Kid Eats App: Supporting Parents And Children Cooking Together, Amy S. Muise, Gabrielle A. Longo, Pamela N. Martinez, Umekia R. Taylor, Linda E. Torv, Barbara A. Chamberlin

Kid Eats is a free app for iPad encouraging children and parents to cook together at home using fruits and vegetables. A preliminary study with parents and children showed children enjoyed using the app and that it provided useful information to support children’s involvement in the kitchen, including guidance around safety concerns. Every family in the study voluntarily completed at least one of the recipes with their child at least once following the in-person activity. Parents reported that their children actively asked to cook the recipes from the app and felt the app helped increase their time spent cooking with …

Reaching Tomorrow’S Extension Customer: A Food And Health Needs Assessment, Morgan Szczepaniak, Sarah L. Francis, Ruth Litchfield, Ulrike Genschel, Shannon Coleman, Anirudh Naig

The food and health needs and preferences of Iowans (n=452) were examined. The leading food and health information sources were online platforms, social media, and print media. Program topics with high participation likelihood were cooking, food preservation, food safety, and gardening. Short, low-cost, online programs were preferred. Extension use was more likely among those who identified as persons of color, Hispanic/Latino, or were food insecure (p < 0.030). Those with less education and chronic disease were less likely to be interested in Extension programming (p < 0.040). These results provide valuable information regarding future directions for Extension programming.

Urogenital schistosomiasis continues to impact the wellbeing of hundreds of millions of people worldwide and remains a significant public health challenge across Ethiopia. Despite existing knowledge on the disease, there remain significant unanswered questions with regard to its treatment and diagnosis. This dissertation evaluated the efficacy of praziquantel at treating urogenital schistosomiasis, improving nutritional parameters among children and the performance of FlukeCatcher at detecting and determining the intensity of infection. OBJECTIVES: School food can have a profound effect on the population’s health. Thirty million children receive food at school and consume half their daily calorie intake at school. Competitive foods are foods sold outside of school breakfast and lunch, such as those sold in vending machines. A new ruling for Smart Snacks Standards, a set of competitive food guidelines, started in the school year 2014-2015. Preeclampsia is a pregnancy-specific condition typically diagnosed after 20 weeks of gestation in women with no prior history of hypertension. Characterized by high blood pressure, proteinuria, thrombocytopenia, increased liver enzymes, and affecting the arteries carrying blood to the placenta, preeclampsia affects the health of both the mother and the fetus. Objective: This study aims to identify fathers' profiles integrating food parenting practices (FPP) and physical activity parenting practices (PAPP).

Design: We analysed cross-sectional data. The fathers completed the reduced FPP and PAPP item banks and socio-demographic and family dynamics (co-parenting and household responsibility) questionnaires. We identified fathers' profiles via latent profile analysis. We explored the influence of social determinants, child characteristics and family dynamics on fathers' profiles using multinomial logistic regression.

Setting: Online survey in the USA.

Participants: Fathers of 5-11-year-old children.

Despite traditional dietary categories common in primatology (folivore, frugivore, insectivore), most primates use one or more food types beyond their primary one. Among lemurs, folivores tend to have a complicated, long gastrointestinal tract with an enlarged cecum, shearing teeth, and microbiome adaptations to foliage, while frugivores have simple teeth and guts and fast gut passage. Yet frugivores often eat some leaves, and folivores eat some fruit, and little is known about the selection rules they follow within each food type. PURPOSE OF REVIEW: Hypertension (HTN) is a major risk factor for cardiovascular diseases (CVD). The global prevalence of HTN and related CVD mortality continues to rise. The development of HTN is influenced by genetic predisposition and modifiable risk factors, including diet. One area of ongoing debate is the relationship between red meat consumption and risk of HTN.

Introduction:This study evaluated the sports nutrition knowledge of NCAA Division III (DIII) athletes, examining the influence of demographic and sport-specific factors. Nutrition is a critical component of athletic performance, recovery, and overall health, yet prior research indicatescollegiate athletes often lack adequate nutrition knowledge.

Methods: A total of 412 athletes, representing 17 different sports across endurance, power, and skill categories, completed the validated Abridged Nutrition for Sport Knowledge Questionnaire (A-NSKQ). The sample included freshmen through fifth-year seniorathletes, predominantlyCaucasian (85%).

Objective:

To examine how the Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) online food benefit ordering could influence WIC benefit redemptions.

Design:

A cross-sectional study. We compare the average redemption rates between online ordering early adopters and non-adopters among WIC customers before and after implementing WIC online ordering. A propensity score-weighted difference-in-difference model was used to estimate the coefficients.

Setting:

The Oklahoma WIC programme and a grocery store chain in Oklahoma.

Participants:

12743 Oklahoma WIC households that had redeemed their food benefits at the grocery store chain in 2020.

We have developed a population-level method for dietary assessment using low-cost wearable cameras. Our approach, EgoDiet, employs an egocentric vision-based pipeline to learn portion sizes, addressing the shortcomings of traditional self-reported dietary methods. To evaluate the functionality of this method, field studies were conducted in London (Study A) and Ghana (Study B) among populations of Ghanaian and Kenyan origin. In Study A, EgoDiet's estimations were contrasted with dietitians' assessments, revealing a performance with a Mean Absolute Percentage Error (MAPE) of 31.9% for portion size estimation, compared to 40.1% for estimates made by dietitians. Polycystic ovarian syndrome (PCOS) is a metabolic endocrine disorder affecting 8–11% of women worldwide, with 70% remaining undiagnosed (WHO, 2023). It presents with symptoms such as irregular menstrual cycles, insulin resistance, high testosterone levels, anxiety, depression, and infertility, significantly impacting quality of life and health (OASH, 2021). The symptoms of PCOS can severely impact women’s quality of life, mental health, and long-term well-being. This study compared the Peak Health and Performance curriculum (PHP) to the Teen Cuisine curriculum (TC) on improving nutrition, food safety, and physical activity (PA) behaviors among youth. The quasi-experimental study was conducted in Michigan middle and high schools and included 1007 5th- through 12th-grade students, who participated in either the PHP or the TC curriculum. There were 465 students in the PHP group and 495 students in the TC group. Nutrition, food safety, and PA behaviors were surveyed before and after each program. Food insecurity disproportionately affects smallholder farming households and within them women, who bear primary caregiving responsibilities and contend with time and resource constraints that heighten their vulnerability to adverse nutrition-related health outcomes. This study cross-sectionally investigates the association between food production practices, household consumer behaviour, and the experience of food insecurity with women's waist-hip ratio (WHR), a key indicator of abdominal obesity, in a coastal community in Kenya. The 2020 Dietary Guidelines for Americans now include recommendations for infants and toddlers. Extension educators can use these expanded guidelines to provide feeding recommendations for caregivers of infants/toddlers. The purpose of this study was to explore 1) the infant and toddler feeding topics that Extension educators discuss with caregivers through formal curricula and informal conversations, 2) educators’ perceived barriers to teaching and discussing topics with caregivers, and 3) the optimal format of resources for educators and the communities they serve. The ability to eat and switch between many food sources is an adaptative feeding strategy utilized for meeting nutritional needs across different environments, seasons, and physiological conditions. Baboons (genus Papio) excel at both dietary flexibility and foraging selectively, and consequently have one of the most widespread geographic distributions in the Order. Polycystic Ovary Syndrome (PCOS) is an endocrine disorder affecting approximately 4 – 20% of women worldwide. It is associated with insulin resistance, fertility problems, and an increased susceptibility to chronic conditions through multiple inflammatory pathways. Women with PCOS are also at increased risk for disordered eating. The Mediterranean diet is associated with decreased inflammation and risk of chronic conditions, and intuitive eating principles are associated with decreased disordered eating patterns. Given the rising cost of poultry diets, alternative ingredients like sorghum are crucial for maximizing returns without compromising product quality. Sorghum's drought tolerance and adaptability, along with its nutritional profile, make it a viable corn substitute. This dissertation examines the nutrient composition, amino acid digestibility, and performance of poultry fed with American tannin-free grain sorghum. Chapter II evaluates the impact of sorghum-based diets, with or without phytase superdosing, on broiler performance, including body weight, weight gain, feed intake, and feed conversion ratio.
