This research aimed to explore the roles of food security status (FSS), financial literacy (FL), and nutrition literacy (NL) on the diet quality (DQ) of college students at the University of Maine. This research additionally sought to understand mediational relationships among these factors that could impact DQ.

A cross-sectional convenience sample of college students completed an online questionnaire assessing sociodemographic factors, short healthy eating index (sHEI)-score, FSS, FL, and NL. Participants' continuous data were analyzed using a Pearson correlation. Since the 1980s, non-algal aquaculture has grown to encompass 49% of all seafood production in response to a growing human population and increased seafood demand (FAO, 2022). Hurdles exist to aquaculture sustainability, including dependence on wild sourced fishmeal (FM) and the impacts wastewater discharge. It takes 4-5 tons of wild forage fish to produce one ton of dry FM (Miles and Chapman, 2006) and as aquaculture is primarily conducted in earthen ponds and public open water bodies (FAO, 2022), finfish culture can have a high impact on the surrounding environment by discharging excess nutrients. Lipid carriers such as emulsions and liposomes have been widely studied as carriers for different nutraceuticals. However, lipid carriers' physicochemical instability results in the leakage of loaded nutraceuticals and the low solubility into the digestion medium, thus reducing the bioaccessibility. Cellulose nanocrystals (CNC) are nano-sized cellulose derivatives obtained after hydrolysis of cellulosic matrices that possess potential applications in functional foods and nutraceuticals. The purposes of this dissertation were to investigate the acute effects of branched-chain amino acids on psychological, physiological, and subsequent performance changes following high volume resistance training. The rationale for this study design was based on abrupt or contiguous training/ competitions that specific athletes encounter in a competitive season. Fruit and vegetable intake for children in the United States is low, which puts them at risk for poor health in the future. The National School Lunch Program meal pattern and nutrition standards for participating schools include increased fruits and vegetables, compared to previous standards. Using a pretest-posttest design, this study examined the effect of a fruit and vegetable intervention on fruit and vegetable food selection and consumption in a rural, Appalachian Mississippi elementary school. Adults living in food insecure households consume fewer fruits and vegetables than adults living in food secure households (Hanson & Connor, 2014). The purpose of this study was to examine differences in fruit and vegetable behaviors (intakes; perceptions) of parents of elementary school children by food security status (food secure compared to food insecure; fully food secure compared to not fully food secure) in rural, Appalachian Mississippi. Diet is strongly associated with many risk factors for chronic disease. Educational programs such as the Expanded Food and Nutrition Education Program (EFNEP) are designed to improve dietary behaviors among low-income populations. Although EFNEP has seen improvements, they are not yet up to recommendations. Previous studies have been successful in eliciting behavior change when improving self-regulation in conjunction with dietary education. A few examples of these threats include pesticide exposure, habitat loss, and climate change. A fast and reliable on-site foodborne pathogens screening can reduce the incidence of foodborne illnesses, hospitalizations and economic loss. It can also circumvent conventional laboratory-based tests with minimal sample treatments and shorter turnaround time. Rapid detection of biological hazards has been largely dependent on immunological agents (ie antibodies). Antibodies are expensive to manufacture and experience cross-reactivity, instability with shorter shelf life. Supplementation with beetroot juice (BR) has been shown to reduce blood pressure (BP) at rest and improve several performance parameters during submaximal and maximal exercise. BR effects on BP during submaximal exercise have not been investigated. Furthermore, the effects of BR on VO2max are inconclusive. Beta-alanine is a non-essential amino acid that when combined with L-histidine forms the dipeptide carnosine. Recent research has shown that supplementary intake of beta-alanine can substantially increase carnosine content in muscle fibers and has been associated with attenuating fatigue and enhancing high intensity exercise performance. The aim of this study was to examine the effects of 4 weeks of beta-alanine supplementation combined with high intensity interval training (HIIT) on indices of aerobic and anaerobic performance, rowing performance, and body composition. Bodybuilding is unlike any other sport. Competitors are judged on appearance rather than performance, where muscle size and definition are keys to achieving success. This case study tracked four, drug-free, female bodybuilders for 6-weeks leading up to their competitions. The purpose of this project was to examine the physiological and psychological experiences of female bodybuilders as they prepare for competition.
