A Comparison Of Blood Cholesterol Levels And The Intake Of Dietary Trans Fatty Acids In Post-Menopausal Women, Bridget Cartwright

The purpose of this study was to examine the correlation between dietary trans fatty acids and levels of total serum cholesterol, high and low density lipoproteins, and the ratio of total serum cholesterol to HDL in apparently healthy post-menopausal women.
Subjects (n = 21) were current members of the Eastern Illinois University Adult Fitness Program. All were moderately active Caucasian women determined to be post-menopausal and not taking hormone replacement therapy or lipid lowering medications. Mean age of the subjects was 69.1 ± 9.1 years.

Participation by children in organized sport continues to increase. A 1994 survey of 10,000 households by the National Sporting Goods Association (1994) found that approximately 40,000 children between the ages of 7-17 years participate in an organized sport or recreational activity annually. In the realm of organized sports, especially endurance activities, there continues to be interest in how cardiovascular fitness is attained and how it can be maximized. Measurement of cardiovascular fitness is an important piece to that puzzle.

The following work seeks to address the necessity that the inhabitants of the impoverished regions in Bolivia experience, as is the case of the highland region of Paceno, which is the understanding of their nutritional and alimentary situation. We studied the communities of Canavari, Pocohata, Colina Blanca, Puente Arriba, and Villa Arriendo de la Provincia Ingavi, in the province of la Paz.

Few studies have examined the risk factors associated with reduced bone mass in Asians, but none specifically investigated Singaporean Chinese women. The subjects in this study were 16 premenopausal, 8 perimenopausal and 13 postmenopausal women who participated in a larger study which began in 1986. Bone density was measured in 1986 and 1992. Dietary and lifestyle data were collected for this study by personal interview. Association between dietary and lifestyle factors and bone density variables and change in bone density at the end of the 6 year period were assessed by univariate regression analyses.

Relationships between dietary nutrients and plasma and fecal estrone, estradiol-17β, testosterone, and plasma prolactin levels were studied in young Seventh-day Adventist men: 18 nonvegetarians (NV), 20 lacto-ovovegetarians (LOV), and 15 vegans (V). Blood samples and 3 d dietary records were obtained. Contemporaneously collected diet composites and stool samples were analyzed for fiber. The vegetarians consumed significantly more fiber than the omnivores, while NVs and LOVs consumed more saturated fat than the Vs. Although plasma steroid hormone status did not differ, the Vs had significantly higher fecal estrogen levels than the NVs or LOVs. Plasma prolactin levels were significantly higher in …

The time delayed complementation of plant proteins was tested in weanling Sprague-Dawley male rats by measuring growth rates as well as plasma and tissue free amino acids. Diets of pinto beans with rice, corn or wheat were pair-fed in combination or alternating 4 times a day at 6 and 11 am, and 4 and 9 pm for 4 weeks. Plasma, liver and muscle samples were obtained 2 hours postprandial, a time determined most suitable for sacrifice, and analyzed for free amino acids via ion-exchange chromatography. A high percentage of fat in the diet has been implicated through epidemiological studies in several human cancers. Studies in experimental animals have produced evidence that increasing the fat in the diet decreases the animal’s ability to restrict tumor development and growth. In previous work done in this laboratory with BALB/c mice injected with herpes simplex Type 2-transformed mouse cells (H238), the effects of a diet which greatly enhanced tumor growth was compared with one which restricted tumor growth. This study was designed to investigate the effectiveness of dextrose on cardiovascular endurance. The subjects were nineteen male students enrolled at Loma Linda University in Riverside, California. The subjects were exercised to their maximum while being tested on the treadmill.· Subjects were each tested twice. Thirty minutes before exercising, they ingested one hundred grams of dextrose for one test and ten ounces of sugar-free Kool-aid for the second test. The difference in exhaustion times was then recorded.
The data indicated that dextrose ingestion decreased exhaustion time on the treadmill. Subjects were able to exercise for a longer period of time …

In this study, the copper status of 18 vegetarian and 17 non-vegetarian men were compared. Copper status was assessed by determining red blood cell superoxide dismutase (RBC-SOD) activity and plasma copper. Plasma copper levels were measured by atomic absorption spectroscopy. Plasma cholesterol, triacyclglycerols, HDL cholesterol, LDL cholesterol VLDL cholesterol were also determined. Twenty-four hour recalls and three-day food records were obtained to determine copper, zinc, energy, protein, fat, fiber, saturated fat, oleic acid, linoleic acid and cholesterol intake. A total of 18 obese men and women volunteered and participated in a seven-day protein sparing modified fast providing 400 calories per day. The subjects were concurrently participating in an eight-week weight control program combining the facets of nutrition education, group therapy, and values clarification. The modified fast, which was optional, was conducted during two different time periods with a conventional low calorie diet prescribed during the four-week interval.

Hypothalamic and cortical extracts from various cariogenically grouped rats which had been maintained on either a Purina diet or a high sucrose diet (HSD) for three months were infused intravenously into 28 days old rats to determine if there was a titer of parotid hormone releasing factor (PRF) capable of facilitating fluid movement (FM) in the teeth. The hypothalamic and cortical extracts obtained from Purina-fed rats with 0-caries and the hypothalamic extracts from BSD-fed rats conclusively demonstrated FM stimulatory ability. Other Purina-fed groups were essentially biologically ineffective, however, extracts from HSD-fed caries groups including scores 11-40 demonstrated extremely potent FM …

Studies were conducted utilizing albino rats to determine the relationship of voluntary alcohol consumption with various dietary additives and exposure to cigarette smoke in combination with poor quality diets. Male, Sprague-Dawley rats, from weanling age to 100 grams, were given the various experimental diets and a free fluid choice of ten per cent ethanol or tap water. Fluid intakes were recorded and analyzed statistically. Individual variation was common with a generally low level of alcohol consumption when rats were fed a poor quality diet of common United States foods. The first study was designed to evaluate by the nitrogen balance method the protein quality of a pure-vegetarian diet containing about 6 grams of nitrogen per day. The group as a whole maintained nitrogen equilibrium the average being - 0.11 grams of nitrogen per day. Two subjects were not in nitrogen balance, however, factors other than diet may have contributed to these results and are discussed in the thesis. Hemoglobin, serum cholesterol and total serum proteins did not change significantly during the study. The average true digestibility of 5 of the subjects was 85 percent. It was concluded that this …

Data from forty-eight medical records of phenylketonuria children under treatment were investigated to determine if growth, as measured by stature, was normal; and to determine if the state of control or the age at beginning of treatment had an effect on growth. This study was involved in the selection of recipes for a cookbook. Over a thousand recipes were screened from a much larger number. These recipes were processed by grouping, combining and arranging into a uniform style and format. Many recipes were revised and tested. All recipes were of a lacto-ovo-vegetarian type, free from soda, baking powder and harmful condiments and spices.
Basic ingredient cards were prepared for the IBM computer from tables of food composition. Recipe ingredient cards for each item in the recipes were also prepared. These were programmed into the computer to give the total and per serving …

The need for the study was established when the writer was asked to direct a training course for food service supervisors in Brazil. Correspondence with dietitians in Brazil reveled that there was a definite need for a manual which presents current scientific, and technological information.
Current literature was reviewed and studied to determine present concepts in each of the areas of food service supervision and management. A manual of instruction was then prepared which included these concepts.

The effect of a high unsaturated-low saturated fat diet on serum cholesterol levels were studied. Subjects were clinic patients receiving the following hypocholesterolmeic agents: triparanol (MER-29), diildothyroacetic acid (Diac), dextrothyroxine (d-T4) and 3-methoxy-16, alpha-methyl-1,3,5, (10)-estratriene-16 beta, 17 beta-diol (Manvene or Anvene).
Fifteen hypercholesterolemic patients, eleven of whom were diabetic, were placed on diets with prescribed amounts of unsaturated fat. The caloric distribution was 40 per cent carbohydrate, 20 per cent protein, and 40 per cent fat. The level of unsaturated fat was 70 per cent of the total fat.

This thesis, submitted to Xavier University in 1933, surveys the chemical classification of proteins and their role in human nutrition, with the stated aim of preparing home economics students to understand protein's function in the diet. Jones organizes proteins into three major classes: simple proteins, including albumins, globulins, glutelins, protamins, and histones; conjugated proteins, including nucleo-proteins, glyco-proteins, phospho-proteins, and hemoglobins; and derived proteins, including albumoses, peptones, and peptids, describing the chemical composition, solubility properties, and sources of each.

With the growing interest in pellagra, following the authoritative recognition of its presence in the United States in 1907, the study of its etiology was taken up by various investigators and the several theories of causation were subjected to close scrutiny.
Prominent among these theories was that of insect transmission, first advanced by Sambon, who limited this function to the species of blood-sucking gnats comprising the genus Simulium.
