The Academy of Nutrition and Dietetics is currently promoting the advancement of cultural humility as a means for nutritional professionals to better appreciate the lived experience and identities of others as well as the power dynamics that create health inequalities. At the same time, the Academy has struggled to advance services to underserved populations such as those with Intellectual and Developmental Disabilities (IDD) and autism spectrum disorder. Here the authors argue that both goals can be achieved by involving nutrition students in the teaching of food preparation skills to individuals with IDD. The availability of health and nutrition knowledge is disproportionately lower in minority populations compared to their majority counterparts despite minority populations at higher risk for health problems related to poor dietary habits from cultural and social influences. The purpose of this project was to determine if a weekly, culturally competent, group-delivered, nutrition education intervention affected nutrition knowledge in minority adults. The project was a smaller arm of the FABU study, which provided the education intervention. The prevalence of childhood obesity in the United States has more than tripled over the last four decades from 5 percent in 1978 to 18.5 percent in 2016, and according to the Mississippi Obesity Action Plan, 40.4% of Mississippi elementary school children (grades K-5) were either overweight or obese. Some reports have suggested that Mississippi’s overall obesity rate could reach 66.7% by 2030. Although the literature on best practices for the prevention of this condition is limited, some success has been achieved through the use of school-based nutrition interventions, in which children are taught how to make healthy food choices. …

Objective: To assess changes in nutrition and physical activity (PA) knowledge and behavior in elementary-age participants from school districts with high American Indian enrollment after completion of a culturally tailored education curriculum.
Design: Pre-post intervention study assessing knowledge and behavior using quantitative methods. Participants: A total of 248 participants (Kindergarten through 5th grade, n=248) throughout 13 elementary classrooms in tribal communities participated in Eat Smart. Play Hard.: The Oyate Way. The aim of this study was to assess the effectiveness of a “learn first, practice second” intervention on the nutrition-related knowledge, attitudes, and self-efficacy of multidisciplinary health professionals in West Virginia, specifically highlighting the Mediterranean Diet. Data was captured via online surveys at four time points (Baseline, Post-education, Post-immersion, Follow Up). All information was self-reported. This approach consisted of 16 weeks of online education, 2 weeks of cultural immersion in Tuscany, Italy, and a 7 month return to practice period.
