My project uses traditional Chinese calligraphy culture and my own family stories to create five daily use products to help my user find a sense of belonging to Chinese culture and also introduce my culture and stories to all audiences.

As an international student who came to the US, I have often struggled with a lack of cultural identity and belonging. This is a common issue faced by many who choose to leave their homes and venture to new places. However, I believe that we can overcome this by creating products that generate an emotional connection with their users.

Context—Improving diet can reduce the risk of chronic health conditions such as cancer and heart disease. However, people continue to make poor dietary health decisions. A novel intervention based on the science of behavior change and incorporating Human-Centered Design (HCD) methodology is needed to boost informed dietary decision-making.

Objective—This research presents a Behavior Change Wheel (BCW), Human-Centered Design (HCD) approach to develop a novel high-usability video intervention that will increase informed decision-making for whole-grain dietary decisions. The intervention will target college students, improving habits that can carry on throughout later adulthood.

The main question driving this study seeks to understand how New Zealand farmers’ markets represent and engage with global and local issues in relation to food production, distribution, and consumption. Under this question, three sub-questions seek to understand the discourses present at the markets, how these discourses insect with globalization and local food, and how this intersection works to organize contemporary farmers’ markets.

Basic Needs Initiative at California State University, Monterey Bay is a department that provides students with food, housing, and wellness resources. Over half of the university's students experience food insecurity, and over 85% use non-academic resources to learn about nutrition. This project adds a dietary health section to the department’s website to increase students’ access to nutrition education. It addresses the micro-level agency problem that too few students eat a healthy, balanced diet. This study examines the work of single, white, middle-class women feeding and caring for their families during the COVID-19 pandemic in the year 2020. The study draws from qualitative analyses of one-on-one interviews conducted with seven single mothers. After situating single mothers and family food provision in the academic literature, as well as and current knowledge about the pandemic in the U.S., the author explores ways that the pandemic disrupted family life. Findings indicated that the single mothers were keenly impacted by being cut off from child care, schools, and other social connections they needed to maintain employment. Further, their …

In June 2009, a group of masters students from the University of Gastronomic Sciences in Italy spent nine days visiting the lands of the Tevere river, travelling from its springs on Monte Fumaiolo in Emilia-Romagna to Rome by way of Umbria and the Lake Trasimeno. This article is a gastro-historic portrait of the lands of the Tevere, linking contemporary social, cultural and economic activities around food and tourism to the rich and long history of the region and highlighting persistent patterns, continuity and change.

Consumer socialization literature has focused on individual socialization agents and their isolated effects. However, as John (1999) pointed out, children do not grow up in a social vacuum. Instead, the multitude of agents socializing children find their narratives interacting and their effects continually shaped and co-created. To understand how school-age children learn about food, I interrogate the complexity of socialization in three essays.

The purpose of this research is to examine how American dairy companies employ language and imagery in brand communications (marketing, advertising, and public relations) to persuade consumers regarding farm animal welfare (FAW) conditions on supplier farms, and to examine how consumers respond in instances in which conditions on supplier farms are shown to be counter to what is depicted in brand communications. Introduction: Framing is an important aspect of the policy process that helps the public and decision makers sort through and resolve highly charged claims about an issue. Through slight changes in the presentation of issues, a framing effect may alter public support. The way a proposed sugary drink tax is discussed in public discourse and by the media significantly influences policy acceptance. Given the public health significance of obesity and diabetes in West Virginia (WV) the study of media frames employed to represent a sugary drink tax policy is useful.

This study analyzes oral recipe sharing practices as they emerge in Southern cooking. Researcher and participants were immersed in cooking recipes together in a qualitative research method that combined interactive interviewing with sensory ethnography. Findings revealed a category of oral recipe sharing practices that is missing from the literature: cooking lessons. This study identified cooking lessons as a distinct recipe sharing practice and worked to further operationalize and concretize such practices in hopes of spurring further research.

To examine the feasibility of using social media to assess the consumer nutrition environment by comparing sentiment expressed in Yelp reviews with information obtained from a direct observation audit instrument for grocery stores.

Design
Trained raters used the Nutrition Environment Measures Survey in Stores (NEMS-S) in 100 grocery stores from July 2015 to March 2016. Yelp reviews were available for sixty-nine of these stores and were retrieved in February 2017 using the Yelp Application Program Interface.
