Consumer Knowledge, Perception And Attitudes Of Unlabeled Genetically Modified Foods Of An Educated Population In The State Of Kentucky, Aldious A. Waite
Masters Theses & Specialist Projects
Genetically modified (GM) foods technology is a novel idea for improving food and crop production, but the supposed health risk of GM foods, such as possible negative long-term health effects to humans, animals and the environment, have provoked the European Union to create assessment protocols to monitor and regulate the safety of GM foods and crops. This research investigates the perception and attitudes of unlabeled GM foods of the WKU faculty and staff. A survey was administered via WKU Qualtrics, and chi-square tests were performed to see how the benefits and disadvantages of GM foods may affect the purchasing decisions …

More and more universities are pursuing interdisciplinary academic activities that span across department and college boundaries. Administrative structures to facilitate such programs are difficult to establish within traditional university frameworks consisting of disciplinary departments and colleges. Often interdisciplinary programs are housed in a traditional disciplinary department or college, or in a standalone center reporting to a college dean or the provost. The difficulty of these structures is obtaining broad buy-in from faculty across departments and having disciplinary degree programs include interdisciplinary coursework.
To overcome the difficulties described above, an innovative shared department structure that fosters collaborations to advance interdisciplinary education …

Faculty Research, Scholarly, and Creative Activity
Background:
Electronic word-of-mouth on social network sites has been used successfully in marketing. In social marketing, electronic word-of-mouth about products as health behaviors has the potential to be more effective and reach more young adults than health education through traditional mass media. However, little is known about what motivates people to actively initiate electronic word-of-mouth about health behaviors on their personal pages or profiles on social network sites, thus potentially reaching all their contacts on those sites.
Objective:
This study filled the gap by applying a marketing theoretical model to explore the factors associated with electronic word-of-mouth on social network …

Red Grain Sorghum Whole Kernel Crude Lipid Protects Energy Metabolism And Short Chain Fatty Acid Profile In A Hamster Model To Minimize Intestinal Stress Caused By A High Fat Diet, Haowen Qiu
Department of Nutrition and Health Sciences: Dissertations, Theses, and Student Research
Multiple studies have shown throughout the past 10+ years that grain sorghum (GS) lipid extract protects against high plasma and hepatic cholesterol and, to a lesser degree, positively modulate the gut microbiota in response to a high fat (HF) diet. However, the impact of GS lipids on intestinal stress induced by such a diet remains largely unknown. The objective of this project was to determine the ability of GS crude lipid (GS-CL) obtained from the surface of GS whole kernel to protect energy metabolism and short chain fatty acid (SCFA) profile produced by the gut microbiome that may be negatively …

Optimal Nutrition For Endurance Exercise: A Systematic Review, Sarah E. Andrus Ms, Bruce W. Andrus Md Ms
Dartmouth Scholarship
Introduction
As fatigue in endurance events correlates with depletion of muscle glycogen, the traditional approach to nutritional support has been carbohydrate loading. However, there has been recent interest in improving athletic endurance performance by novel diets in the days to weeks prior to endurance events, the pre-event meal, and during exercise.
Methods
We searched PubMed and SCOPUS for randomized trials published from 1992-2017 with a primary endpoint of endurance performance. We identified 407 citations which were examined against our inclusion criteria of randomization or crossover allocation to diet and for which a primary outcome was endurance performance.

Sugar Price Supports And Taxation: A Public Health Policy Paradox, Abby Dilk, Dennis Savaiano

Domestic US sugar production has been protected by government policy for the past 82 years, resulting in elevated domestic prices and an estimated annual (2013) $1.4 billion dollar “tax” on consumers. These elevated prices and the simultaneous federal support for domestic corn production have ensured a strong market for high-fructose corn syrup. Americans have dramatically increased their consumption of caloric sweeteners during the same period. Consumption of “empty” calories (ie, foods with low-nutrient/high-caloric density)—sugar and high-fructose corn syrup being the primary sources—is considered by most public health experts to be a key contributing factor to the rise in obesity. The field of medicine research is embroiled in a battle against aging. Particular focus is on the extension of lifespan and health-span. Lifespan duration is affected by many factors, one of which is the maintenance of the intestines of the organism. Homeostasis of the intestines is controlled by the regulation of intestine cell apoptosis and intestine cell proliferation. My research explores the role of two protein subunits found in a complex which may have possible functions in the regulation of these processes. The overall complex is formed from six subunit proteins, some of which are known to assist in other …

BACKGROUND & AIMS: Total parenteral nutrition (TPN), a crucial treatment for patients who cannot receive enteral nutrition, is associated with mucosal atrophy, barrier dysfunction, and infectious complications. Glucagon-like peptide-2 (GLP-2) and epidermal growth factor (EGF) improve intestinal epithelial cell (IEC) responses and attenuate mucosal atrophy in several TPN models. However, it remains unclear whether these 2 factors use distinct or overlapping signaling pathways to improve IEC responses. We investigated the interaction of GLP-2 and EGF signaling in a mouse TPN model and in patients deprived of enteral nutrition.
METHODS: Adult C57BL/6J, IEC-Egfrknock out (KO) and IEC-pik3r1KO mice receiving …

Dietary intake is related to 4 major causes of death and may be influenced by the food environment, which includes the $64.3 billion revenue-producing vending machine industry. Most machines contain low nutrient energy dense foods and beverages associated with poor dietary choices, while healthier vending initiatives are seen as a strategy to increase access to healthy foods. Elementary and secondary schools have increasingly adopted healthier vending standards in response to federal child nutrition regulation and student wellness policy implementation, however an association between vending and diet has not been made using a large sample of nationally representative data. The purpose …
