Knowing The Standard American Diet By Its Fruits: Is Unrestrained Omnivorism Spiritually Beneficial?, Matthew C. Halteman

University Faculty Publications and Creative Works

This essay aims to challenge the standard [North] American diet's (SAD) default status in church and among North American Christians generally. It attempts to allay some common concerns about the suitability of food ethics as a topic for serious Christian discernment, and argues that SAD is not spiritually beneficial, drawing support from five traditional sources for Christian moral deliberation, including and especially general revelation and discernment of the fruits of the spirit.

Busting A Gut: Portrayals Of Obesity In Popular Culture, Carly Babel

Obesity is America’s number one leading health epidemic, affecting more than 93 million Americans today (OAC). From 1985 to 2010, obesity has gone from affecting an average of 10% of individuals in just about every state to today affecting 33.8% of people within each state. Children and adults alike all over the U.S. are being diagnosed with obesity and encouraged to change their lifestyles. Doctors are prescribing patients to lose weight, exercise, eat healthy, and in extreme cases, go under the knife, but none of these recommendations are making a dent in lowering the rate of obesity. The Incidence Of Obesity In Lds College Women: The Effect Of Selected Physical Socio-Environmental Variables On Total Percent Body Fat In Two Populations Of Lds Women, Carrie Tanner Summers

The purpose of this study was to determine the effect of selected physical socio-environmental variables on total percent body fat. The sample population consisted of single, LDS, white women attending Brigham Young University (BYU) and California State University at Fullerton (CSUF). Significant data as well as trends that appeared were included in this paper.

From the data collected, it was concluded that the sample populations at BYU and CSUF were the same. The incidence of obesity was determined only among individuals attending both universities. The entire sample population mean was 22.19 percent. This percentage did not meet the obesity criteria. …

The purpose of this study was to provide a historical reference on the origin, development, and objectives of the School of Nutrition and Dietetics from the beginning of the first dietetic program in 1908 to that of the present.

Three methods were employed in this study: the historical, interview, and questionnaire. The main historical source material was obtained from the Historical Records Office in the Library of Loma Linda University. The material consisted of selected letters of the administrators of the College and leaders in the dietetic programs. There is a greater amount of board minutes, annual bulletins, and documents. …
