This is the first time they have had to do their laundry on their own, keep their room clean, and maybe most importantly, they are responsible for figuring out where they are going to eat every day, for every meal. The focus of this study is on food accessibility struggles for college students, specifically looking at Western Kentucky University’s (WKU) food on-campus, as well as students with dietary restrictions.

While near-infrared spectroscopy has been used in research and athletic development for some time, recent technological advances have made it accessible as an undergraduate learning tool. This teaching resource describes how near-infrared spectroscopy (NIRS) can be used in an in-person kinesiology laboratory. This activity illuminates nutrition principles, including issues with using supplements, deceptive marketing and labeling practices, and the value of nutrient-dense whole foods by observing vasodilation as a result of nitrate consumption in the form of whole beets and a beetroot supplement. Garlic (Allium sativum L.) is a spice that has been used for centuries for medicinal purposes or flavoring in food. Garlic has also been commonly used as a fly and pest control for horses and is still commonly used for that purpose today. Recent research has shown garlic may cause Heinz body anemia in horses. The purpose of this study was to evaluate the incidence of Heinz body anemia in horses supplemented with varying rates of garlic. The purpose of this study was to determine if the Female Athlete Screening Tool (FAST) is a valid indicator of the three physical components of Female Athlete Triad (FAT), malnutrition, amenorrhea, and low bone mineral density, and if administration of the FAST can be used as a time- and cost-effective way to identify FAT. Participants completed the FAST, the Menstrual Status Questionnaire, and had a blood sample drawn. Interpretation of the total FAST score placed participants in one of three conditions: normal, subclinical disordered eating, or clinical eating disorder. Genetically modified (GM) foods technology is a novel idea for improving food and crop production, but the supposed health risk of GM foods, such as possible negative long-term health effects to humans, animals and the environment, have provoked the European Union to create assessment protocols to monitor and regulate the safety of GM foods and crops. This research investigates the perception and attitudes of unlabeled GM foods of the WKU faculty and staff. PURPOSE: Obese women have increased rates of metabolic diseases compared to those of healthy weight status. Additionally, African-American (AA) women have higher rates of metabolic disease compared to Caucasian (CA) women. Metabolic inflexibility is the inability to adjust substrate oxidation in response to dietary intake; potentially leading to weight gain and the development of metabolic disease. Few studies have investigated the impact of weight status and/or ethnicity on the metabolic response of women to a single high fat meal. The United States is a rapidly aging nation. Older adults have higher rates of falls than any other age group. One in four older adults fall each year. Many of these falls are associated with sedentary lifestyles and decreased muscular strength effecting balance and gait performance. Physical activity (exercise) can reduce the risk of falls among older adults, yet adherence remains low. Exergames can increase adherence to interventions that promote health and physical activity. Social engagement can increase self-efficacy and motivation to exercise. Nutritional and energetic needs of female mammals depend upon size or reproductive investment and shape individual activity budgets and behavioral patterns. To maximize nutritional and energetic intake females may increase time allocated to foraging or access resources through risk-prone behaviors, represented as aggression or leadership. Conversely, to minimize nutritional and energetic spending females may engage in risk-averse activities such as resting or nonaggressive social interactions. Females with the highest needs should exhibit activities and behaviors that facilitate the greatest nutritional and energetic returns or highest metabolic savings. To assess what factors are driving the exponential growth of farmers’ markets in Kentucky, geospatial and statistical analysis of a database of 121 farmers’ markets was conducted. A statewide survey of market leaders and a case study of a single farmers’ market both identified reasons for growing support of farmers’ markets in Kentucky.
Market distribution, vendor levels, and gross sales were mapped against a backdrop of county urban classification, median household income, and education levels. Mis-folded proteins and their associated aggregates are a contributing factor in some human diseases. In this study we used the protein lysozyme as a model to define aggregation structures under denaturing conditions. Sasahara et al. (2007), Frare et al. (2009, 2006), and Rubin et al. (2008) observed conditions where heat denatured lysozyme formed fibril structures that were observed to be 8-17 nanometers in diameter under the electron microscope. Even though the crystal structure of lysozyme is known, the denatured form of this protein is still unknown. Bile acids in the small intestines of animals serve to breakdown fats and fatsoluble vitamins. Most of the bile acids are reabsorbed into the enterohepatic circulation, but approximately five percent of these bile acids pass into the large intestine. These bile acids are swiftly deconjugated by the bacterial population, and then subjected to further intestinal bacterial chemical modifications. The most significant of these modifications are 7α-dehydroxylations which form secondary bile acids (deoxycholate and lithocholate). Much research has illuminated the 7α-dehydroxylation pathway: of particular interest is the bile acid inducible operon, for which Clostridium scindens VPI 12708 serves as the model …

A survey instrument was developed to determine (a) what meals adult males ate and where these meals were eaten, (b) the level of activity of adult males in menu planning, food purchasing, and food preparation, (c) practices related to weight reduction, (d) practices related to nutrition of the family, and (e) selected demographic variables as related to nutritional practices.
