Background: Depression is one of the most common health problems in college students. Understanding the associations between diet quality, total blood cholesterol, sleep quality, and depressive symptoms could aide in improving the mental health of this population.

Objective: The purpose of this study was to evaluate the association between diet quality, omega-3 fatty acid intake, total blood cholesterol levels, sleep quality, and depressive symptoms in college students.

Excess dietary fat consumption has been implicated in the development of obesity and diabetes. Obesity can be characterized by a disproportionate increase in fat mass compared to lean body mass. However, if muscle mass can be increased or maintained in obesity, this may facilitate weight loss by increasing the body’s overall metabolic capacity. Historically, supplementation with the branched-chain amino acid leucine has been shown to increase muscle protein synthesis via the protein kinase mTORC1. While the benefits of both cardiovascular exercise and resistance training have been well documented, there is a lack of evidence for the order of exercise that is most effective when both are done in the same day. This study was designed to look at two groups of participants performing both resistance (R) and cardiovascular (C) training in the same day to determine if their order, resistance before cardiovascular (R-C) or cardiovascular before resistance (C-R), matter with regard to changes in body composition, maximal strength, and maximal aerobic capacity. Color Your Plate Nutrition Intervention: Using Exposure Interventions To Increase Fruit And Vegetable Intake In Older Adults Attending Congregate Meal Sites, Alyson D. Humphrey

The aims of the Color Your Plate nutrition intervention were to increase intake of fruits and vegetables and increase motivators and decrease barriers to consuming fruits and vegetables rich in older-adults who regularly attend congregate meal sites. In this quasiexperimental pilot study, a convenience sample (n=35) of older adults at two intervention and two control sites completed pre- and post-surveys. Following the five-lesson curriculum, intervention participants reported greater intakes of fruits and vegetables (mean change increase of 3.47 ± 2.38 servings/week) and significant increases in days having consumed 4.5 cups or more of fruits and vegetables (p=.0004), incorporation of fruits …

Background: With increased obesity has come increased ready-made and fast food consumption and decreased homemade food consumption. Previous studies have shown associations between cooking self-efficacy (SE) and cooking frequency (CF) with dietary quality and weight status. Cooking interventions have shown positive associations with dietary outcomes, such as increased fruit and vegetable intake and decreased fast food consumption. There is still much unknown about SE and CF, especially among youth.

Phytoestrogens are plant compounds that possess estrogenic and biological properties that have been postulated to protect against chronic diseases. Isoflavonoids and lignans are two main classes of phytoestrogen that have been investigated for their estrogenic efficacy and occurrence in the human diet. Isoflavonoids are found in soy and related products, whereas lignans are found in a wider range of plant-based foods, such as cereals, vegetables, fruits, legumes, nuts and seeds; and in beverages such as tea, coffee and wine. This health behavior research study utilizes the theory of planned behavior (TPB) to explore female collegiate lightweight rowers' (FCLR) decision to use multivitamin/mineral supplements (MVS). This study aimed to determine the relationship between FCLR salient beliefs, attitudes, subjective norms, and perceived behavior control (PBC) towards MVS, intention to use MVS, and use of MVS. Subjects were recruited from sixteen collegiate lightweight women's rowing programs within the United States and Canada and asked to complete an online survey. Results confirmed that the subjects' attitudes and PBC, but not subjective norms, were associated with intention to use MVS. In agreement with TPB …

Paleolithic nutrition can optimize serum lipids in adults with hyperlipidemia who have been on a heart-healthy diet based on the current recommendations by the Academy of Nutrition and Dietetics (the Academy) or the American Heart Association (AHA). Twenty subjects (10 male and 10 female) age 40 to 62 were selected based on the criteria of a diagnosis of hypercholesterolemia. Subjects were not taking any cholesterol lowering medication and had followed a calorie-controlled diet, based on either the dietary principles of the Academy or the AHA, for at least four months followed by a Paleolithic diet for four months. Objective: Lifestyle interventions that target diet and physical activity have been shown to reduce the development of Type 2 diabetes (T2DM) in individuals at risk; however, accessible and effective community-based prevention programs remain lacking. The purpose of this study was to assess the impact of PREPARE, a group lifestyle behaviour change program in adults with prediabetes.

Patients with end-stage renal disease (ESRD) who receive hemodialysis often fail to follow a prescribed diet and fluid regimen, which undermines the effectiveness of care and leads to unpredictable disease progression and greater likelihood of complications. Non-adherence to dietary and fluid limitations compromises the outcomes of patients receiving hemodialysis. Noncompliance can lead to detrimental long-term outcomes including deterioration of the cardiovascular system, heart failure, hypertension, and pulmonary edema as well as short-term problems such as edema, itching, bone pain, and breathlessness.

Long term consumption of a high fat diet (HFD) increases the risk of developing Metabolic Syndrome and type 2 diabetes. This led us to hypothesize that long term HFD consumption impairs immune tolerance to the intestinal bacteria. Our studies had two goals. First, we characterized the effect of long term HFD consumption on the systemic immune response by comparing C57BL6 mice fed a HFD and low fat diet (LFD). Plasma immunoglobulin G (IgG) against Escherichia coli (LF-82), E. coli (Nissle 1917), Bacteroides thetaiotaomicron and Lactobacillus acidophilus were measured by a lab-developed ELISA. The nutritional status of children is declining as evidenced by the steady rise in childhood obesity rates over the last three decades. Consuming five servings of fruit and vegetables (FV) daily has shown to help with weight maintenance, but children are consuming far less than the recommended servings. This study was designed to test the efficacy of a sensory-focused multi-component school-based program at increasing vegetable intake among fifth-graders. Classroom, family, and community components allowed children to explore thirteen target vegetables with their senses including taste. The effect of weight gain on college students may lead to physical and emotional problems that could continue into adulthood. Identifying behavioral, demographic, and psychological factors that impact college student’s weight status could aid in developing programs to help reduce weight and prevent weight gain in overweight and obese college students. This study evaluated the dietary habits, physical activity, and psychosocial characteristics of college students entering a university-sponsored weight loss program. The purpose of this study was to determine if there was a significant difference in weight loss, body fat, waist circumference, or diet quality among participants taking calcium or placebo supplements in a lifestyle intervention program. Three participants ages 52-55 completed the 14 week program. Two participants took 1,000 milligrams calcium while one participant took a placebo. Changes in diet were analyzed by Nutribase IV and self perception. Anthropometrics were analyzed by analysis of variance, alpha level 0.05. Preliminary studies were undertaken to investigate whether or not added iron (0, 35, 880 ppm of iron as ferrous fumarate) and fat type (corn oil, beef tallow, or menhaden oil) influenced the oxidation of the rat diet during storage. Iron level affected thiobarbituric acid (TBA) values only in the menhaden oil diets. Storage for 4 d did not affect TBA values of the diets. Neither food intake nor body weight of the rats was affected by the different diets, suggesting all diets were equally acceptable to rats.

The purpose of this study was to determine and evaluate the dietary intake of pregnant women living in this geographical area, evaluate how their diets related to their iron status, how their nutrient intakes compared with other studies, and how their iron status and diet affected infant iron status and development, as assessed by the Bayley Scale of Infant Development.

The study involved 32 pregnant women who were between 8 to 14 weeks gestation and 20 to 35 years of age. They were followed through pregnancy and their infants were followed until three months of age.

To date there have been no complete reports of the nutrient intakes of persons with Type I diabetes mellitus who use continuous subcutaneous insulin infusion (CSII) pumps. The purpose of this study was to describe the sample population and to determine the nutrient intake of adult Type I diabetics from the Salt Lake City, Utah area, who use CSII.

Three-day dietary records were analyzed for nutrient content and 24 hour urine samples were analyzed for calcium, phosphorous, total nitrogen, and free alpha-amino nitrogen for 210 elderly people. Dietaries and urine samples were collected twice, October and March at five month intervals, for each subject. Increases were found in both dietary intake and urinary components October to March. Based on a criteria of high dietary protein, low dietary calcium, high urinary nitrogen and low calcium, 23 subjects were selected as osteoporotic and and 25 were selected as non-osteoporotic. This method of prediction was not supported by radiological evaluations.

The purpose of this study was to analyze the diets of elderly people in southern Utah. Three types of information were used in the analysis: biochemical, dietary, and the subject's analysis of his diet. Four vitamins were studied: vitamin A, ascorbic acid, thiamin, and riboflavin.

Dietary data was obtained on the four vitamins and compared by sex and by age. Thiamin and riboflavin dietary levels were evaluated using the Index of Nutritional Quality (INQ), to determine the quality of the diet according to the total calories consumed. Over an 18-year period, beginning in 1955, a group of subjects has been studied six times to determine if any relationship exists among serum cholesterol levels, body weight, health status, diet quality and stress or anxiety. For the first four test periods, extending through ages 7 to 16 years, there were 321 subjects. Later, in 1968, 86 of the original 321 subjects, now aged 19-22 years, were able to participate in a follow-up study.
