Despite over a decade of both quantitative and qualitative studies, food insecurity among US college/university students remains a pervasive problem within higher education. The purpose of this perspective piece was to highlight research gaps in the area of college food insecurity and provide rationale for the research community to focus on these gaps going forward. A group of food insecurity researchers from a variety of higher education institutions across the United States identified five thematic areas of research gaps: screening and estimates of food insecurity; longitudinal changes in food insecurity; impact of food insecurity on broader health and academic outcomes; …

In Spring 2021, the librarian presenters partnered with Laura Bauer, a Nutrition faculty member, to teach students in introductory Nutrition classes information evaluation skills. The instructor's assignment originally asked the class of non-science major students to find a recipe online that met a personal nutrition goal based on current recommendations. The assignment evolved for a class of pre-health science students into an evaluative assignment where students were asked to research a fad diet online and compare those findings with the scholarly literature, all while considering diet culture through a social justice lens. Background: Nutrition Facts labels are a low-cost informational tool with the potential for encouraging healthful purchasing and eating habits. The use of nutrition labels on packaged foods can promote healthier dietary choices; however, systematic reviews show that consumers may not frequently use nutrition labels to make food choices and do not effectively measure an appropriate serving size, leading to nutrient over-/underconsumption. Purpose: The purpose of this study was to determine whether an in-person or technology based bone health intervention improved bone health knowledge and behaviors in college-aged women. Methods: 30 college-aged women were randomly divided into three groups: personal intervention (n = 10), technological intervention (n = 10), and control (n = 10). Both intervention groups received identical information regarding the importance of bone health and the appropriate behaviors for maintaining strong bones including weight-bearing exercise, calcium consumption, and vitamin D consumption. Video-based food education and demonstration is increasingly popular as a method of reaching audiences. Meanwhile, members of Community Supported Agriculture (CSA) programs often seek help with utilizing the produce in their shares and could potentially benefit from visual food demonstration. The goal of this pilot study was to determine the effectiveness and utilization of visual food demonstrations by CSA members in St. Joseph, Minnesota. An initial online survey gauged participant interest in demonstration videos. Background A majority of the population struggles with body image everyday. However, college students/young adults seem to struggle the most. In a recent Psychology Today Body Image Survey, 56% of college-aged women and 43% of college-aged men were dissatisfied with their overall appearance. Objective To assess how accurate college-aged males and females are in estimating own body images by measuring perceived vs. actual BMI and to analyze if a participant’s nutritional background knowledge affects the accuracy of BMI prediction. The Common Ground Garden is a ministry of the Sisters of the Order of Saint Benedict, and provides CSA produce shares for 18 weeks to community members. A summer research project was conducted to evaluate the general demographics and food waste habits of members of Common Ground. Access to fresh, in-season produce is a struggle in many parts of the country, and this pilot study was designed to better understand the demographics, vegetable consumption, and food waste behaviors of the members of this particular CSA. Abstract: Risk factors for cardiovascular disease (CVD) including dyslipidemia and hypertension can develop in adolescence and increase risk of CVD in adulthood. Improved blood pressure and lipid profiles are associated with higher dietary calcium intake in older adults, but limited data exists in young adults. Purpose: Determine the relationship between dietary calcium intake and CVD risk factors in a college-age population. Methods: IRB approval was obtained. Fasting blood samples were collected from 149 college students ages 18-24. Abstract: Dehydration exceeding 2% loss of body mass can cause decreased cognitive and physical performance in endurance athletes. While many runners carry water bottles with them, most do not know their sweat rate or fluid recommendations, increasing the risk for heat-related illnesses such as heat stroke. Purpose: To assess hydration status, habits, and knowledge of collegiate cross country runners. Methods: Institutional Review Board approval was obtained and subjects completed informed consents. RESEARCH OBJECTIVE: To assess the differential effects of a mobile phone-based application (app) versus phone-based memo use on anthropometric measures, healthy eating, and physical activity behaviors in college-age women. METHODS: Participants (n=43) were randomly enrolled in a mobile app or phone-based memo group during a 6 week study. Participants in the app group were trained on proper usage of the free app, MyNetDiary, and the memo group received directions on how to journal their food and exercise activity on their phone. Addiction to highly refined foods, specifically sugar, may result in excessive caloric intake, which enhances comorbidity risks, such as obesity and cardiovascular disease. The American Heart Association recommends that women limit “added sugar” intake to 25 g per day (1). Purpose: To determine the relationship between food addiction and sugar consumption. Methods: IRB approved the study, and IT Services sent out a recruitment email to 1992 college-aged females. Participants gave their informed consent and completed two surveys: the Yale Food Addiction Scale (YFAS) (n=160) and the Automated Self-Administered 24-hour dietary recall (ASA24) (n=57). Mexico began the iodization of salt in 1960, which dramatically reduced the incidence of goiter, but in the last year the incidence of goiter tripled in the state of Jalisco, and nationally in Mexico (1,2,3). Interest in consuming unprocessed foods has led to assumptions that raw milk has health benefits over pasteurized milk. This study was designed to evaluate the belief that raw milk is nutritionally superior. Eighteen mice were randomly assigned to one of two groups: raw milk or pasteurized milk. Mice were grouped into breeding trios and given a fresh supply of milk every four hours between 7 a.m. and 11 p.m. for 55 days. Milk consumption was tracked at each feeding by measuring the amount of milk that was provided and the amount of milk that was left from the previous feeding. …

The objective of this study was to determine the effect of increased vitamin D fortification (250 IU/serving) of high-temperature, short-time (HTST)–processed 2% fat milk, UHT-processed 2% fat chocolate milk, and low-fat strawberry yogurt on the sensory characteristics and stability of vitamin D during processing and storage. Three replicates of HTST pasteurized 2% fat milk, UHT pasteurized 2% fat chocolate milk, and low-fat strawberry yogurt were manufactured. A significant risk factor for the development of heart disease appears to be oxidized low-density lipoproteins (oxLDLs). Currently there are no methods which specifically measure oxidized LDLs in serum. ELISA methods were developed which specifically detect oxLDLs and autoantibodies against oxLDLs in human serum. These sensitive assays can detect oxLDLs in concentrations as small as 50 ng/mL serum. Optimal assay conditions such as serum and antibody dilutions, as well as blocking agents and washing buffers were determined. The assays have successfully detected greater amounts of oxLDLs and autoantibodies in more concentrated serum dilutions. Ultimately these assays may be used to …

Coronary heart disease (CHD) is the leading cause of death in older women with 500,000 dying annually. Postmenopausal women have a different relative risk for CHD due to the loss of ovarian function and cessation of menses. Recent epidemiological studies indicate that 1) an increase in -tocopherol is associated with a decreased susceptibility of LDL to oxidative modification. This study examined the dietary intake of -tocopherol and retinol in a group of 32 postmenopausal women, and the correlation between dietary intake and plasma concentrations of these two vitamins. A Comparison Of Binge Eating Versus Dieting Onset In Bulimia Nervosa, Carrie Fenna

This study investigates the assumption that dietary restriction leads to the development of binge eating in culimia nervosa (BN). Bulimic women reporting an onset of binge eating prior to dieting (n=20) were compared to women reporting an onset of dieting prior to binge eating, using similar age subjects. Results suggest that onset of binge eating prior to dieting in BN is associated with earlier onset of binge eating, higher BMI, and improved response to cognitive-behavioral treatments at 6 month follow-up. The implications are that the widely held belief that dieting causes binge eating may not be relevant for a sub …
