Disordered eating (DE) is a prevalent concern among college students and may be particularly relevant among nutrition and dietetics students due to their academic focus on food, weight, and health. This study aimed to assess the prevalence and frequency of disordered eating behaviors among junior and senior Human Nutrition and Dietetics students at the University of Arkansas using item-level responses from the Eating Disorder Examination Questionnaire Short Form (EDE-QS). Protein is a priority nutrient in the American diet, being fueled by the demands of weight loss drugs, diet culture, and new dietary guidelines. However, meeting these elevated protein goals sustainably requires diversifying beyond standard sources like whey protein isolate. 3D printing offers an opportunity to present a variety of protein sources in a palatable, customized, and consumer-acceptable format. In this study, 3 protein sources (cricket, whey, and pea), were optimized within food inks for 3D printing. Many studies have shown that college students do not eat well (Huang et al., 1994; Lorenzoni et al., 2021; Majeed, 2015). Research has identified factors that contribute to the reasons students don’t eat well. Trace minerals, particularly copper, zinc and manganese, play a role in ensuring optimal immune function. To examine the effects of diets containing different levels and sources of trace minerals on the inflammatory response, Cobb 500 broilers were fed four experimental diets containing 5 mg/kg Cu and 45 mg/kg of Zn and Mn or 10 mg/kg Cu and 90 mg/kg Zn and Mn in either the sulfate or hydroxychloride form. When the broilers were 5 weeks of age, 16 μg of lipopolysaccharide (LPS) was injected into the pulp of growing feathers (GF; 16 GF per chicken; 1 μg LPS per GF). …

We analyzed the energy content of seeds of Texas doveweed (Croton texensis) obtained from the crops of mourning doves (Zenaida macroura) collected from plains-mesa sand-scrub habitat in Eddy and Lea counties, New Mexico. Seeds were removed from crops and dried for 48 hours at 60°C to remove moisture and to standardize masses. Seeds were then analyzed for gross caloric value (i.e., energy content) in an oxygen bomb calorimeter. Energy content of seeds of Texas doveweed was greater than many seeds previously reported from the diet of mourning doves.

Over 30% of adults in the US are obese. A primary contributor to obesity is an unhealthy diet related to imbalanced macronutrients. Diets higher in protein (PRO) are associated with increased energy expenditure (EE) and reduced food intake. The objective of this pilot study was to determine if protein source at breakfast influences EE in young men (n=4; ages 18-35). Participants consumed three isocaloric (whey (WP), pea (PP), beef (BP); 275 kcal, 62% PRO, 23% CHO, 15% Fat) drinks in randomized, crossover design with a one-week washout period. Previous research has shown that acute dehydration can result in changes in mood. These changes have been reported in less than a 1% loss in total body water. However, the effect of hypohydration (i.e., reflected through high urine concentration) on mood in free-living conditions has not been studied. PURPOSE: The present study was designed to determine if hydration status is associated with mood within the general population under free-living conditions. METHODS: A group of 103 apparently healthy subjects (49 male, 54 female, 41±14 y, 1.7±0.1 m, 76.1±16.9 kg) completed three visits separated by a week. Mood was assessed by the …
