Development Of An Instrument Measuring The Perceived Attributes Of Using A Healthy Diet Innovation, Holly Ann Federico Huye

Dissertations

The Lower Mississippi Delta (LMD) is a rural region that is rich in agricultural resources but is one of the most impoverished areas in the US. Prior research has indicated LMD adults as having higher rates of obesity and diet-related chronic diseases as compared to US adults. While the need for dietary intervention in the LMD is evident, the first step in designing effective interventions is the assessment of one’s perceptions of dietary behaviors. The purpose of this research was to develop a valid and reliable instrument to assess individuals’ perceived attributes of using a healthy diet. Using the Diffusion …

All Graduate Theses and Dissertations, Spring 1920 to Summer 2023

Obesity and eating disorders are major public health problems in the U.S. Prevention of these problems in childhood and adolescence is crucial to avoid medical complications and costs associated with these conditions. Ninth-grade students attending health class in a public school in Northern Utah (n = 117) were assigned to either an intervention …

Examining The Relationship Between Weight, Food Insecurity, Food Stamps, And Perceived Diet Quality In School-Aged Children, Elizabeth Lucas Marshall

University of Kentucky Master's Theses

A paradox exists between food insecurity and obesity. Childhood obesity has tripled in the past three decades. This study aimed to understand the relationships between food insecurity, poverty income ratio, food stamps usage, perceived diet quality, and weight status in children. A child’s weight status is determined by many different factors and this study investigated several of these aspects. It was found that the family’s poverty index ratio had the greatest effect on a child’s BMI, but household food security status, ethnicity, and the perceived inability to serve balanced meals were all found to be statistically significant when considering a …

Portion Distortion Plays A Major Role In The American Obesity Epidemic, Amanda Kay Larsen May 2003

Portion Distortion Plays A Major Role In The American Obesity Epidemic, Amanda Kay Larsen

Undergraduate Honors Capstone Projects

The prevalence of overweight and obesity among the American population is on the rise. This epidemic can be attributed to an increase in energy intake. Research has shown that increased consumption is associated with both individual and societal factors including an increase in the size of portions, the influence of the food industry, and confusion on the part of the consumer. The findings indicate that dietitians and other healthcare providers need to do their part by informing society of the importance of decreasing portions and helping the consumer recognize appropriate portion sizes.
