Preceptorship Within Accredited Nutrition And Dietetics Programs: A Pragmatic Mixed Methods Study, Angela K. Brekken

The purpose of this pragmatic mixed-methods study was to identify the factors that impact a nutrition professional’s preceptorship decision and potential solutions to combat preceptor shortages within accredited nutrition and dietetics programs. Homan’s social exchange theory provided the theoretical framework that if perceived costs of preceptorship outweigh the perceived benefits, then the activity will cease.
Phase one of the study included an online mixed-methods questionnaire. Phase two included a qualitative focus group and interview with self-identified volunteers from phase one. Quantitative analysis through SPSS included descriptive statistics (means and standard deviations) and inferential statistics (one-way ANOVA). Qualitative data for both …

Food allergies have become increasingly common over the past several years among children in the United States (Comberiati et al., 2019; Sicherer et al., 2017). Food allergies are a negative immune response occurring in the body after eating a specific food (Sicherer et al., 2017). Unlike food intolerances, such as lactose intolerance which causes uncomfortable symptoms in the stomach and intestines, allergic reactions to food can cause a wide range of serious and sometimes fatal symptoms (Konek & Becker, 2020). Stress is something that everyone faces in their lifetime and has an everlasting impact on their health. College students face high levels of stress throughout the semester, but how is that impacting their behavior? I conducted a survey alongside Dr. Melanson, a professor in the Department of Nutrition and Food Sciences, to see just how college students are reacting to stress. The survey was circulated to different departments and classes to achieve a widespread collection of data. Objective: This study compared severity of food insecurity, characteristics, and behaviors of college students with and without diagnosed medical disorders.
Design: Data were collected using a cross-sectional online questionnaire. Variables measured were food security status, disorders, coping strategies, and perceived barriers to food access. Descriptive and inferential statistics examined associations and compared groups. Statistical significance was p≤0.05.
Setting: Data were collected at Appalachian State University in North Carolina.
Participants: The sample was 247 food insecure students, of whom 60% were females, 50% 3rd- and 4th-year students, and 75% whites.

Objectives: Fruits and vegetables (FV) play an important role in people’s health. The current study aimed analyzed if specific colors of FV are associated with type 2 diabetes mellitus (DM) risk in the United States (US) Hispanic/Latino population.
Methods: This study used participants from the Hispanic Community Health Study/Study of Latinos (HCHS/SOL). It is a multi-center, prospective cohort study with 5,740 self-identified Hispanic/Latino individuals from 2008-2011. Data collected include anthropometrics, oral glucose tolerance test (OGTT), dietary intake, medical history, physical activity, and sociodemographic information. FV are categorized into five color groups: green, white, yellow/orange, red/purple, and uncategorized.

Rural Appalachian populations have greater rates of obesity and chronic diseases attributed to lesser consumption of fruits and vegetables (F/V) and physical inactivity. Barriers to F/V consumption and physical activity include poor access and affordability. To help overcome these barriers, a community-initiated walking and farmers market F/V voucher program was implemented.
Participants were encouraged to walk (1.2 miles roundtrip) to the local farmers market to redeem a $10 voucher which could only be spent on F/V. Purpose: In this pilot study, researchers explore an online animated simulation as an educational tool for emerging health professionals to promote cultural competence of poverty, food insecurity, and the Supplemental Nutrition Assistance Program.Methods: Researchers recruited participants in the allied health sciences for focus groups to explore the effectiveness of an online animation in promoting cultural competence of poverty, food insecurity, and public assistance programs. Because supermarkets are a critical part of the community food environment, the purpose of this paper is to examine the association between accessibility to the supermarket where participants were surveyed, frequency of shopping at the supermarket, and self-reported and objectively-assessed fruit and vegetable consumption. Accessibility was assessed using Geographic Information Systems (GIS) measured distance and multiple versions of the modified Retail Food Environment Index (mRFEI), including a localized road network buffer version. Food insecurity occurs when an individual does not have consistent access to fresh, nutritious food in safe, socially acceptable, and affordable ways. This is a significant challenge facing Kentuckians, with one in six adults and one in four children experiencing some degree of food insecurity. The present study examines the effectiveness of customized nutrition education in improving 1) nutrition-related behaviors associated with food insecurity and 2) management of household food supply in food-insecure individuals with and without children. The Slow Food Movement (SFM) has been characterized as a reminder of the centrality of the kitchen in the “good old days”. It has also been referred to as a poor use of science posing as a rallying point for the beleaguered middle class trying to reclaim psychological territory lost to the fast-paced commercialization of what was once private or leisure time. This paper argues that both these criticisms contain more than a kernel of truth. However, each misses the mark when it comes to explaining the relative successes of SFM. Social networks play a significant role in adolescent decision making, specifically when it comes to dietary outcomes. This study, granted by the United States Department of Agriculture (USDA), assessed the connectivity of these social networks and the impact they have on fruit and vegetable, added sugar and sugar sweetened beverage consumption. Additionally, the relationship between shopping companionship and dietary choices was studied. Positive and negative associations were found among adolescents who shop with parents or friends. It was also found that those adolescents with greater social network cohesion were found to have more negative dietary outcomes. Divulging further into the …

Purpose: Using the Academy of Nutrition and Dietetics benchmarks as a framework, this study examined childcare providers’ (Head Start [HS], Child and Adult Care Food Program [CACFP] funded, and non-CACFP) perspectives regarding communicating with parents about nutrition to promote children’s health.
Design: Qualitative.
Setting: State-licensed center-based childcare programs.
Participants: Full-time childcare providers (n ¼ 18) caring for children 2 to 5 years old from varying childcare contexts (HS, CACFP funded, and non-CACFP), race, education, and years of experience.
Methods: In-person interviews using semi-structured interview protocol until saturation were achieved. Thematic analysis was conducted.

Background
Recent evidence predicts that by 2030, Ireland will have the highest rate of obesity in Europe. Consequently, there are concerns that health problems associated with this condition will present in childhood. Studies have shown that interventions based on increasing physical activity (PA) levels, reducing sedentary lifestyles and improving nutritional habits all pose protective mechanisms against obesity and its related disorders in youth. Yet, to date, there are no interventions being delivered in Ireland that concurrently target PA, nutritional habits and sedentary time amongst school children.

Pearl Street Grill & Brewery came into existence in 1997 at 76 Pearl St in downtown Buffalo, NY. It was initially formed as a partnership between a group of local investors and the Wynkoop Brewing Company of Denver, Colorado which was already a successful brewpub operation.

Data on actual labor time can be utilized as an effective management tool. With labor cost representing about 50 percent of direct cost in food service, it is essential to examine how labor time is being utilized.
A continuous time study was conducted to determine the total labor time for the production of eight vegetarian entrees. The two work areas observed were the ingredient assembly area and the cooks' production area. This labor time was recorded by Work Functions to find the dis- tribution of labor time.
