This research aimed to explore the roles of food security status (FSS), financial literacy (FL), and nutrition literacy (NL) on the diet quality (DQ) of college students at the University of Maine. This research additionally sought to understand mediational relationships among these factors that could impact DQ.

A cross-sectional convenience sample of college students completed an online questionnaire assessing sociodemographic factors, short healthy eating index (sHEI)-score, FSS, FL, and NL. Smallholder coffee producers face a combination of pre- and post-harvest risk factors that leaves them particularly vulnerable to food insecurity. A popular form of on-farm diversification is honey production through beekeeping, that has both nutritional and commercial value. This study investigates the role of honey production as means of food security management due to the heightened pollinating activity during the coffee flowering stage that follows the annual coffee harvest provides an additional non-contemporaneous source of income. Risk exposure and management are inherent to smallholder farmers. One of the risks they face is climate change. Climate change decreases rainfall, increases frequency of drought, adds heat stress to crops from higher temperatures, and leads to higher rainfall variability. The threat of rainfall variability causes higher production in some years and lower in others. Even if the average income remains the same, people’s welfare is reduced by the variability and the size of the loss will depend on their attitudes towards risk.

The practice of mindfulness has a long history in research, particularly psychological studies. In this paper I examine the effects of a short mindfulness intervention on healthy food purchases. Specifically, I developed an online survey and recruited 634 participants via Prolific between July 24 - July 27, 2020. I randomly assigned participants to either a mindfulness manipulation or a control condition. Following treatment (or control) participants completed a food choice task and various other control. We compared hypothetical willingness to accept (WTA) values for Massachusetts saltwater recreational fishing licenses with WTA values obtained in an actual (simulated) marketplace. Using a dichotomous choice contingent valuation approach, our results align with past evidence that found WTA values elicited from hypothetical transactions overstate those derived from an actual marketplace. We also provide the first evidence about the effectiveness of an ex-post certainty adjustment technique in a WTA environment. While the adjustment technique has been found to eliminate hypothetical bias in willingness to pay (WTP) settings, we find that when applied in a WTA setting, the approach mitigates but …

Partnering with the US Census Bureau, we implement a new survey of "structured" management practices in two waves of 35,000 manufacturing plants in 2010 and 2015. We fnd an enormous dispersion of management practices across plants, with 40 percent of this variation across plants within the same frm. Management practices account for more than 20 percent of the variation in productivity, a similar, or greater, percentage as that accounted for by R&D, ICT, or human capital. Abstract: In the context of introducing biofortification of staple crops as a food-based approach to combat micronutrient malnutrition in Sub Saharan Africa (SSA), we carried out a survey in Tamale, Ghana to elicit consumers’ preference of and willingness to pay for one of the highly nutritious biofortified staple crop processed product: the Orange Fleshed Sweet Potato (OFSP) bread. Our results indicate that scores of respondents in the sample show preference for OFSP bread. This research evaluates lobster producer efficiency and considers fleet wide economics and policy implications in support of changing marine ecosystems in the Gulf of Maine. We conducted a comprehensive lobster industry survey to assess costs and effort expended at the producer level for a representative fishing year, and establish a series of production function performance baselines for future comparison. Environmental goals such as urban water conservation and pollution control regulations are typically achieved through price and non-price methods. This dissertation offers an analysis of the non-price approaches, including the rationing of water for particular users, installation of particular technologies, and adoption of particular certifications to achieve environmental goals. To begin, an analysis of California’s 2015 urban water conservation mandate was performed. Results indicate that the average welfare loss of the mandate is $6,107 per acre-foot of restriction in Northern California and $2,757 per acre-foot of restriction in Southern California. We use data from hypothetical and nonhypothetical choice-based conjoint analysis to estimate willingness to pay for local food products. The survey was administered to three groups: consumers from a buying club with experience with local and grass-fed production markets, a random sample of Maryland residents, and shoppers at a nonspecialty Maryland supermarket. We find that random-sample and supermarket shoppers are willing to pay a premium for local products but view local and grass-fed production as substitutes. Conversely, buying-club members are less willing to pay for local production than the other groups but do not confllate local and grass-fed production.
