Adolescent obesity continues to be a significant public health concern that is associated with long term physical consequences. The purpose of this project was to develop an evidence based, user friendly guidebook that supports healthcare professionals in the education of adolescents with obesity and their families. A structured literature review development process was used to inform the current development of the guidebook. The guidebook includes components of obesity management such as nutrition and physical activity recommendations. Cardiovascular disease is the leading cause of death worldwide, associated with high sodium intake being a primary contributor to elevated blood pressure. The US Dietary Guidelines for sodium intake is 2,300 mg per day; however, studies indicate that the average daily sodium consumption among Chinese adults is 5,013 mg. The Dietary Approaches to Stop Hypertension (DASH) diet is often recommended to those diagnosed with hypertension. This project aims to develop a cookbook featuring lower-sodium Chinese recipes following the DASH diet guidelines. This study is aimed at evaluating food leftovers and wastes among elementary school students by comparing their food preferences for different ethnic cuisines, developing strategies to reduce food waste, and an assessment of quality assurance of food served. Data were collected from a cafeteria at an elementary school located in California. The total number of students served each day at this elementary school was 475. Data were provided by the cafeteria staff after the lunch was served. Childhood obesity remains a significant public health concern, with substantial implications for physical and mental well-being. This thesis aims to explore the intricate relationship between emotional eating and obesity among adolescents, with a focus on identifying emotional triggers and assessing their psychological impact. Utilizing a cross-sectional study design at a university in southern California, data were collected from two adolescents aged 13-18 years. Through surveys and body composition measurements, participants' emotional barriers to weight loss and readiness for change were assessed. Background: Food insecurity is lack of access to proper nutrition for an individual to obtain a healthy lifestyle. The goal of this research is to determine the frequency of food insecurity among college students at a four-year college institution during COVID-19 pandemic in association to mental and physical health status.

Methods: This study was conducted among college students using cross-sectional study method. All data were collection virtually and kept anonymous. All statistical analyses were conducted using SPSS version 28 with (p<.05), denoting significance.
