Senior Year Experience Student Projects

For the month of March, we implemented a mini education program at both EmblemHealth sites to engage, educate and empower members of the fitness center and weight management program. The program was designed to be fifteen minutes in length, allowing for more sessions over the course of 3 hours with one session a week alternating between topics. Upon survey evaluation of the 60 participants, they reported satisfaction with the overall program and validated the worth of EmblemHealth’s Fitness Center. The survey also showed that 10 out of 10 participants recognized sitting disease as a primary health concern after the presentation, …

Iron deficiency anemia (IDA) is a condition that occurs in both underdeveloped and developed countries worldwide. This disorder is diagnosed in an individual who presents the common signs and symptoms of anemia along with consistently low clinical markers of stored iron. Iron deficiency (ID) usually precedes a diagnosis of IDA as the insufficient amount of iron often goes undetected until one’s quality of life is diminished. Food recovery programs are an increasingly popular method to decrease the amount of food waste in the United States while increasing healthy food access for food insecure individuals. One such program is the Heartside Gleaning Initiative that began in 2014 in Grand Rapids, Michigan. The program partners with low-income volunteers to collect fresh produce from farmers’ markets for redistribution. From June to October 2014, 17,000 pounds of fresh produce was provided to low-income individuals and food pantries. A survey of participants indicated high usage of the produce and high satisfaction with the gleaning program. This program confirms that gleaning is …

Diet is an important factor in gastrointestinal health. A synbiotic food option utilizing prebiotic and probiotic ingredients may be beneficial for improving gastrointestinal health. To conduct a human subject study of synbiotic ice cream containing prebiotic (inulin) and two strains of probiotics (Lactobacillus casei KE99 and Bifidobacterium bifidum) to determine its effectiveness as a carrier for a these ingredients and to identify any negative gastrointestinal side effects.

Abstract: Dehydration exceeding 2% loss of body mass can cause decreased cognitive and physical performance in endurance athletes. While many runners carry water bottles with them, most do not know their sweat rate or fluid recommendations, increasing the risk for heat-related illnesses such as heat stroke. Purpose: To assess hydration status, habits, and knowledge of collegiate cross country runners. Methods: Institutional Review Board approval was obtained and subjects completed informed consents. Abstract: Risk factors for cardiovascular disease (CVD) including dyslipidemia and hypertension can develop in adolescence and increase risk of CVD in adulthood. Improved blood pressure and lipid profiles are associated with higher dietary calcium intake in older adults, but limited data exists in young adults. Purpose: Determine the relationship between dietary calcium intake and CVD risk factors in a college-age population. Methods: IRB approval was obtained. Fasting blood samples were collected from 149 college students ages 18-24. Diet is widely recognized as an important factor in lifetime cancer risk, yet Americans routinely consume foods that are energy-dense and nutrient-poor. Animal model studies to identify functional foods for cancer prevention generally do not account for typical Western dietary patterns with respect to macro- and micronutrient content. The primary objectives of this study were to determine the impact of ancestral and multi-generational consumption of a Western-style diet in a murine model of inflammation-associated colorectal carcinogenesis. Eating insects is not a common Northern American practice today. However, in the past a variety of insect species was consumed in Northern America (north of Mexico including Greenland). The aim of this literature review is to provide an historical overview of North American entomophagy based upon both peer and non-peer reviewed sources on this topic. Regional differences in insect consumption and reasons for being underreported are discussed. Previous studies have shown positive effects of long-term resveratrol (RSV) supplementation in preventing pancreatic beta cell dysfunction, arterial stiffening and metabolic decline induced by high-fat/high-sugar (HFS) diet in nonhuman primates. Here, the analysis was extended to examine whether RSV may reduce dietary stress toxicity in the cerebral cortex of the same cohort of treated animals. Middle-aged male rhesus monkeys were fed for 2 years with HFS alone or combined with RSV, after which whole-genome microarray analysis of cerebral cortex tissue was carried out along with ELISA, immunofluorescence, and biochemical analyses to examine markers of vascular health and inflammation in the …

There is a high prevalence in malnutrition among traumatic brain injury (TBI) due to the hypermetabolism and hypercatabolism which develop post injury. Traumatic brain injury patients are different, even among themselves, in their energy requirements and response to nutritional therapy. Ruminant livestock account for a significant amount of the anthropogenic methane produced in the U.S. All ruminant livestock produce 28% of the earth’s methane emissions. The methane within ruminants is produced by a microbial fermentation, especially by a group of bacteria known as the methanogens. The CDC estimates that more than one-third of U.S. adults (approximately 78.6 million) are obese. Despite national efforts to combat this with diet and exercise, the number of obese adults and children continues to climb. Abnormally high blood and tissue lipid levels observed in metabolic disorders and cardiovascular diseases are associated with extensive gene expression changes. Gene expression is modulated by epigenetic mechanisms, which include modifications of DNA-bound protein histones without alteration of DNA sequence. Histone hyperacetylation is observed in the setting of metabolic disorders but the causes have not been described in any detail. We know that histone acetylation is positively correlated with the abundance of acetyl-coenzyme A. This study tests the hypothesis that acetyl-coenzyme A metabolizing enzyme acetyl-coenzyme A synthetase 2 (ACSS2, cytoplasmic, aka AceCS1) impacts liver function through histone acetylation, and that …

We tested the hypothesis that a highfat diet would increase the difference in body weight between C57BL/6J mice provided dietary microRNA (Exo +) and mice which were fed the same diet depleted of microRNA (Exo-).

• The data demonstrate that depleting miRNAs from a high-fat diet does not impact the difference in body weight between Exo+ and Exo- subjects. • Depleting dietary miRNAs from normal low-fat diets do result in differences in body weight, fat, fecundity, purine metabolism, and gut microbiome.

Micronutrient supplementation in maize production is of growing interest to producers and agronomists as means to further increase yield as other crop needs are increasingly met. Plant tissue and soil sampling for micronutrient concentrations have been used to determine likely responses to micronutrient supplementation. Nebraska soils are generally micronutrient sufficient and usually do not have soil or plant tissue micronutrient concentrations below critical levels, however, during precise periods where specific micronutrients are in greatest need due to physiological demands, there may be opportunity for micronutrient supplementation to increase grain yield. Menstrual status, both past and current, has been established as an important determinant of bone mineral density (BMD) in young exercising women. However, little is known regarding the association between the cumulative effect of menstrual status and indices of bone health beyond BMD, such as bone geometry and estimated bone strength.

Purpose: This study explores the association between cumulative menstrual status and indices of bone health assessed using dualenergy x-ray absorptiometry (DXA), including femoral neck geometry and strength and areal BMD (aBMD), in exercising women.

The two most common methods to measure resting metabolic rate using indirect calorimetry are steady state or time interval. Steady state is commonly defined as the first five minutes in which oxygen consumption and carbon dioxide production vary by <10%. A time interval measurement generally lasts 20-60 minutes. Using steady state criteria is often harder to achieve, but many suggest it more accurately measures resting metabolic rate. Our objective was to determine if there were differences between steady state and time interval measurements in a healthy adult population.
Seventy seven subjects were measured for 45 minutes. Inclusion criteria included healthy subjects ages 18-65, excluding pregnant and lactating women. Paired t-tests analyzed differences between measures, and Bland-Altman plots evaluated bias, precision, and accuracy.
Of 77 subjects, 84% achieved steady state, and 95% achieved SS by minute 30. Most differences between steady state and time intervals were statistically but not practically …

Malnutrition is concerning in children because it effects proper growth and development. Handgrip Strength (HGS) has been identified as a diagnostic indicator for identifying pediatric malnutrition but normal reference ranges have not yet been established; therefore, HGS can be used to identify malnutrition but not quantify the degree of malnutrition: mild, moderate, or severe. In children, TB is a serious but understudied illness due to the complexity of case-notification and relative lack of public health importance. This study took place over the course of one month in Bhopal, Madhya Pradesh, India. While the benefits of both cardiovascular exercise and resistance training have been well documented, there is a lack of evidence for the order of exercise that is most effective when both are done in the same day. This study was designed to look at two groups of participants performing both resistance (R) and cardiovascular (C) training in the same day to determine if their order, resistance before cardiovascular (R-C) or cardiovascular before resistance (C-R), matter with regard to changes in body composition, maximal strength, and maximal aerobic capacity. The rates of food insecurity amongst Hoosier children is slightly above the national average. For many of these children, school lunches are their primary source of nutrition. During school breaks, these children are at risk of going hungry. While Purdue Nutrition Society wishes that we could help all Hoosier children stay fed with nutritious meals, for now we are focusing on helping 20 local elementary students most at risk of going hungry over spring break.
