Patch Mow Grazing: Investigating The Effects Of Mowing On Forage Nutritive Value, The Biomass–Nutritive Value Relationship, And Herbivore Selection, Trace R. Stauble

Department of Agronomy and Horticulture: Dissertations, Theses, and Student Research

Herbivore foraging behavior plays a critical role in shaping grassland structural heterogeneity, with selection often driven by forage biomass and nutritive value. Currently, it is thought that herbivores primarily select areas that are greater in nutritive value, and low in biomass. More specifically, disturbances like fire and grazing have been thoroughly studied showing that recently burned and grazed areas are not only higher in nutritive value but disproportionately selected by herbivores in comparison to undisturbed areas. However, most studies address only narrow ranges of defoliation, comparing intensely defoliated sites (< 10 cm) to those that are either not defoliated or have experienced a much longer time since defoliation, thereby decreasing grazing pressure as biomass increases. However, one of the most widely used methods of defoliation in grasslands, mowing, hasn’t been thoroughly studied for its effects on nutritive value, and how it impacts herbivore selection. Our study aimed to (1) evaluate how mowing treatments—i.e., short (5 cm), medium (18 cm), and tall (>30 cm, unmown)—affect nutritive value and herbivore selection, (2) assess …

Evolution And Strengths Of School Lunch Programs In The United States And Japan, Sarah Ritterling May 2025

Evolution And Strengths Of School Lunch Programs In The United States And Japan, Sarah Ritterling

Honors Program: Senior Projects (Public)

School lunches around the world perform a vital role in children’s nutritional needs and overall health. These nutritional programs provide a chance for children to learn how to create a balanced meal and about the production and serving of food. However, many countries, including the United States and Japan, have taken different approaches to meet these goals, influenced by the needs of children and communities over time. The United States provides support, funding, and nutritional standards through the National School Lunch Program. Japan promotes the Basic Act of Shokuiku (food and nutrition education) within society and outlines goals for schools …

Preschool Executive Control And Adolescent Dietary Outcomes: Highlighting The Role Of Context, Marla Lopez Aug 2024

Preschool Executive Control And Adolescent Dietary Outcomes: Highlighting The Role Of Context, Marla Lopez

Dissertations and Doctoral Documents, University of Nebraska-Lincoln, 2023–

Research has identified executive control (EC) as an important predictor of dietary outcomes among youth. Executive control in preschool age has been shown to predict important outcomes across development for youth, indicating that good, foundational EC abilities are associated with successful development in later life. Dietary outcomes across adolescence, an important transitional period for establishing healthy eating behaviors, are understudied. Therefore, the current study sought to link two critical developmental periods, examining how preschool EC is associated with dietary trajectories across adolescence. Further, the study aimed to identify how contextual factors, specifically indices of socio-economic status and the home and …

Another option is the fermentation of brewer's spent grain with a cereal grade lactic acid bacteria for the production of sourdough bread. Milling of the brewer's spent grain for the production of bread is also covered.

Nutritional Strategies For Nurses In A Fast Paced Occupation, Zachary Christman Jan 2020

Nutritional Strategies For Nurses In A Fast Paced Occupation, Zachary Christman

Department of Agronomy and Horticulture: Dissertations, Theses, and Student Research

The foundation of the medical system are the nurses and certified medical assistants. Their personal health condition affects how well diseases and other medical conditions are handled. This article will begin with an overview of the eating behavior of nurses. Three different interventions which have been shown effective in a fast paced workplace are presented in order to improve the health of nurses and certified medical assistants. The first intervention is organizational changes that would increase the amount of time nursing staff have to eat. The second is the use of a messenger bag delivery system to provide needed food, …

The Relationship Of Male And Female Pastoralist Income With Household Food Security And Nutrition Status In Tanzania: Maasai, Sukuma, And Barabaig Ethnic Groups, Henriette Gitungwa Aug 2018

The Relationship Of Male And Female Pastoralist Income With Household Food Security And Nutrition Status In Tanzania: Maasai, Sukuma, And Barabaig Ethnic Groups, Henriette Gitungwa

Department of Agricultural Economics: Dissertations, Theses, and Student Research

Although previous work provides a significant baseline for understanding the impact of gender on household decision making and resource (i.e. income and food) allocation, there are gaps in evidence for important groups, including East African pastoralists. Previous authors have noted that pastoralists’ gender roles and relations appear to be resistant to change, potentially impeding household development. This paper attempts to assess the relationship between male and female pastoralists’ income control and household food security and nutritional status in Tanzania. We use three surveys: a household-level livestock health and economics survey, a household food security survey, and an individual woman-level survey …

Characterization Of Extraction Methods To Recover Phenolic-Rich Extracts From Black Beans (Phaseolus Vulgaris) That Inhibit Alpha-Amylase And Alpha-Glucosidase Using Response Surface Approaches, Mazen Alharbi May 2016

Characterization Of Extraction Methods To Recover Phenolic-Rich Extracts From Black Beans (Phaseolus Vulgaris) That Inhibit Alpha-Amylase And Alpha-Glucosidase Using Response Surface Approaches, Mazen Alharbi

Department of Nutrition and Health Sciences: Dissertations, Theses, and Student Research

Black beans contain high phenolic contents that are considered potent antioxidants. Relatively little is known about their ability to inhibit the carbohydrate-hydrolyzing enzymes α-amylase and α-glucosidase from releasing glucose from starch and/or disaccharides. The objective of this project was to determine the optimum procedures for extracting total phenols (TP), total flavonoids (TF) and total condensed tannins (TCT) from black beans (Phaseolus vulgaris), and then to determine the ability of the phenolic rich extracts to inhibit α-amylase and α-glucosidase. Due to their high phenolic levels, it was hypothesized that black beans would be an effective inhibitor of α-amylase and α-glucosidase, which …

The Environmental And Health Costs Of Alternative Diets: A Comparative Study Of The U. S. Diet Relative To The French, Japanese, Mediterranean, And Nordic Diets, Sarah Rehkamp Aug 2014

The Environmental And Health Costs Of Alternative Diets: A Comparative Study Of The U. S. Diet Relative To The French, Japanese, Mediterranean, And Nordic Diets, Sarah Rehkamp

Department of Agricultural Economics: Dissertations, Theses, and Student Research

This thesis contributes to the literature on sustainable consumption by using scenario analysis to evaluate the environmental and health costs of the U.S. diet relative to the French, Japanese, Mediterranean, and Nordic diets, identified in the literature as healthier diets. As a first step in estimating environmental costs, the energy efficiencies of each diet are calculated by decomposing each of the diets into their respective components. Then, the dietary efficiencies are translated into CO2 emissions. As a first step in estimating health costs, a pooled cross-section time-series dataset is used to find the association between BMI and five countries, …
