Disordered eating (DE) is a prevalent concern among college students and may be particularly relevant among nutrition and dietetics students due to their academic focus on food, weight, and health. This study aimed to assess the prevalence and frequency of disordered eating behaviors among junior and senior Human Nutrition and Dietetics students at the University of Arkansas using item-level responses from the Eating Disorder Examination Questionnaire Short Form (EDE-QS). Research has identified executive control (EC) as an important predictor of dietary outcomes among youth. Executive control in preschool age has been shown to predict important outcomes across development for youth, indicating that good, foundational EC abilities are associated with successful development in later life. Dietary outcomes across adolescence, an important transitional period for establishing healthy eating behaviors, are understudied. The intermittent fasting diet has a historical past, but recently, it has regained popularity as a weight loss strategy for the general public. Athletes have also picked up this specialized diet in search of a competitive edge. Breastfeeding rates in America are lower than other high-income countries, with Mississippi having one of the lowest rates. A survey using the Iowa Infant Feeding Attitude Scale (IIFAS) was distributed twice to Mississippi State University students to understand their breastfeeding attitudes. Attitudes were determined by calculating a composite score and conducting statistical tests for significance. Knowledge between health and non-health related majors were explored by using five statements, and attitudes towards the statement “Breastmilk is the ideal food for babies” were compared across demographics. Our study provided an analysis and comparison of specific blood values, dietary intake, body composition, and inflammatory markers (high sensitivity-C-reactive protein (HS-CRP), tumor necrosis factor-alpha (TNF-α), and interleukin-6 (IL-6)) between adults with type 2 diabetes mellitus (T2DM) and prediabetes (PDM) to adults without diabetes. A total of 22 participants (PDM/T2DM n=12, controls n=10) in the San Luis Obispo, CA area completed the study prior to our ending recruitment due to Covid-19. This research project investigates the diets of various sport athletes at the University of Rhode Island. The question that this project aims to answer is if our athletes are meeting recommended daily values nutritionally, and if not, why? Research continues to grow regarding how performance implications are tied to varying nutritional disparities for athletes. Various studies show malnourishment leads to performance decline, increased injury risk, and improper recovery. This is influenced by factors such as deficits in caloric intake, macronutrient and micronutrient availability, and dehydration. Autism is a neurodevelopmental disability that may affect nutritional management of children with autism. Parent’s attitudes and their behavior towards healthy eating reflects on the child’s eating habits and thus, their nutritional health. The utilization of brewer's spent grain for the production of malt flour is the focus of this article. The reader is presented with superheated steam and extrusion as technologies to reduce mycotoxin contamination and improve shelf life. Another option is the fermentation of brewer's spent grain with a cereal grade lactic acid bacteria for the production of sourdough bread. Objective: The study aims to compare the effectiveness of individual and group nutrition education methods in improving key anthropometric and biochemical markers in drug-treated, overweight-obese hypertensive adults. Methods: The randomized trial included 170 patients with pharmacologically well-controlled primary hypertension and body mass index (BMI) ≥ 25 kg/m2. For six months, the patients received six sessions, either one-to-one individual nutrition education (IE, n = 89) or group education (GE, n= 81), developed by dietitians. Anthropometric measurements, body composition, and fasting measures of biochemical parameters were obtained at baseline and after six months of intervention. Results: 150 patients completed the …

Although previous work provides a significant baseline for understanding the impact of gender on household decision making and resource (i.e. income and food) allocation, there are gaps in evidence for important groups, including East African pastoralists. Using A Model To Design Activity-Based Educational Experiences To Improve Cultural Competency Among Graduate Students, Yeon Bai, Kathleen D. Bauer

To improve the cultural competency of 34 students participating in graduate nutrition counseling classes, the Campinha-Bacote Model of Cultural Competence in the Delivery of Health Care Services was used to design, implement, and evaluate counseling classes. Each assignment and activity addressed one or more of the five constructs of the model, i.e., knowledge, skill, desire, encounters, and awareness. A repeated measure ANOVA evaluated pre- and post-test cultural competence scores (Inventory for Assessing the Process of Cultural Competence among Healthcare Professionals). The overall cultural competence score significantly improved (p < 0.001) from “culturally aware” (68.7 at pre-test) to “culturally competent” (78.7 at post-test). Students significantly improved (p < 0.001) in four constructs of the model including awareness, knowledge, skill, and encounter. Factor analysis indicated that course activities accounted for 83.2% and course assignments accounted for 74.6% of the total variance of cultural competence. An activity-based counseling course encouraging self-evaluation and reflection and addressing Model constructs significantly improved the cultural competence of students. As class activities and assignments aligned well with the Campinha-Bacote Model constructs, the findings of this study can help guide health educators to design effective cultural competence training and education programs.

Trends in adult obesity have been used to motivate key public health policies in the United States. While these analyses provide important insights into the broad historical contours of the obesity epidemic in the U.S., they shed less light on the proximate mechanisms that have generated these changes and that will ultimately determine the long-term course and pace of change in obesity rates. Over 30% of adults in the US are obese. A primary contributor to obesity is an unhealthy diet related to imbalanced macronutrients. Diets higher in protein (PRO) are associated with increased energy expenditure (EE) and reduced food intake. The objective of this pilot study was to determine if protein source at breakfast influences EE in young men (n=4; ages 18-35). Participants consumed three isocaloric (whey (WP), pea (PP), beef (BP); 275 kcal, 62% PRO, 23% CHO, 15% Fat) drinks in randomized, crossover design with a one-week washout period. Previous research has shown that acute dehydration can result in changes in mood. These changes have been reported in less than a 1% loss in total body water. However, the effect of hypohydration (i.e., reflected through high urine concentration) on mood in free-living conditions has not been studied. Obesity is a disease of major proportion in the United States. The Surgeon General has identified obesity as a national health problem that affects approximately 34 million Americans.
The aim of this study was to investigate the very-low-calorie diet, Optifast 70. Measurements for resting energy expenditure (REE} and body composition via circumference measurements (CBF} and infrared photospectromerty (NIR} with a Futrex 5000 were collected at weeks 1, 7, 13, 19, and 25. Osteoporosis is responsible for approximately 1.3 to 1.5 million fractures per year in the United States. The risk of osteoporosis increases with age, especially among postmenopausal women, and with lifestyle factors such as the use of certain drugs, heavy alcohol consumption, cigarette smoking, high caffeine intake, and sedentary living. Genetic factors that may influence susceptibility to osteoporosis include a positive family history of the disease, or a low weight - for-height ratio. In some cases, race and geographic location may increase or decrease the risk of osteoporosis. Nutrition labeling research suggests consumers want nutrition information on the label; however, many do not comprehend it. The purpose of Phase I was to determine the effect of: 1. two levels of nutrition label formats; 2. three levels of nutrition information load on consumers' preference for product choice using adaptive conjoint analysis. A computer interactive interview was conducted on 252 consumers in Crossroads Mall, Salt Lake City, Utah. label alternatives were printed on soup cans to realistically portray the information. The effect of nitrogen intake, nitrogen source, calorie intake, body weight, adaptation time, research group and sex on the nitrogen balance of human adults was investigated. Data from studies reported in the literature were combined and analyzed statistically by multiple regression techniques. Analyses were made separately for six sources of nitrogen: egg, beef, rice, corn, wheat and wheat gluten.
Nitrogen intake, caloric intake and body weight exerted significant effects on nitrogen balance (5% level of confidence) for six, three and two of the six nitrogen sources, respectively. Other variables were not significant at the 5% level. Although differences were not …
