The main objective of this study is to identify the perceptions of Hispanic parents associated with eating habits of Hispanic children ages 6-12 and obesity. The purpose was to identify if the child's intake was different based on the parent's perception of whether or not their child had a weight problem. The study involved a single subject, a non-verbal child on the autism spectrum, in a clinical setting over a 10 week period. The subject was on a three point sensory diet that was administered before therapy sessions. The tactile, vestibular and proprioceptive systems were targeted with deep pressure touch, a suspension swing, and joint compression. The primary focus was on participation in therapy and language development with specific attention given to the increase of vocalizations and/or verbalizations. Background/Objectives: Breast milk contains lutein derived from the mother's diet. This carotenoid is currently not added to infant formula, which has a small and variable lutein content from innate ingredients. This study was conducted to compare the growth of infants fed lutein-fortified infant formula with that of infants fed infant formula without lutein fortification. Subjects/Methods: This 16-week study was prospective, randomized, controlled, and double-blind with parallel groups of healthy term infants fed either control formula (Wyeth S-26 Gold, designated as Gold) or experimental formula (Wyeth S-26 Gold fortified with lutein at 200 mcg/l, designated as Gold + Lutein). The objective of this study was to explore the impact of nutrition education on the nutritional intake of female high school students. Two groups of females from Saline High School (Saline, Michigan) participated in the study. Age, height, weight, and activity level were obtained from each student in the control group (N=5) and the experimental group (N=17). Participants also completed a demographic survey and a 3-day food diary (two weekdays and one weekend day). Objective—Characterize the process of family vegetable selection (especially cruciferous, deep orange, and dark green leafy vegetables); demonstrate the usefulness of Exchange Theory (how family norms and past experiences interact with rewards and costs) for interpreting the data.

Design—Eight focus groups, two with each segment (men/women vegetable-likers/dislikers based on a screening form). Participants completed a vegetable intake form.

Setting—Rural Appalachian Pennsylvania.

Participants—61 low-income, married/cohabiting men (n=28) and women (n=33).

Analysis—Thematic analysis within Exchange Theory framework for qualitative data. Descriptive analysis, t-tests and chi-square tests for quantitative data.

There are continued interests to examine the relationship between maternal employment and childhood obesity. However, little research has been focused on childhood obesity among immigrant families with working mothers. This study used the Panel Survey of Income Dynamics (PSID) and Child Development Supplement (CDS) in 2002 and compared the impact of maternal employment on childhood obesity between immigrant families and US-born families. The positive effect of maternal employment on children’s body weight status was much stronger in immigrant families than in US-born families. Research was conducted to determine the prevalence of cardiovascular disease risk factors in U.S. children ages 6-11 and associations with body fat, diet, and physical activity. Data for 685 children ages 6-11 was obtained from the National Health and Nutrition Examination Survey (NHANES). NHANES data was examined to determine the prevalence of cardiovascular disease risk factors in these children, the impact of indicators of body fat on cardiovascular disease risk factors, the association between cardiovascular disease risk factors and dietary components, and the relationship between physical activity and cardiovascular disease risk factors among U.S. children. Behavioral weight loss programs have been shown to be effective for short-term weight loss, however the impact of these programs on dietary changes is unclear. This study examined the changes in participant’s diet and physical activity over the course of a 16-week Internet behavioral weight-loss program. A paradox exists between food insecurity and obesity. Childhood obesity has tripled in the past three decades. This study aimed to understand the relationships between food insecurity, poverty income ratio, food stamps usage, perceived diet quality, and weight status in children. A child’s weight status is determined by many different factors and this study investigated several of these aspects. It was found that the family’s poverty index ratio had the greatest effect on a child’s BMI, but household food security status, ethnicity, and the perceived inability to serve balanced meals were all found to be statistically significant when considering a …

Validation of the nutrition standardized language (SL) confirms the language is accurate for use in practice, research, and policy. Nutrition diagnostic terms are identified by concept analysis using literature review and experts to distinguish and differentiate one nutrition problem from a similar or related problem. The Fehring models, used in nursing diagnosis validation research, are adopted to validate the SL nutrition diagnostic terms using experts and weighted inter-rater reliability ratios. In the first phase of validation research, diagnostic terms are validated by experts using the Diagnostic Content Validity Model (DCV).
