Emerging research indicates that 40% of early childhood education (ECE) workers experience food insecurity. The purpose of this study was to describe the food insecurity and food access of Head Start teachers and staff in Mississippi before the COVID-19 pandemic and to understand how COVID-19 affected food access. A mixed-methods design was employed using cross-sectional surveys, at two different time points, and three focus groups. Three Head Start centers from the Mississippi Coast participated. The sudden outbreak of the COVID-19 pandemic posed a great threat to the world’s healthcare systems. It resulted in the development of new methods and algorithms for the diagnosis and treatment of both COVID-19 and its complications. Diagnostic imaging played a crucial role in both cases. Among the most widely used examinations are transthoracic echocardiography (TTE) and computed tomography angiography (CTA). Cardiovascular complications in COVID-19 are frequently associated with a severe inflammatory response, which results in acute respiratory failure, further leading to severe complications of the cardiovascular system. Long COVID, a type of post-acute sequelae of SARS-CoV-2 (PASC), has been associated with sustained elevated levels of immune activation and inflammation. However, the mechanisms that drive this inflammation remain unknown. Inflammation during acute coronavirus disease 2019 could be exacerbated by microbial translocation (from the gut and/or lung) to blood. Whether microbial translocation contributes to inflammation during PASC is unknown. We did not observe a significant elevation in plasma markers of bacterial translocation during PASC. Emotional eating is defined as the tendency to excessively consuming food which often high in sugar, salt, and fat levels in response to negative emotions. Uncontrolled emotional eating will increase the risk of eating disorders such as bulimia nervosa and binge-eating disorder, obesity, cardiovascular diseases, and type II diabetes. Wastewater based epidemiology (WBE) has been successfully applied for SARS-CoV-2 surveillance at the city and building levels. However, sampling at the city level does not provide sufficient spatial granularity to identify COVID-19 hotspots, while data from building-level sampling are too narrow in scope for broader public health application. The objective of this study was to examine the feasibility of using wastewater from wastewater collection systems (WCSs) to monitor COVID-19 hotspots at the zip code level. With the ongoing COVID-19 pandemic causing college campuses, restaurants, and businesses to shut down, many college students found themselves having to return home or find alternative food resources. Due to these factors, it was imperative to examine how college student’s eating habits have changed throughout the pandemic, dealing with lots of stressors, and whether having prior education on nutrition influenced those eating habits. To examine those effects, 17 nutrition minors and 126 non-nutrition minors participated in the current study in which they took the College Students Eating Habit survey and the Perception of Peer Pressure Scale. The current COVID-19 pandemic has brought attention to challenges associated with our dominant industrial food system in the U.S. The general public now has more appreciation for farm workers and meatpacking employees, as well as those in grocery stores and in food transportation who are suddenly recognized as essential frontline workers. It apparently takes a crisis for us to focus clearly on the fragility of this system and the lives of people on whom we depend.
