Abstract
The purpose of this study was to determine the knowledge, attitude and behavior influences of Registered Dietitians (RDNs) regarding Vitamin D (VD). An electronic questionnaire served as the data collection tool developed using previously validated questions and supplemented with behavior construct questions. Content and face validity was assessed by an expert panel; internal consistency was assessed using Cronbach’s Alpha. Scores were assessed for knowledge to determine dietitian awareness and competency about VD, attitudes of RDNs regarding importance and practices around VD, and influences on RDN behavior including by other healthcare providers (HCP). There is a large gap between minority representation in the field of dietetics and the United States population, and nutrition students need advanced cultural competence training in preparation for future work with diverse populations. Universal recommendations for delivering and evaluating cultural competence training in nutrition programs are non-existent, and students tend to lack understanding of how to develop this skill. Service-learning in underserved communities with reflective assignments have been used to develop cultural competence skills, but most reported results are anecdotal. Diet is increasingly linked with overall quality of life, and a healthy diet is now being considered one of the cornerstones of preventative care. Physicians rely on Registered Dietitian Nutritionists (RDNs) as most doctors lack the nutrition knowledge to properly treat their patients, especially during their residency. Little published information exists on the specific collaboration of RDNs and resident physicians. This study aimed to determine whether mentoring with an RDN increased physician nutrition knowledge, increased consults to RDNs, and whether physician attitudes improved regarding their understanding of the role of the RDN in healthcare. Autism is a neurodevelopmental disability that may affect nutritional management of children with autism. Parent’s attitudes and their behavior towards healthy eating reflects on the child’s eating habits and thus, their nutritional health. This study aimed to describe the diet quality of children with autism using the Healthy Eating Index (HEI) scores. It also aimed to assess the relationship between parent’s perceived barriers and self-efficacy and children’s dietary behavior and dietary intake (age 5-13 years). The three aims of the study investigated the females’ age 18-25 perception, knowledge, and health beliefs, barriers and strategies to overcoming barriers to prevent osteoporosis. The mixed method explanatory design of research was implemented. Phase one used a survey to gather demographic data, past and current behaviors, the completion of the Osteoporosis Health Behavior Scale (OHBS) questionnaire, and Short Calcium Intake List (SCaIL). Four hundred forty-nine quality survey responses were obtained. The second phase, the focus group (n=23), discussed questions designed to answer the three aims of the study. INTRODUCTION: Food insecurity is a problem in the subpopulation of older adults and the elderly. The following study aimed to explore the perceptions and motives such as career benefits, impacts experienced through volunteering, skills in dietetics, comfort level with seniors, social responsibility, peer modeling, and empathy of student volunteers participating in a food recovery-meal delivery program known as Meals on Wings (MOW) on a college campus in the Southeast.

For many senior citizens, meeting nutritional needs is essential to good health and daily function. Studies indicate that many American older adults are not meeting their nutrition needs and often suffer from food insecurity. Meals on Wings (MOW) is a food recovery-meal delivery program that attempts to decrease the influence of food insecurity among older adults. The metabolic hormones ghrelin, growth hormone, and insulin-like growth factor I are influenced by developmental age, sex, and nutritional status in domestic and free-ranging species. However the role these hormones play has not previously been explored in sub-tropical/ tropical mammals. Furthermore, the seasonality of species with less dynamic environmental cues, such as the West Indian manatee, have not been studied. Metabolic hormones and their axes, including the target tissues and receptors, regulate the tissue specific utilization of nutrients with in the body. The purpose of this research was to understand the hormonal control of complex nutrient partitioning mechanisms involved in young, growing animals. Specifically, this involved the investigation of metabolic hormones and the regulation of growth in two common species of phocids (true seals): harbor seal (Phoca vitulina) and Northern elephant seal (Mirounga angustirostris) pups.
