Emergency food pantries provide food at no cost to low-resource populations. The purpose of this study was to evaluate single-day dietary intake patterns before and after visiting a food pantry among food-secure and food-insecure pantry clients. This observational cohort study comprised a paired, before-and-after design with a pantry visit as the intervention. Participants (n = 455) completed a demographic and food security assessment, and two 24-h dietary recalls. Adult food security was measured using the U.S. Household Food Security Survey Module. The purpose of this descriptive study was to determine the reasons why 38% of the students at the University of Arkansas experience food insecurity, yet only 1% of students have used the Jane B. Gearhart Full Circle Campus Food Pantry, in hopes to provide a guide to the Center for Community Engagement in their endeavors to reduce food insecurity on campus (Lisnic, 2016). For the past two years, this author has been the program director for a volunteer group called Food Recovery. Food Recovery collaborates with UConn Dining Services to collect unsold food items from UC Cafes on campus, and donates them to the Covenant Soup Kitchen in Willimantic, CT. The majority of the donations provided by Food Recovery are pre-packaged sandwiches and salads, that are made fresh daily by Dining Services staff and are sold in UC Cafes to the UConn community. The Covenant Soup Kitchen supports people experiencing food insecurity in Willimantic, by providing multiple hot meals throughout the week.

Introduction: According to the USDA, 12.3% (15.6 million) of U.S. households were food insecure in 2016 due to contributing factors such as lack of food accessibility and the prevalent food waste in the U.S. An estimated 40% of food is thrown away each year and contributions to this food waste include an estimated 22 million pounds of unconsumed foods discarded in college campuses around the U.S. Programs have been developed to target this food waste epidemic while combatting Americans malnutrition. Using life-history theory within a biocultural perspective, this research explores whether household food insecurity correlates with early or delayed menarche among adolescent females in Tampa Bay, Florida. Early onset of puberty and menstruation is connected with numerous health consequences including growth stunting, obesity, type-2 diabetes, adult-onset asthma, reproductive cancers, increased risk for depression, behavioral problems, and early sexual activity which increases the risk for STIs and ovarian cancer. Early menarche also seems to disproportionally impact disadvantaged and minority groups. Young adults in Appalachia may face poor nutritional status due to low access to healthy food and high mental health symptoms attributed to high stress and the college environment. A cross-sectional design was used to investigate the relationship between diet intake and mental health status of this population via surveys. Participant responses (n = 1956) showed students’ mean number of depressed days over the past 30 days was 9.67 ± 8.80, and of anxious days, 14.1 ± 10.03. In order to investigate the impact of food insecurity on college students in a highly health disparate region we (1) assessed the prevalence of food insecurity among young adults at a large, rural university in Appalachia, and (2) investigated the relationship between food insecurity and behavioral characteristics including academic performance, coping strategies, and money expenditure. In 2015, 15.8 million U.S. households were food insecure. While nationally food insecurity is assessed at the household and childhood level, university students are not explicitly monitored. The purpose of this study was to determine the prevalence of food insecurity at a northeast land grant university and characterize the contributing factors. A pilot study (n=211) was conducted in fall 2014 among a general nutrition class and found that 12.4% of students were food insecure, with another 5.7% reported marginal food security. There is a need for sustainable interventions that improve diet-related health within the food insecure community. We examined if use of a “default” prefilled online grocery shopping cart, compared to nutrition education, would result in the purchase of healthier food items. Living in a community with adequate availability of nutritious food, and the capacity to access and utilise it, are key food security determinants (FSD). However, inequities relating to these determinants exist between regional and remote Western Australian (WA) communities, particularly regarding fruit and vegetables (F&V). Objective: To examine whether the association between soft drinks consumption and child behaviour problems differs by food security status and sleep patterns in young children.

Design: Cross-sectional observational data from the Fragile Families and Child Wellbeing Study (FFCWS), which collected information on food insecurity, soft drinks consumption, sleep patterns and child behaviour problems. Bivariate and multivariate ordinary least-squares regression analyses predicting child behaviour problems and accounting for socio-economic factors and household characteristics were performed.

Setting: Twenty urban cities in the USA with a population of 200 000 or more.

Objective: To determine the influence of Supplemental Nutrition Assistance Program (SNAP) and participant demographics on nutrition education outcomes.

Methods: At program enrollment (pre) and 1 month later (post), a statewide convenience sample of adults, who participated in the Plan, Shop, Save, and Cook program, completed a 7-item questionnaire to evaluate change in resource management skills (RMS) and running out of food before the end of the month.

Results: Percent of participants (n = 3,744) who reported behavioral improvements in RMS ranged from 38.8%in comparing prices to 54% in reading labels. Female gender and Hispanic ethnicity were positively related to pre–post …

Trends in qualitative community nutrition research demonstrate a powerful, emerging perspective in the midst of a field historically dominated by quantitative methods of inquiry. For this qualitative study, ten key respondents were purposively selected and interviewed using the Community Readiness Model (CRM) to capture community knowledge of food insecurity issues and strategies. Data were analyzed using anchored rating scales, revealing readiness at a stage three, characterized by a vague awareness of local food insecurity. This article focuses on the prevalence among Massachusetts children and families of food insecurity, inadequate access to enough nutritious food for an active and healthy life. It summarizes research findings on the association of food insecurity with less optimal children’s health and development from the prenatal period through adolescence. Food insecurity also correlates with other material hardships, such as housing and energy insecurity. Data show families’ participation in public nutrition and other assistance program is associated with decreased prevalence of food insecurity and with mitigation of its impact on children’s health and well-being. Children in food-insecure households are more likely to experience poorer health function and worse academic achievement. To investigate the relation between economic environmental factors and food insecurity among children, we examined the relation between general and specific food prices (fast food, fruits and vegetables, beverages) and risk of low (LFS) and very low food security (VLFS) status among low-income American households with children. The purpose of this study was to determine if the nutritional needs of high-risk community members are met by supplemental food baskets distributed by charitable groups in northeast Tennessee. Hunger is a real problem among the area's elderly population, as 14.3% of the populations live at or below the poverty level. Data were collected using observation interviews at the food bank. A nutrient analysis tool was used to analyze the nutrient content of food items in a standard food basket. The findings were compared to the recommended dietary allowance for the elderly population.
