Purpose. The purpose of this research study was to investigate the effect of Puritan’s Pride probiotic on gastrointestinal quality of life of working adults at the Loma Linda Support Services Building aged 18 to 65 years. Methods. Working adults, 18 to 65 years of age, from the Loma Linda Support Services Building were eligible to participate in the study. Subjects were excluded if they were taking antibiotics or had taken antibiotics within the previous six months. PURPOSE. The purpose of this graduate student research study is to compare the differential effects of cacao nibs and pecans on calorie intake. METHODS. Participants (n=34) were asked to log food intake for three days (Tuesday through Thursday) for three weeks. They were instructed to consume an intervention (cacao nibs or pecans) 15‐30 minutes prior to mealtime with one 8 oz cup of water. During week one, participants were asked to complete questionnaires. PURPOSE. The aim of this study was to investigate the effect of the addition of whey, soy, milk, or pea protein to fruit-based smoothies on postprandial blood glucose levels. METHOD. Eight subjects (1 male, 7 female, age 22.6 ±1.6 years, BMI 23.3 ± 2.5 kg/m2) participated in a randomized controlled study. Subjects consumed a 625 mL (2.5 cups) smoothie that contained 30 grams of either whey, soy, milk, or pea protein. A smoothie with no added protein was used as a control. PURPOSE: The purpose of this graduate study was to determine if there is a difference in disordered eating attitudes of dietetic students and working registered dietitians based on their sufficiency or insufficiency of omega-3 fatty acid intake. A Food Frequency Questionnaire was used to assess omega-3 intake and The Eating Attitudes Test-26 was used to measure disordered eating attitudes. Egg allergies are very common, and affect 1% to 2% of all children (Savage, 2007). For this reason, egg replacers that can be easily used by home cooks are an important area of research. In this experiment, a simple egg replacer of flour, oil, baking soda, and water was added to a standard cake mix, with variables consisting of a control product and a product made with no eggs using the egg replacer. Purpose: The Commission on Dietetic Registration announced that entry-level eligibility requirements to become a registered dietitian would increase to include obtaining a Master’s degree. The objective of this study was to explore perceptions of non-university affiliated dietetic internship program directors regarding proposed education requirements. Methods: Directors participated in a phone survey of structured questions related to the topic. The population of focus was non-university affiliated dietetic internship program directors. Results: Program directors expressed viewpoints of positive, negative, and mixed regarding the increase in education requirements. After more than a century of active research, the notion that the human fetal environment is sterile and that the neonate’s microbiome is acquired during and after birth was an accepted dogma. However, recent studies using molecular techniques suggest bacterial communities in the placenta, amniotic fluid, and meconium from healthy pregnancies. These findings have led many scientists to challenge the “sterile womb paradigm” and propose that microbiome acquisition instead begins in utero, an idea that would fundamentally change our understanding of gut microbiota acquisition and its role in human development. Objective: Consuming a nutritionally adequate diet is extremely challenging for the homeless population. Though meals are available to the homeless population through soup kitchens and homeless shelters, these settings often do not serve meals that provide essential nutrients. The consumption of energy-dense, low-nutrient foods has led in part to high prevalence of obesity, heart disease, and chronic illnesses among the homeless. Adherence to a Mediterranean diet (MedDiet) is thought to be achievable in non-Mediterranean regions, but this has yet to be investigated. We aimed to determine if an older Australian population could adhere to a MedDiet for six months. We conducted a randomised, parallel dietary intervention trial with two dietary arms: the Mediterranean diet (MedDiet) group and the habitual diet (HabDiet) control group. Scope: Nitrate from vegetables improves vascular health with short-term intake. Whether this translates into improved long-term health outcomes has yet to be investigated. To enable reliable analysis of nitrate intake from food records, there is a strong need for a comprehensive nitrate content of vegetables database.

Methods and results: A systematic literature search (1980–2016) was performed using Medline, Agricola and Commonwealth Agricultural Bureaux abstracts databases. The nitrate content of vegetables database contains 4237 records from 255 publications with data on 178 vegetables and 22 herbs and spices. Purpose: Using the Academy of Nutrition and Dietetics benchmarks as a framework, this study examined childcare providers’ (Head Start [HS], Child and Adult Care Food Program [CACFP] funded, and non-CACFP) perspectives regarding communicating with parents about nutrition to promote children’s health.

Design: Qualitative.

Setting: State-licensed center-based childcare programs.

Participants: Full-time childcare providers (n ¼ 18) caring for children 2 to 5 years old from varying childcare contexts (HS, CACFP funded, and non-CACFP), race, education, and years of experience.

Background — National childhood obesity prevention policies recommend that childcare providers educate young children about nutrition to improve their nutrition knowledge and eating habits. Yet, the provision of nutrition education (NE) to children in child-care settings is limited.

Recess Before Lunch (RBL) is a wellness strategy with a purpose of improving the overall health and behavior of school-aged children. While some studies have reported a variety of benefits and challenges by simply scheduling recess prior to the specified lunchtime, few have examined adequate strategies for successful implementation.
