Emerging research indicates that 40% of early childhood education (ECE) workers experience food insecurity. The purpose of this study was to describe the food insecurity and food access of Head Start teachers and staff in Mississippi before the COVID-19 pandemic and to understand how COVID-19 affected food access. A mixed-methods design was employed using cross-sectional surveys, at two different time points, and three focus groups. Three Head Start centers from the Mississippi Coast participated. Every Utahn, regardless of income, ZIP code, race, age, or health status, deserves reliable access to affordable, nutritious, and culturally meaningful food. Yet, too many communities across the state face persistent barriers that limit their ability to eat well and live healthy lives. This fact sheet reviews results of a 2024 Utah State University (USU) Extension needs assessment that identified food and nutrition security as a high-priority issue in Utah. It explores the current landscape, identifies key challenges, and outlines strategic opportunities for USU Extension and its partners to enhance food security statewide.

Diet and lifestyle changes have been proven to reduce blood pressure in patients with hypertension, and a key dietary approach aligned with this recommendation is the DASH diet, which includes consuming fruits and vegetables. Food insecurity, defined as lacking enough safe, nutritious food to maintain an active and healthy life, is a growing crisis in the United States, affecting 13.5% of U.S. households in 2023. This study examined if there were differences in perceived adult health score, perceived adult diet score, parent-perceived child health score, and parent-perceived child diet score by SNAP usage and food security in a rural, Appalachian Mississippi community. Adults (n=1084) with elementary school- aged children were surveyed in a rural, Appalachian Mississippi school district. Demographic, household adult food security (USDA 10-item measure), and perceived health and dietary data were collected. Background: Nut butter-based Ready to Use Supplemental Foods (RUSF) are an effective way to add nutrients and calories to diets of malnourished and food insecure populations. The RUSF formulations have been further modified to add micronutrients including iron and folic acid needed during pregnancy and lactation. Because docosahexaenoic acid (DHA, C22:6 n-3) enhances fetal development and birth outcomes, it has been suggested that perhaps RUSF formulations for pregnancy should also include this Omega 3 fatty acid. Background: Breakfast consumption has declined over the past 40 y and is inversely associated with obesity-related diet and health outcomes. The breakfast pattern of food pantry clients and its association with diet is unknown.

Background: The Neighborhood Produce Market (NPM) is a food distribution model similar to a mobile food pantry. NPM stakeholders observed a lack of community engagement and familiarity with produce offered.
Project Description: The objective was to develop a nutrition education curriculum for NPM volunteers to better engage families and community members by providing food samples, recipes, and nutrition education. A stakeholder steering committee guided the needs assessment, curriculum development, volunteer training, and pilot test. Adults living in food insecure households consume fewer fruits and vegetables than adults living in food secure households (Hanson & Connor, 2014). The purpose of this study was to examine differences in fruit and vegetable behaviors (intakes; perceptions) of parents of elementary school children by food security status (food secure compared to food insecure; fully food secure compared to not fully food secure) in rural, Appalachian Mississippi. Emergency food pantries provide food at no cost to low-resource populations. The purpose of this study was to evaluate single-day dietary intake patterns before and after visiting a food pantry among food-secure and food-insecure pantry clients. This observational cohort study comprised a paired, before-and-after design with a pantry visit as the intervention. Participants (n = 455) completed a demographic and food security assessment, and two 24-h dietary recalls. Adult food security was measured using the U.S. Household Food Security Survey Module. In 2015, 15.8 million U.S. households were food insecure. While nationally food insecurity is assessed at the household and childhood level, university students are not explicitly monitored. The purpose of this study was to determine the prevalence of food insecurity at a northeast land grant university and characterize the contributing factors. A pilot study (n=211) was conducted in fall 2014 among a general nutrition class and found that 12.4% of students were food insecure, with another 5.7% reported marginal food security. Objective: To examine whether the association between soft drinks consumption and child behaviour problems differs by food security status and sleep patterns in young children.
Design: Cross-sectional observational data from the Fragile Families and Child Wellbeing Study (FFCWS), which collected information on food insecurity, soft drinks consumption, sleep patterns and child behaviour problems. Bivariate and multivariate ordinary least-squares regression analyses predicting child behaviour problems and accounting for socio-economic factors and household characteristics were performed.
Setting: Twenty urban cities in the USA with a population of 200 000 or more.

Objective: To determine the influence of Supplemental Nutrition Assistance Program (SNAP) and participant demographics on nutrition education outcomes.
Methods: At program enrollment (pre) and 1 month later (post), a statewide convenience sample of adults, who participated in the Plan, Shop, Save, and Cook program, completed a 7-item questionnaire to evaluate change in resource management skills (RMS) and running out of food before the end of the month.
Results: Percent of participants (n = 3,744) who reported behavioral improvements in RMS ranged from 38.8%in comparing prices to 54% in reading labels. Female gender and Hispanic ethnicity were positively related to pre–post …
