lyon, France; Munich, Germany; and Naples, Italy allow for comparison across locations. Objective
The goal of the present study was to use a methodology that accurately and reliably describes the availability, price and quality of healthy foods at both the store and community levels using the Nutrition Environment Measures Survey in Stores (NEMS-S), to propose a spatial methodology for integrating these store and community data into measures for defining objective food access.
Setting
Two hundred and sixty-five retail food stores in and within 2 miles (3·2 km) of Flint, Michigan, USA, were mapped using ArcGIS mapping software.

Chronic conditions are now the leading contributors to the burden of disease and associated healthcare expenditure in Australia. Wholefood plant-based diets are an evidence-based approach to the prevention, management and even reversal of many types of chronic disease. However, numerous practical, cognitive, social and intrapersonal barriers inhibit the ‘mainstreaming’ of plant-based diets (PBDs). Online communities may provide the informational, emotional and social support to help members overcome these barriers. Supporting local food has been a goal of dining services for some time now. Buying local means you know exactly where your food is coming from. Typically the farmer has a direct relationship with the processors that puts pressure on them to abide by all laws and regulations. Secondly, the shorter time between the farm and your table, the less likely that nutrients will be lost during the time it takes to transport food across the country. The Maya, a once great civilization, seemingly vanished without an obvious reason, before the Spanish landed in the region. Some say that their downfall was a result of famine and inadequate nutrition. Surprisingly, most of the archaeological evidence surrounding the Classic Maya diet and subsistence methods indicates that they both adequately sustained the population to the point where there has been practically no change over hundreds of years. Our goal with the present proposal is to bring modifications to the dining experience in Kimball Hall at the College of the Holy Cross, so to encourage a more well-rounded approach, which would best represent the values of continuous learning and education of the whole person and reflect the mission of the College. In order to meet these goals, we recommend five changes to Kimball dining , which we plan to implement during the Spring 2017 semester in collaboration with two Montserrat seminars.

The Social and Solidarity Economy (SSE) is a viable strategy in dealing with some contemporary problems known both in industrial and developing countries. Addressed is how local populations could reach certain objectives and satisfy certain needs using techniques characteristic of SSE and, thus, carve out a social and economic space of their own vis-à-vis anonymous markets, global actors, local and national elites. Over 30% of adults in the U.S. are obese. A primary contributor to obesity is an unhealthy diet related to imbalanced macronutrients. Diets higher in protein (PRO) rather than carbohydrate (CHO) are associated with increased energy expenditure (EE) and reduced food intake. The objective of this pilot study was to determine if protein source at breakfast influences EE in young men (n = 4; ages 18-35). Participants consumed three isocaloric (whey (WP), pea (PP), beef (BP); 275 kcal, 62% PRO, 23% CHO, 15% Fat) drinks in a randomized, crossover design study with a one-week washout period (time between the administration …

The purpose of this project was to create an empowerment program for children with severe food allergy (SFA) in a residential camp setting. Despite recent advancements in research, there is no cure for SFA, thus there is a need for programs to help children manage their allergies and cope with the ramifications of their condition. Quality of life is a major concern for children with SFA, as the constant fear of exposure to an allergen can lead to high levels of anxiety. This is particularly noteworthy because, barring exposure to an allergen, these children are otherwise healthy and symptom free. …

Objective. To determine the relationship between consumption of all types of nuts, tree nuts, and peanut and peanut butter and specific memory domains of cognitive function in a community-dwelling elderly population.
Design. Cross-sectional analysis using clinic data from the Biopsychosocial Religion and Health Study and dietary intake data from the Adventist Health Study-2.
Subjects/Methods. Adults aged 50 and older were administered the California Verbal Learning Test-II (CVLT) Short Form and provided self-report frequency and portion sizes of nut consumption, anthropometric measures, and other demographic, lifestyle, and clinic data. The fact that people are living longer has heightened awareness of the elderly and many of their special needs. Due to this trend, experts have begun to more closely investigate caloric and nutrient needs of the elderly as well as factors that may alter dietary intake. Forty-two older persons in Lincoln County, West Virginia agreed to participate in research designed to explore the relationship between dietary intake and food availability among rural, community-based elderly. Participants completed a 38 item telephone questionnaire which provided information on demographics, grocery shopping habits, and dietary intakes. A second survey addressed food availability at all …

The purpose of this research was to determine whether whole wheat and lentils, food staples consumed in the Middle East, will exhibit delayed protein complementation when fed in alternating meals. Lentils are limiting in sulfur containing amino acids, especially methionine, while whole wheat is limiting in lysine, and when these proteins are fed together they supplement one another.
Sixty male, Sprague-Dawley weanling rats were divided into six diet groups with ten in each group as follows: diets fed ad libitum; wheat, lentils, wheat and lentils combined; diets pair-fed; wheat and lentils combined, wheat alternating with lentils, lentils alternating with wheat. …
