Question: Are school lunch policies and programs in Japan beneficial and applicable to the United States?

Main points: Japan has a certification program that allows dietitians to teach nutrition. Japan also includes agricultural experiences as part of its academic curriculum to promote holistic development in students.

Conclusion: The School Lunch program in the United States would benefit from providing an avenue through which dietitians are able to teach students nutrition and from increasing the number of schools involved in Farm to School so that more students have experiences with nature.

The Endocannabinoid System (ECS) is a complex cell-signaling system that was identified in 1988, the ECS is the largest receptor system and regulator of homeostasis. Endogenous cannabinoids, or endocannabinoids, are naturally occurring, lipid-based neurotransmitters. Neurotransmitters are chemical messengers in the body that send signals between nerve cells. The ECS system regulates and controls many of our most critical bodily functions such as learning, memory, emotional processing, sleep, temperature control, inflammatory immune responses, and appetite. Tetrahydrocannabinol (THC) and cannabidiol (CBD) are the most known phytocannabinoids. Phytocannabinoids are plant byproducts that closely mimic cannabinoids and have adverse effects on the body. According to the World Health Organization (WHO), globally 340 million school-aged children are obese. The Centers for Disease Control and Prevention (CDC) report that 13.7 million (19%) of U.S. children and adolescents age 2-19 years are obese. Obesity rates are 14% in 2- to 5-year-olds, 18% in 6- to 11-year-olds, and 21% in 12- to 19-year-olds. Hispanic children (26%) and non-Hispanic black children (22%) have higher obesity prevalence than non-Hispanic white children (14%). Non-Hispanic Asian children (11%) have lower obesity rates than non-Hispanic black children and Hispanic children. In Arkansas, 22% of school-aged children are obese and 39% are overweight …

Sixteen percent of the U.S. population is over 65 years of age and up to one out of two have malnutrition. The nutrition-focused physical exam (NFPE) is an integral part of the nutrition care process and model consisting of consecutive steps: nutrition assessment, diagnosis, intervention, and monitoring/evaluation. The NFPE is a component of nutrition assessment providing registered dietitian nutritionists (RDN) with information to determine nutrition status and degree of malnutrition. Six clinical characteristics used to identify malnutrition are energy intake, weight loss, subcutaneous fat loss, muscle loss, fluid accumulation, and reduced function status. Background: Thirteen percent of the United States (U.S.) population is over 65 years of age and up to 50% are malnourished; therefore, seniors were chosen as the subjects for this research study.

Objective: To identify malnutrition in older adults using the Nutrition Focused Physical Examination (NFPE), and to compare the results to the Academy of Nutrition and Dietetics parameters for assessment of nutritional status.

Design: Each senior voluntarily completed a head-to-toe NFPE, 24-hour diet recall, and anthropomorphic measures were also taken. Information was later analyzed and results were given to each participant.

Background: The number of obese children and adolescents in the United States (U.S.) is estimated to be 12.7 million according to the Centers for Disease Control and Prevention (CDC). This paper explores the effects of diet and exercise on an insulin-resistant individual, integrating the recommendations for exercise and diet as put forth by a variety of peer-reviewed articles. The purpose of this experiment was to determine if insulin resistance is a reversible condition, and if so, whether exercise alone, nutrition alone, or some combination of the two would be the most effective treatment. The results of this twenty-week trial suggest that insulin resistance may be reversible. Exercise alone was not found to be effective in decreasing insulin levels. International students studying at universities in the United States are subject to experiencing dietary acculturation while adapting to American food and culture. Such changes in eating patterns and behaviors are difficult to prevent and can negatively affect weight and health status.
