This paper looks at how growing food insecurity in Ghana, and Cape Coast in particular, is changing the role of women in the community. It examines government agricultural policy and its influence on urban communities, including Cape Coast. To test the hypothesis that white potatoes (WP), oven-baked fries (OBF), and french fries (FF) contribute important nutrients within energy needs to children's and adolescents' diets, secondary analysis of 24-hour dietary recall data from the National Health and Nutrition Examination Survey 2003-2006 was conducted. Potato content of survey foods was determined using US Department of Agriculture recipe databases (Standard Reference (SR)-Link files). Nutrient content of potatoes was determined by linking SR codes to US Department of Agriculture food composition data. The purpose of this study was to assess the demographics and spending behavior of attendees at San Luis Obispo’s downtown Farmers’ Market. With the current 2011 economic recession in America, this study evaluated its affect on the Farmers’ Market attendee demographics and purchasing motivations. Using a questionnaire distributed to 200 participants at Farmers’ Market, this study concluded that most people are motivated by price when shopping for produce and the majority of Farmers’ Market attendees’ spending behaviors have been affected by the economic recession. The influence of feeding juvenile female leopard tortoises (Geochelone pardalis, n=18) a commercially available, complete, extruded feed three (3) or seven days (7) per week on dry matter and digestible energy intake, apparent digestibility of dry matter, organic matter, gross energy and fiber fractions, animal body weight and measurements, digesta transit time, rate of passage, and indigestible fill was evaluated.  Both feeding frequencies are commonly practiced with captive tortoises. Background: The National Cholesterol Education Program and American Heart Association have recommended the use of functional or cholesterol-reducing foods, some categories of which include viscous or soluble fibers, soy protein, plant sterols, and nuts, as aids to reduce serum cholesterol concentrations. Figs are a rich source of viscous fiber and antioxidants. Fig consumption has not been studied in regard to effects in reducing serum lipid concentrations. In previous pilot data, increasing fig consumption for six weeks among volunteers was found to be feasible.

This research evaluates the effect of sunflower oil wax (SFOw) addition on the crystallization behavior and functional properties of anhydrous milk fat (AMF). Induction times of nucleation, melting behavior, microstructure of crystals, and hardness were evaluated for samples of pure AMF and AMF with 0.1 and 0.25% SFOw. Results from this research show that the addition of waxes induced the onset of crystallization of AMF by inducing its nucleation, as evidenced by decreased induction times of nucleation and the formation of smaller crystals. Crystal growth after tempering was also promoted by waxes, and significantly harder lipid networks were obtained. Results …

Effect Of Brown Midrib Corn Silage And Dried Distillers Grains Plus Solubles On Lactational Performance And Nitrogen Utilization By Dairy Cows, Hugo A. Ramirez

Thirty six Holstein cows, four ruminally cannulated, (mean ± SD, 111 ± 35 DIM; 664 ± 76.5 kg BW) were used in replicated 4×4 Latin squares to investigate the effects of brown midrib (bm3) and conventional (DP) corn silages, and the inclusion of dried distillers grains plus solubles (DDGS) on milk production and N utilization. In each 28 d period cows were assigned to one of four treatments: DP plus 0% DDGS (CON); bm3 plus 0% DDGS (BMR); DP corn silage plus 30% DDGS (DP+DG); and bm3 plus 30% DDGS (BMR+DG). Dry matter intake was greater (P < 0.01) for cows consuming bm3 (25.8 VS 24.4 ± 0.47 kg), likewise for DDGS (24.3 and 25.9 ± 0.47 kg/d for 0 and 30%). Compared to DP hybrid, NDFD was higher (P < 0.01) for bm3 (32.5 VS 38.1 ± 1.79%). There was a hybrid × DDGS interaction (P < 0.01) for total concentration of volatile fatty acids (VFA) and rumen pH as the highly digestible treatment BMR+DG resulted in the highest VFA and the lowest pH. Milk yield was not affected by treatment and averaged 30.6 ± 1.09 kg/d. Milk protein yield (MPY) was greater (P < 0.01) for bm3 and DDGS treatments. There was a hybrid by DDGS interaction (P = 0.02) for milk fat yield (MFY) resulting in 1.03, 1.08, 0.84 and 0.78 ± 0.045 kg/d for DP, BMR, DP+DG and BMR+DG. Fat corrected milk (FCM) was affected by DDGS (P < 0.01) and averaged 30.0 and 26.4 ± 1.0kg/d (0% and 30% inclusions). Urinary N excretion was similar among treatments; however fecal N was lower (P = 0.03) for diets containing bm3 corn silage which caused lower (P = 0.02) manure N. These results indicate that bm3 corn silage and DDGS increase DMI, NDFD and MPY; however high inclusion of corn silage with 30% DDGS reduces FCM. Nitrogen excretion was reduced when cows consumed bm3.

Growth of Lactobacillus paracasei ATCC 334, in a cheese-ripening model system based upon a medium prepared from ripening Cheddar cheese extract (CCE) was evaluated. Lactobacillus paracasei ATCC 334 grows in CCE made from cheese ripened for 2 (2mCCE), 6 (6mCCE), and 8 (8mCCE) mo, to final cell densities of 5.9 × 108, 1.2 × 108, and 2.1 × 107 cfu/mL, respectively. Biochemical analysis and mass balance equations were used to determine substrate consumption patterns and products formed in 2mCCE. The products formed included formate, acetate, and d-lactate. This study examines the predictors of birth outcomes among women of European and African ancestry and considers the birthplace of the babies’ fathers (foreign born vs. native born) as a protective factor. This is a secondary data analysis of 146,431 singleton births among women of European and African ancestry, both native-born and foreign-born, in a 21 birth hospital region of Central New York State from 1996 to 2003. Foreign born fathers were found to have 15% fewer low birth weight infants than US-born fathers, after controlling for the race and birthplace of the mother, tobacco use and Medicaid. Randomized trials of bacterial vaginosis (BV) treatment among pregnant women to reduce preterm birth have had mixed results. Among non-pregnant women, BV recurs frequently after treatment. Randomized trials of early BV treatment for pregnant women in which recurrence was retreated have shown promise in reducing preterm birth. Syracuse’s Healthy Start (SHS) program began in 1997; in 1998 prenatal care providers for pregnant women living in high infant mortality zip codes were encouraged to screen for abnormal vaginal flora at the first prenatal visit. Chlamydia trachomatis (CT), the most prevalent sexually transmitted infection in the United States, disproportionately infects women and people of color. This study aimed to identify risk factors for racial and ethnic disparities for CT infection, re-infection, and persistent infection among pregnant women. We present a secondary analysis of births from a retrospective cohort study in Syracuse, NY from January 2000 through March 2002. Lactobacillus helveticus CNRZ 32 is recognized for its ability to decrease bitterness and accelerate flavor development in cheese, and has also been shown to release bioactive peptides in milk. Similar capabilities have been documented in other strains of Lb. helveticus, but the ability of different strains to affect these characteristics can vary widely. Lung cancer is the leading cause of cancer deaths in the US, in part due to poor diagnosis. Prognosis can be improved, if detected at an early stage. The objective of this study was to use the metabolomic approach to investigate early potential biomarkers for lung cancer. Golden Syrian hamsters were randomized into two groups (treatment and control). Lung cancer was induced in treatment group by a chemical carcinogen, N-nitrosobis-2-(oxopropyl) amine (BOP) while the control animals were injected with saline.
