Whey proteins have restricted use in many food applications because of limited functional properties. Whey proteins' relatively high content of disulfide bonds may be responsible for their lack of functionality, especially in extrusion applications.

To determine the effect of disulfide bond content on functional properties and extrudate performance, whey protein concentrate was treated with sodium sulfite to achieve four levels of disulfide bond sulfonation (0, 31, 54, and 71%). Sulfonated whey protein functional properties, extrusion-expanded snack properties (32% total protein), and extrusion-textured fibrous product properties (48% protein) were determined. It is well established that l,25(OH)2D3 is a major regulator of calcium homeostasis. The steroid exerts its effects on its target organs by two mechanisms, a slow mechanism mediated by nuclear vitamin D receptors (nVDR), and a rapid mechanism mediated by the l,25(OH)2D3 membrane-associated rapid response steroid binding protein (l,25D3-MARRS bp). Androgen receptor (AR) gene CAG polymorphisms may be associated with body shape, and are associated with certain breast and prostate cancers. In addition, body shape is associated with risk for a variety of diseases, including heart disease, diabetes, and certain forms of cancer. The CAG repeat in exon l of the AR gene was quantified using Perkin Elmer Applied Biosystems GeneScan analysis software in 96 and 59 healthy Caucasian men and women, respectively, who were over the age of 50 years. Lamb adipose tissue, representing 4 breeds, 3 sex-types and 3 weight categories, were studied to measure the variation in the flavor profile between individual animals, based on breed, sex- type and carcass weight. The flavor concentrates were prepared by steam distillation, ether extraction and fractionation. Pooled samples were prepared in the same way to measure any variations due to methodology.

Gas chromatographic separation and statistical analysis, based on analysis of variance, indicated that 21 peaks out of 124 peaks showed significant differences (at 5% level or 1% level). Among these 21 peaks, 5 were affected by breed, 4 by sex-type, …

The effect of Mg status on the behavior of rats, as determined by nonspecific excitability level and audiogenic seizure susceptibility, was investigated. Also, selected biochemical and neurological mechanisms mediating the chain of events from dietary magnesium deficit to the hyperexcitability symptoms were examined. Weanling rats fed a low magnesium (10 ppm) diet for 14 days had reduced serum, cerebrospinal fluid and brain magnesium concentrations, and increased brain (Na+ K+) -ATPase activity. They exhibited increased NEL and became highly susceptible to audiogenic seizures. The objectives of this investigation have been to characterize black gram (Phaseolus mungo L.) and rice (Oryza sativa L.) proteins and to study changes in their nutritional value due to fermentation. Black gram, the legume chosen for this work, is one of the most important legume crops throughout a large part of the tropics.

The protein content of 60 mesh, dehydrated, defatted black gram meal was 28.5 percent. Sodium carbonate (0.5-1.0 percent), tetra-sodium pyrophosphate (0.5 percent), and sodium dodecyl sulfate (SDS) (0.5-5 percent) proved to be the potential protein solubilizers as they extracted more than 76 grams of …

Forty-nine female rats initially weighing about 95 grams were used in this experiment to determine the effect of contraceptive hormones on body composition in zinc deficient and zinc supplemented rats. Four treatment groups were: 2 ppm of dietary zinc with daily contraceptive steroid injections, or with placebo injection, and 140 ppm of dietary zinc with contraceptive steroid injection or with placebo. The daily injected steroids consisted of 0.1ug of Ethynyl Estradiol and 0.1mg of Medroxyprogesterone in 0.1ml of corn oil. Non-hormone treated groups received 0.1ml of plain corn oil. Two trials were conducted using 48 infant pigs of both sexes. Pigs were taken from the sow when three to seven days old and placed in wire-bottomed metal cages by pairs. Animals in the first trial received synthetic diets containing 100 or 1000 international units of ergocalciferol and 1000 or 4000 international units of retinyl acetate or four or sixteen milligrams of beta carotene per kilogram of feed. Five normal healthy young university women while on self-chosen diets and living under normal conditions served as experimental subjects in this study. Urinary pregnanediol was measured for 10 days of the menstrual cycle. Meal frequency (3 meals vs. 2 meals with no breakfast) was also included in the study.

A modification of the method of Eberlein and Bongiovanni on thin layer chromatography was used to determine pregnanediol in the urine sample.

Approximately 46 million acres or 88 per cent of the land area of the state of Utah has been classified by Reuss and Blanch (1951) as "range land open for grazing." Although some of this area cannot be grazed because of inaccessibility, lack of water, poison plants, and similar factors, it is estimated that some 40 million acres or 78 per cent of the total land area is available for grazing. Most of this grazing land is federally owned (73 per cent), while only 22 per cent is privately held, and 5 per cent is state owned.
