Validation of the nutrition standardized language assures the language is accurate for use in practice, policy, and research, but few validation studies have been reported. The purpose of this descriptive study was to validate content of all components of the nutrition diagnostic term involuntary weight loss using experts providing care for older adults in health care settings. A Nutrition Diagnosis Validation Instrument was developed that contained the definition, etiologies, and signs and symptoms of the diagnosis plus items added from literature review. Objectives: To examine the prevalence and combined occurrence of peri-conceptional folic acid (FA) supplement use, smoking and alcohol consumption during pregnancy in a sample of women in Dublin, and determine the factors associated with these health behaviours.
Subjects/Methods: A prospective observational study (2004-2006) involving the recruitment of 491 pregnant women from antenatal clinics in a Dublin maternity hospital, with postpartum follow-up of 450 eligible mothers. Data on FA use, maternal smoking and alcohol consumption patterns during pregnancy were collected from the antenatal patient-administered questionnaire, which was completed by participants, and returned to the investigator on the day of recruitment. …

Prebiotics are non-digestible food ingredients that beneficially affect the host by selectively stimulating growth and/or activity of beneficial bacteria in the colon. The project objective was to determine consumer acceptability of ice cream with prebiotic ingredients substituted for part of the sugar and to determine sensory attributes of sweetness, smoothness, and vanilla flavor. A commercial ice cream mix was made substituting 0%, 10%, 20%, or 30% of the sugar for either fructooligosaccharides (FOS) or inulin. Sensory analyses were conducted using 95 non-trained panelists. Background: Unhealthy eating patterns in childhood can lead to adverse health conditions, particularly obesity. However, debate remains around the precise eating behaviours that lead to these conditions. The present study aimed to address this lack of evidence by reporting on the eating frequency, breakfast consumption and body mass index (BMI, kg m–2) of youth in the UK.
Methods: A total of 264 (133 boys and 131 girls) participants, aged 10–13 years, completed self-report measures of dietary intake via 3-day food/drink diaries (Friday to Sunday). Trained researchers recorded height and weight to calculate the BMI. Diaries were analysed using …

T cell receptor (TCR) recognition of antigenic peptides bound and presented by major histocompatibility complex (MHC) molecules forms the basis of the cellular immune response to pathogens and cancer. TCRs bind peptide/MHC molecules weakly and with fast kinetics, features which have hindered detailed biophysical studies of these interactions. Modified peptides resulting in enhanced TCR binding could help overcome these challenges. Further, there is considerable interest in using modified peptides with enhanced TCR binding as the basis for clinical vaccines. Objectives: To evaluate the relationship between facultative skin pigmentation, which predicts circulating levels of plasma 25-hydroxymitamin D, and several measures of bone mass and structure in a cross sectional sample of adolescent females living in Hawaii.
Methods: Our sample was composed of adolescent females (n = 94) living in Hawaii where seasonal sun exposure is minimal, and who self-identified as either white (n = 16) or Asian (n = 78). Whole grains play a cost-effective role in the treatment and prevention of type 2 diabetes, yet consumption remains well below recommendations. This pilot study showed that nonfamilial environmental factors have a strong influence on whole grain consumption among type 2 diabetics of German descent. Dietary records and grain questionnaires were used to probe subjects’ knowledge of the benefits of whole grains, reasons for grain preferences, and actual consumption. For this population (n=18), mean whole grain consumption ( = 48±30 g/d = 3±2 servings/d) was much higher than the national average (μ ≤ 1 serving/d). The consumption of fruits and vegetables (F&V) has a significant protective effect in reducing various cardiometabolic diseases. In recent years, the U.S. government has made a lot of effort to promote F&V consumption through different projects and programs, including the MyPyramid food guidance system supported by the USDA’s Center for Nutrition Policy and Promotion, and the Fruits & Veggies More Matters program (previously called the 5-A-Day for Better Health program), supported by the Centers for Disease Control and Prevention (CDC) and other public and private agencies. Current physical activity recommendations suggest that children should have 60 minutes of moderate-to-vigorous physical activity (MVPA) per day. Purpose: The purpose of this study was to compare the ability of three different physical activity measurement tools to assess whether children were meeting physical activity recommendations. Methods: Physical activity was assessed for one week via accelerometer (ActiGraph GT3X), pedometer (New Lifestyles NL-1000), and for one day using a self report questionnaire (Self-Administered Physical Activity Checklist, or [SAPAC]) in thirty 5th-grade students. Under-nutrition prevents growth and development in children and is the leading factor to illness and death among children less than five years of age in developing countries. The objective of the study was to determine associations of demographic, cultural and environmental factors with frequency and severity of malnutrition among children less than five years of age in Zambia. We used data from the Zambia multiple indicator cluster survey (MICS) from years of 1999 to 2000. Altogether 6,142 children participated in the survey. The prevalence rates for being "underweight", "stunted" and "wasted" were 17.6, 37.5 and 4.1%, respectively. Compared to children …

Phytosterols and their fatty acyl esters have been known for decades to lower LDL cholesterol, making them powerful nutraceuticals in lowering cardiovascular disease risk. The mechanisms by which phytosterols lower cholesterol, though, have been incompletely characterized. Three studies were executed to examine three aspects of cholesterol and phytosterol interactions in the intestinal lumen. In the first study, the ability of pancreatic cholesterol esterase to hydrolyze phytosterol esters was examined. Pancreatic cholesterol esterase hydrolyzed phytosterol esters, but the rate of hydrolysis proved sensitive to the structures of both the sterol and ester components. Background: While nursing homes in Oklahoma are required to utilize a Registered Dietitian (RD) or Qualified Nutritionist, there are no specifications for minimum utilization. Objectives: Investigate how Oklahoma nursing homes determine RD utilization and whether a relationship exists between resident census and RD availability. Design: Questionnaires focused on RD work patterns were sent to 150 Oklahoma nursing homes.
Results: Nursing homes with a resident census of 50, 51-100, and 101 employed a RD for approximately 7. 9, 7.3, and 56.3 hours/month, respectively. The RD is the primary decision maker in determining hours worked, followed closely by corporate staff and governmental …

Background: Low socioeconomic status (SES) and acculturation of Latino immigrants in the U.S. are linked to a decrease in diet quality. Methods: Interviews were conducted with 162 first-generation Latinas to examine the association of SES and acculturation with intake of omega-3 (n − 3) fatty acids. Each participant provided dietary intake by use of a validated n − 3 food frequency questionnaire administered twice, 4 weeks apart, three 24-h recalls, sociodemographic information and completed the 5-item Short Acculturation Scale. The prevention of childhood obesity during the formative years is necessary because dietary patterns influenced by parents are developed early. A major obstacle to healthy feeding patterns in children is television advertising. The study tested three hypotheses. 1) Preschool children ages two to five years who watch more television are able to recognize/recall more food brands than those who view less television. 2) An increase in food brand recognition/recall in preschool children is associated with an overweight classification based on calculated Body Mass Index. 3) Children of parents who are unaware of the American Academy of Pediatrics (AAP) recommendations for …
