Assessing Legacy Collections: Analyzing The Preservation, Recovery, And Interpretive Value Of Archaeobotanical Remains From Site 15le70 (Pine Crest Rockshelter), Lee County, Kentucky, Jennifer Carroll

This paper uses the archaeobotanical assemblage from Site 15Le70, a multi-excavated and extensively looted rockshelter in eastern Kentucky, while opening new lines of inquiry into gendered labor and practice during the Archaic-Woodland transition. Because legacy collections are often dispersed across institutions and/or research projects, the materials from any single site may be fragmented, as was the case for 15Le70. Such collections can be overlooked, yet this investigation into 15Le70’s archaeobotanical assemblage demonstrates that partial or scattered datasets can yield meaningful results and hold the potential to fill gaps in the archaeological record left by looting.

As extreme weather events become more frequent and more intense, understanding their effects becomes increasingly important. This dissertation examines those effects and related policy questions across three essays.

The first essay demonstrates that methodological choices in weather data construction can meaningfully affect estimated agricultural impacts of extreme weather. Using corn yields across the U.S. Corn Belt, it shows that constructing nonlinear weather measures after spatial interpolation reduces measured exposure to extreme heat and changes both estimated yield impacts and their downstream economic implications.

Volatile commodity markets and changing climate expose coffee farmers to price and production risk. Proponents recommend specialty coffee as a strategy to combat price risk, because its unique attributes differentiate it from commodity coffee. Extrinsic and intrinsic attributes define specialty coffee and affect prices at many levels of the supply chain. Despite much work on extrinsic attributes, little is known about how intrinsic attributes relate to farmgate price. Post-harvest processing is itself an intrinsic trait and driver of coffee quality. This thesis provides insight for any farmer interested in agritourism, specifically, specialty cut flower workshops, by investigating consumer behavior related to specialty cut flower workshops as an experience good. It investigates which experience good cues may be important for a consumer’s decision-making process. It introduces a Specialty Cut Flower Workshop Experience Map, which explains how potential participants move from first learning about a specialty cut flower workshop to their long-term behaviors as consumers. This thesis provides a comprehensive analysis of the U.S. whiskey industry, emphasizing distilleries' geographic distribution, operational characteristics, and the agricultural landscapes surrounding them. Particular attention is given to the feasibility of U.S. distilleries locally sourcing grains used in production. Grain demand ranges were estimated for the 1,485 distilleries analyzed within this study. Using cropland and yield data from the USDA, local grain availability was approximated for comparison. Results indicate that a distillery's local sourcing feasibility is significantly impacted by its production capacity and geographic location.

This dissertation comprises three distinct but interrelated projects that explore the intersection of agriculture, nutrition, and economics. The first project investigates the impact of Community Supported Agriculture (CSA) food programs on the health outcomes of its participants. Using fixed effects models and a matching algorithm, the study finds that while conventional fixed effects models indicate a significant effect of CSA participation on diet-related medical expenditures, our modified time-heterogenous fixed effects model did not find a meaningful effect. The results of the matching method are consistent with those of our modified model.

The first chapter of this dissertation examines price discovery and volatility spillovers in the coffee spot-futures commodity market over the post-ICA period by employing the PT-IS and bivariate EGARCH models. This research covers two actively traded coffee types, Arabica and Robusta, and utilizes daily time-series price data over 1990:01-2020:04 for Arabica and over 2008:01-2020:04 for Robusta. The empirical results indicate that coffee spot markets play a dominant role in the coffee price discovery for both Arabica and Robusta. Obesity disproportionately affects rural communities, and Appalachia has some of the highest obesity rates in the nation. Successful policy, systems, and environmental (PSE) interventions to reduce obesity must reflect the circumstances of the population. We used a health equity lens to identify barriers and facilitators for healthy food access in Martin County, Kentucky, to design interventions responsive to social, cultural, and historical contexts.

The 2018 Farm Bill has reopened commodity program enrollment for producers, and thus renewed interest in the Supplemental Coverage Option (SCO) of the Federal Crop Insurance Program (FCIP). This thesis examines the potential risk management benefits afforded to Kentucky corn, soybean and wheat producers by the SCO.

A simulation model is used to rank downside-risk minimization of the common Multi-peril Crop Insurance Policies (MPCI) policies both with and without the SCO for various farm-level yield risk and farm- to SCO area-level yield correlations.
