Strong communication and transferable skills are essential for future dietitians. This Best Evidence Teaching Strategy describes a community-based approach within an upper-level community nutrition course that partnered with the Cooperative Extension Service. Over six weeks, scaffolded assignments emphasized written, oral, and digital media skills, aligning with current trends in scientific communication. Students created information releases, podcasts, and short videos to translate evidence-based nutrition content into accessible formats for public audiences. Collaboration with Extension provided authentic context and motivation, as high-quality projects could be disseminated statewide.

Background: The Accreditation Council for Education in Nutrition and Dietetics (ACEND) amended the competencies for the future education model (FEM) in dietetic education to include competency 3.6 stating that the Registered Dietitian Nutritionist (RDN) must be able to "Initiate and conduct bedside swallow screenings". There is no clear process for RDNs to implement dysphagia screening in practice or academia. The aim of this review is to inform clinicians and educators on current literature discussing current RDN and speech language pathology approaches to dysphagia screening and to provide a proposed curriculum for implementation of competency 3.6 in clinical practice and academia.

Limited theory-informed, dietetic-specific resources are available to guide the development, evaluation, and refinement of culturally competent (CC) curricula. This pilot study used a mixed-methods, theory-informed approach to evaluate CC integration within an undergraduate dietetics curriculum and examine the applicability of existing CC self-assessment tools for dietetic students. A senior-level undergraduate community nutrition curriculum was evaluated using the Tool for Assessing Cultural Competence Training (TACCT), guided by the Campinha-Bacote Model of Cultural Competence in Healthcare Delivery. The integration of virtual reality (VR) into nutrition and dietetics education provides an innovative answer to challenges in accessing experiential learning. This study examined student perceptions of immersive VR experiences designed to simulate hospital foodservice operations and nutrition counseling sessions, guided by the Diffusion of Innovation Theory (DOI). A quasi-experimental design involved 55 participants who engaged with 360° VR modules featuring interactive elements, avatars representing key healthcare roles, and embedded critical-thinking questions. Results demonstrated strong support for VR’s educational value across DOI’s five key attributes: relative advantage, compatibility, complexity, trialability, and observability. Carbohydrates are the primary source of energy for the brain and play an important role in processes related to memory performance. The purpose of this study is to examine the impact of a low-carbohydrate diet compared to a high-carbohydrate diet on memory performance in college students aged 18–22 years. For the purposes of this study, a low-carbohydrate diet is defined as a diet providing fewer than 130 grams of carbohydrates per day, while a high-carbohydrate diet provides approximately 325 grams of carbohydrates. Objective: To examine graduate dietetics students’ experiences completing a public policy course outside of their discipline. Methods: Participants were 40 graduate dietetics students at a university in the Western United States. At the conclusion of a public policy course offered through another department, students completed online surveys with fixed-response and open-ended items. Quantitative data were analyzed using paired t tests, and qualitative responses were examined using codebook thematic analysis. The purpose of this study was to compare differences in Nutrition Care Process (NCP) confidence and documentation quality across two different undergraduate student cohorts. This quasi-experimental trial was conducted with n = 29 total undergraduate dietetic students (2023 cohort), then compared with results from the previous years’ (2022) cohort (n = 43). NCP confidence was measured before and after students completed traditional case studies (time 1 and time 2) and after completing an ANDHII case study using an electronic and interactive NCP documentation platform (time 3) for each cohort, then compared between cohorts. Weight bias is present among pre-health professional students (e.g., nutrition, dietetics, nursing, physical therapy, medicine). Educators need support and guidelines about how to enhance learning through engaging assignments while also meeting accreditation requirements. This pilot study examined the impact of an innovative weight bias assignment using photovoice and reflection within existing nutrition education courses, measured through pre-post assessments from the Fat Attitudes Assessment Toolkit. While not all subscales showed significant change, improvements in the Fat Acceptance and Attribution Complexity Composites suggest these methods may be effective in shifting attitudes about fatness. Vector-borne diseases, including Zika virus (ZIKV), Dengue virus (DENV), and West Nile virus (WNV), pose considerable global health threats, accounting for over 400 million infections and more than 700,000 deaths annually. Many vector-borne diseases are within the Flaviviridae family. Despite this, effective treatments have not been found for some flaviviruses. Flaviviruses exploit host cellular machinery to facilitate their replication and survival, reprogramming metabolic pathways, including lipid metabolism. Lipids play essential roles in the viral life cycle, providing structural components for the viral envelope, enabling membrane rearrangements for replication complexes, and supplying energy resources necessary for particle assembly.

Design: Researchers developed an electronic survey asking about youth’s perceptions of the dietetics profession. Setting/Participants: The survey was distributed to a diverse population of youth aged 14-17 in the USA. Objective: Describe educator experiences teaching systems thinking in nutrition and dietetics education. Design: Qualitative, semi-structured, online interviews. Setting: Educators teaching in accredited nutrition and dietetics programs. Participants: Purposive sample of thirteen Registered Dietitian Nutritionists (92% female, 77% with > 6 years teaching experience) from each U.S. census region and accredited program type. Phenomenon of Interest: Educators described experiences teaching systems thinking in accredited programs, including benefits. Analysis: Transcribed interviews were analyzed using qualitative grounded theory iterative coding. Excel was used for data organization and thematic coding analysis. The objective of this study was to explore if using ANDHII improves NCP confidence and documentation quality. This quasi-experimental trial was conducted with n = 43 undergraduate dietetic students. NCP confidence was measured before and after a traditional case study, and after an ANDHII case study. Documentation quality was measured using a validated quality audit tool. Confidence increased from time 1 to time 2 (p = 0.008), and from time 2 to time 3 (p = 0.003). Documentation quality was higher for the ANDHII documentation compared to the non-ANDHII documentation (p < 0.001) but lower when compared to the traditional ADIME (p = 0.03). Familiarizing students with ANDHII improved NCP confidence. Opportunities exist to improve ANDHII functionality and positively impact documentation quality.

The purpose of this study was to analyze tactics employed by coordinated programs in dietetics during COVID-19 and share best practices in the event that another crisis disrupts the intended learning plan and curriculum. The study was conducted via a survey that consisted of 14 questions, not including consent, that pertained to their specific program, whether COVID disrupted their supervised practice experiences, and if so, how they overcame the challenge. Diabetes camp is helpful in providing hands-on learning experiences and interprofessional learning opportunities through immersive experiences. Currently, there is little research comparing the changes in knowledge and perception during experiential learning in dietetics students at a residential diabetes camp. This longitudinal qualitative case study explored the knowledge, perceptions, confidence, and empathy gained by four dietetics students during experiential learning at the camp. In this issue of the Journal of Dietetic Education, we share a special section for interprofessional education (IPE). The articles highlight potential avenues for interprofessional education in dietetics programs and continuing education for dietetics professionals. Each article offers insight into the landscape of dietetic education and the need for IPE. Dietetic students learn from IPE experiences in their programs. However, additional IPE occurs through outside experiences and throughout a dietitian’s career.
