Assessing Satisfaction With Bi-Weekly Produce Deliveries As A Means To Reduce Food Insecurity On College Campuses, Sophie Crosby
Senior Theses
Background: As food insecurity disproportionately affects college students and students are often unable to receive government nutritional assistance, more lasting, sustainable interventions are needed to decrease food insecurity on college campuses. The purpose of this study was to measure the satisfaction of the FoodShare program, a low-cost, biweekly fresh produce delivery, at the University of South Carolina. The purpose of this study was to pilot FoodShare’s program with adaptations to the University of South Carolina and examine participants’ experience with the program. Methods: Forty-three students, faculty, and staff purchased boxes over a three-month period. FoodShare boxes were purchased and delivered …
Determinants Of Hiv Treatment Disparities In The Latino Population Of South Carolina, Elizabeth G. Caulk
Determinants Of Hiv Treatment Disparities In The Latino Population Of South Carolina, Elizabeth G. Caulk
Senior Theses
The Latino population in the United States faces a heightened risk in terms of contracting HIV/AIDS and experiencing negative health outcomes from said infection. HIV/AIDS continues to disproportionately impact ethnic/racial minorities, and the Latino population exemplifies this unfortunate trend, with Latino Americans making up around 18.4% of the national population, but nearly 30% of the HIV/AIDS infections (US Office of Minority Health, 2021). More enduring changes to the current resources available to this population will need to be made in order to address this disparity. Thus, the current study examined social determinants, how they increase risk of infection, and how …

Transformative Medicine
Obesity and associated non-communicable illnesses including coronary heart disease, type 2 diabetes, and stroke have steadily increased in prevalence over the last decade. Previous studies identified the involvement of individual, family, and community support intervention strategies used to prevent and manage obesity. Additionally, education on nutrition from the early stages of development is crucial for obesity prevention and control. Therefore, new preventative methods are needed to further engage and educate individuals and communities about health-conscious diets. Microgreen cultivation utilizes a reduced cost, low-footprint, recyclable, weather-independent, and transportable method to provide less nutrition-privileged communities with exposure to healthy foods within one …

Background: About 47% of children < 5 years of age are stunted in Guatemala. In this study, the investigators aimed to compare growth and cognitive outcomes between children in second grade that attended five Guatemala City Municipal Nurseries (GCMN) vs. same sex, grade, and age-matched children. Methods: A cross-sectional design nested in a retrospective cohort was implemented between 2015 and 2019. Children that attended the GCMN and matched controls completed a math test and validated receptive language and fluid intelligence tests. The primary caregivers completed a sociodemographic survey. General and generalized linear mixed effect models were used to compare children that attended the GCMN vs. controls. The models were adjusted by maternal education, sex, asset score, and other relevant covariates. Results: Children that attended the GCMN exhibited greater math and fluid intelligence scores relative to the controls in the adjusted models (ß = 6.48; 95% CI (2.35–10.61)) and (ß = 1.20; 95% CI (0.12–2.29)), respectively. Lower odds of stunting were significant for children who went to any early childcare institution (AOR = 0.28; 95% CI (0.09–0.89)). Conclusions: The importance of integrating nutrition and high-quality early childhood education interventions in cognitive and growth outcomes is highlighted in this study. The GCMN model may be a scalable model in similar low-resource settings.

The Role Of Healthcare Workers In The Care Of Human Trafficking Survivors, Darisel N. Ventura Rodriguez
NSU REACH and IPE Day
Purpose/Objective: Highlight the importance of increasing awareness among healthcare professionals on the identification and treatment of human trafficking victims. Background/Rationale: In the state of Florida, human trafficking (HT) remains a significant public health issue affecting hundreds of victims each year.
