Purpose: The incidence, prevalence, and chaos of the Covid-19 disease sequelae is an adverse event akin to a natural disaster or wartime creating a high degree of uncertainty and vulnerability for health care providers. This is an account of a Registered Dietitian Nutritionist’s (RDN) experience on the frontlines during an epidemic providing care to patients with Covid-19. Purpose: The purpose of this study was to describe student perceptions of their learning following experiential learning (EL) activities in a foodservice management course. Nutrition and dietetics education programs have a range of competencies students must learn and demonstrate throughout their curriculum. Learning styles differ amongst students and research has demonstrated they prefer to engage in EL (direct experience) activities to develop their knowledge. Foodservice management is one area of the curriculum that teaches students the basic functions of management; planning, organizing, directing, controlling, and staffing related to food, materials, facilities, and human resources. Aim: The aim of this study was to explore the use and future potential of realist approaches to research in nutrition and dietetics. Methods: A targeted literature review was used to search key journals (n = 7) in nutrition and dietetics to identify existing research using a realist approach. A narrative synthesis was conducted to explore findings in relation to the research aim. Results: Nine research papers (four realist evaluations, five realist reviews) describing seven nutrition interventions were found, which revealed the application of realist research in nutrition and dietetics has focused on public health interventions. Learning experiences within the dietetics and human nutrition undergraduate curricula develop knowledge and skills pertinent to student career goals. Core competency requirements are extensively assessed in these programs, yet the communication of transferable skills gained and student professional readiness are rarely examined. The purpose of this study was to evaluate undergraduate students' perceived professional readiness following six professional development workshops on transferable skills and career preparedness communicated through resumes and personal statements. In this pilot study, twelve upper-level dietetics and human nutrition students self-assessed their resumes and personal statements with rubrics and completed surveys before and after the intervention. Background/objectives
Malnutrition is evident in hospitals and stroke patients are at increased risk. Protected mealtimes may help increase nutrient intake especially when patients interact and enjoy the dining room atmosphere. The aim of this research is to investigate if eating in a communal dining room increases nutritional intake compared to eating at the bedside and to investigate whether patient interaction and mood affects patient nutrient intake.

Cooking demonstrations are a unique and effective way to teach nutritional concepts and basic cooking skills in a community setting. They have been found to be beneficial for participants in attendance as they improve confidence in the kitchen, cooking skills development, and the promotion of healthier foods into the diet. Classroom learning facilitates critical thinking but does not necessarily provide a platform for hands-on learning. The Department of Dietetics at Marshall University is a subcontracting agency with the West Virginia University Extension Service for the purposes of delivering nutrition education to children in low-income schools in a six-county radius in southwestern West Virginia through the Marshall University Nutrition Education Program (NEP). The method of lesson delivery includes an educational model that utilizes both registered dietitians (RD) and dietetic interns. The NEP is evaluated through several methods, including pre-/post-tests, teacher focus groups, and parental feedback surveys. This longitudinal qualitative case study explored the knowledge, perceptions, confidence, and empathy gained by dietetics students during experiential learning at a residential diabetes camp. Qualitative research methods were used to explore and understand participants’ experience of hands-on involvement with type one diabetes, and what they learned at camp that cannot be learned in a classroom. Data were collected over two years at Camp Kno-Koma, the diabetes camp of West Virginia. This study suggests that experiential learning at diabetes camp can make an important contribution to the overall education of dietetics students. The objective was to consult patients on a proposed recruitment strategy to a patient and public involvement exercise. We wanted to explore the reasoning and willingness of patients to become co-researchers within a grant application. Eighteen people using the renal health service informed the consultation by action research so that their experiences could be used to guide the overall methodology. Twelve people took part in semi-structured interviews. NVIVO 10 and Framework Analysis were used to interpret emerging themes from the data. The purpose of this quantitative study was to examine the attitudes and perceptions of registered dietitians with bachelor’s degrees (BS, RD’s) regarding a transition to the MS degree as the requirement for the RD certification. For this experiment, two groups of paid volunteers, aged 18-34, provided written quantitative and qualitative data on preferences between waffle fries (test) and potato wedges (control). Each participant provided demographic information and then answered a series of questions, using a hedonic rating scale or by composing a written response. Participants also provided qualitative data about what influenced their preference between the test and control. The experiment confirmed the hypothesis was correct: Millennials prefer waffle fries over potato wedges. The symptomology of celiac disease, also known as gluten-sensitive enteropathy or celiac sprue, was first described in AD 50 by Aretaeus, a noted ancient Greek physician who specialized in isolating and explaining disease states. Clinical manifestations of the disease were distinctly defined by Samuel Gee in 1888 who theorized that diet therapy was likely the treatment for the disease: "the allowance of farinaceous must be small, but if the patient can be cured at all, it must be by means of diet."
