In 1999, the FDA approved a health claim for a relationship between intake of 25 grams of soy protein per day and reduced risk of heart disease. Literature suggests that consumers are increasingly krtowledgeable about diet and disease risk factors. While gender, age, race, and family history cannot be altered, diet may be changed to decrease risks. Despite the steady improvement in the health status of Americans, Hispanics are a minority in the United States with greater prevalence of several infectious and chronic diseases and less health knowledge than the average citizen. A cross-sectional study on fasting serum and 24-hour urine samples were used to determine whether biochemical markers of bone turnover, resorption and formation, differed in a group of 50 healthy premenopausal Caucasian women eating vegan, lactoovovegetarian(LOV) and omnivorous diets.

The women, ages 20-42, had participated in a study of bone mineral density(BMD). The three groups were comparable in mean age, BMI, calorie intake, calories spent in exercise, kcal/kg body weight, protein/day, protein/kg body weight and urinary creatinine.

This study investigated the incidence of disordered eating and its relationship with acculturation, depression, and body dissatisfaction among Hispanic adolescent females. One hundred and five students enrolled at two midwestem high schools completed a Student Demographic Questionnaire, the Bidimensional Acculturation Scale for Hispanics (Marin & Gamba, 1996), the Beck Depression Inventory (Beck, Steer, & Brown, 1996), the Body Dissatisfaction Subscale of the Eating Disorder Inventory (Gamer, Olmstead, & Polivy, 1983), and the Eating Attitudes Test (Gamer, Olmstead, Bohr, & Garfinkel, 1982). Resistance to antimicrobial agents used to treat severe Campylobacter spp. gastroenteritis is increasing worldwide. We assessed the antimicrobial resistance patterns of Campylobacter spp. isolates of human and animal origin. More than half (n = 32) were resistant to sulphonamide, a feature known to be associated with the presence of integrons. Analysis of these integrons will further our understanding of Campylobacter spp. epidemiology.

Adolescents have increased nutrition needs and report frequent meal skipping and snacking, but there are few studies that examine the determinants of unhealthy eating, especially among ethnic minority groups. This study investigated dietary intake and snacking behavior among Korean-American adolescents in the Los Angeles area. We determined the relationship between dietary fat intake and overall quality of the diet as assessed by two healthy eating indices: the Healthy Eating Index (HEl) and Mean Nutrient Adequacy Ratio (MNAR). A total of 756 female adolescents, aged 13 to 18 years, from five public high schools in Antelope Valley Union High School District located in North Los Angeles County participated in this study between February 1999 and March 1999. The ethnic composition was 53.3% White/Anglo Americans, 19.3% Hispanics or Latinos and 10.2% Black/African Americans. The constructs of the Theory of Planned Behavior (attitude, subjective norm, and perceived behavioral control and their underlying beliefs) were assessed to determine the predictors of low-fat milk and regular soda consumption. A cross-sectional design with group-administered questionnaires was utilized.

Dietary habits are believed to be major determinants of risk of coronary heart disease (CHD). Studies of high and low risk populations have suggested several nutrients to be protective or hazardous against CHD. Most published work since 1984 on diet and CHD in the Adventist Health Study (AHS) population examined either foods or food groups. This study investigated ten nutrients as exposure variables and their relationship to CHD risk. Birth records show that San Bernardino County has the highest black infant mortality rate of the 16 counties in California with the largest proportion of African-Americans births. Although total infant deaths in San Bernardino County had fallen to 8.6 per 1,000 live births by 1992, the infant mortality rate among the black population of the county was close to two times higher at 16.8 per 1,000. This is the first study to address the high infant mortality rate among blacks in San Bernardino County. Factors which may affect the black infant mortality rate were examined.

The relationship between moderate exercise training (five 45 min sessions/week, brisk walking at 62+2% V0_2max for 15 weeks) and changes in nutrient intake was investigated in a group of 36 sedentary, mildly obese women, conducted using a two (exercise, EX and nonexercise, NEX groups) x three (baseline, six-, 15-week testing sessions) factorial design, with data analyzed using repeated measures ANOVA. The pattern of change over time between groups for kilocalorie intake tended to be different between groups [F(2,68)=2.50,p=0.089] with the EX group experiencing a significant decrease versus baseline by 15 weeks. Concerns have been expressed for the ability of some vegetarian diets to support normal growth of children. Animal protein or meat intake showed a positive relationship to attained height in children from developing countries. In this study, the relationship between meat intake/vegetarian status and physical growth was investigated in children living in California.

Height and weight were collected on 2,272 Caucasian children aged 6-18 years attending Seventh-day Adventist (SDA) or public schools who participated in a two year longitudinal study. There is evidence that specific nutrients may modify hormonal balance and contribute to breast cancer etiology. To investigate the relationship between dietary nutrients and plasma reproductive hormones and to determine hormone-nutrient interrelationships, we measured plasma estrogens, androgens. progesterone and prolactin levels in 10 premenopausal Seventh-day Adventist (SDA) vegetarian and 10 premenopausal SDA nonvegetarian women. Over three days in each of three consecutive months. diet records and fasting midluteal blood samples were collected. The zinc status of twelve lacto-ovo-vegetariah pregnant women and seventeen non-vegetarian pregnant women was evaluated. Zinc intakes were calculated from three-day dietary records and twenty-four hour dietary histories. Plasma zinc levels were drawn during the last trimester of pregnancy and approximately ten weeks postpartum. Gestational age at birth, birthweight, and APGAR scores of the infants born were obtained from the medical charts. Dietary zinc intakes for the vegetarians (10.5 ± 4.0 mg) did not differ significantly from the intakes of the non-vegetarians (10.9 ± 3.0 mg). Pantothenic acid nutritional status was evaluated in a cohort of twenty-nine Caucasian pregnant women, aged 20-35, during their third trimester of pregnancy, at two-weeks postpartum and at three months postpartum. Seventeen non-pregnant, non-lactating women who had similar demographic backgrounds as the pregnant women were selected as a control group and followed the same experimental schedule as the pregnant women. A fasting blood sample, two days 24-h urine specimens and diet record were obtained for each of two days from each subject at each period.
