Effect Of Grain Sorghum Polyphenols On Fecal Fermentation, Danielle Marie Ashley
Effect Of Grain Sorghum Polyphenols On Fecal Fermentation, Danielle Marie Ashley
Graduate Theses and Dissertations
Obesity is an increasing epidemic which during 2015-2016 afflicted 39.8% of adults and 18.5% of youth in the United States. Not only can obesity affect quality of life, but it can lead to life-threatening diseases such as type 2 diabetes, heart disease, stroke, and some cancers. Animal and human research have demonstrated a pattern of gut microbiota perturbation in overweight and obesity, characterized by a reduction of beneficial bacterial species and increase in harmful species. Diet has been established as a contributing factor in gut ecology, and foods including fiber, resistant starch, and polyphenols have been found to both enhance …

Characterizing the stability of the gut microbiome is important to exploit it as a therapeutic target and diagnostic biomarker. We metagenomically and metatranscriptomically sequenced the faecal microbiomes of 308 participants in the Health Professionals Follow-Up Study. Participants provided four stool samples—one pair collected 24–72 h apart and a second pair ~6 months later. Within-person taxonomic and functional variation was consistently lower than between-person variation over time. In contrast, metatranscriptomic profiles were comparably variable within and between subjects due to higher within-subject longitudinal variation. Metagenomic instability accounted for ~74% of corresponding metatranscriptomic instability. The rest was probably attributable to sources such …

The overall objectives of this study were to deliver entrapped Lactobacillus Plantarum NCIMB 8826 with maize-legume fortified complementary weaning food to reduce diarrhea and improve the gut microbiota. Both in vitro and in vivo models were used in this study and a mouse (C57BL/6 mice …
Radical Social Ecology As Deep Pragmatism: A Call To The Abolition Of Systemic Dissonance And The Minimization Of Entropic Chaos, Arielle Brender
Radical Social Ecology As Deep Pragmatism: A Call To The Abolition Of Systemic Dissonance And The Minimization Of Entropic Chaos, Arielle Brender
Student Theses 2015-Present
This paper aims to shed light on the dissonance caused by the superimposition of Dominant Human Systems on Natural Systems. I highlight the synthetic nature of Dominant Human Systems as egoic and linguistic phenomenon manufactured by a mere portion of the human population, which renders them inherently oppressive unto peoples and landscapes whose wisdom were barred from the design process. In pursuing a radical pragmatic approach to mending the simultaneous oppression and destruction of the human being and the earth, I highlight the necessity of minimizing entropic chaos caused by excess energy expenditure, an essential feature of systems that aim …
The Effects Of Dietary Nitrate Supplementation On Swimming Performance In Collegiate Swimmers 2018, Christopher Daniel Mosconi
The Effects Of Dietary Nitrate Supplementation On Swimming Performance In Collegiate Swimmers 2018, Christopher Daniel Mosconi
Master's Theses
The desire for performance enhancement is a common goal amongst athletes. Recently a number of studies have reported various performance enhancing effects of dietary nitrate (NO3-) via beetroot juice (BRJ) supplementation. Research has indicated that the various performance enhancing effects of BRJ can be attributed to a decrease resting systolic blood pressure (SBP), diastolic blood pressure (DBP), and submaximal volume of oxygen consumption (VO2), while increasing vasodilation and mitochondrial efficiency. Purpose: The purpose of this study was to investigate whether BRJ supplementation improves swimming performance in collegiate level swimmers. Methods: Eight collegiate trained swimmers underwent a double-blind 5-day chronic supplementation …
Effects Of Mitochondrial Nadp+-Dependent Isocitrate Dehydrogenase Deficiency On Fructose-Induced Obesity In Mice, Allison Michelle Montalbano, Kaleigh Elizabeth Beane
Effects Of Mitochondrial Nadp+-Dependent Isocitrate Dehydrogenase Deficiency On Fructose-Induced Obesity In Mice, Allison Michelle Montalbano, Kaleigh Elizabeth Beane
Human Nutrition and Hospitality Management Undergraduate Honors Theses
Obesity prevalence in the United States continues to increase and is associated with health consequences such as type 2 diabetes, hypertension, atherosclerosis, and hyperlipidemia. Among many contributing factors to obesity, fructose may be one of the major reasons as it disrupts the antioxidant system thereby resulting in an accumulation of reactive oxidative species and leading to obese conditions. The enzyme, isocitrate dehydrogenase 2 (IDH2), reduces nicotinamide adenine dinucleotide phosphate from the TCA Cycle, hence might be implicated with not only energy metabolism but also cellular redox homeostasis. Therefore, the hypothesis was that IDH2 deficiency in mice would exacerbate hepatic lipid …

The rejection of roasted almonds by consumers is often due to the development of rancidity or textural changes. Dry-roasted ‘Nonpareil’ almonds were stored in polypropylene bags (PPB) in environmental chambers at 15, 25, 35 °C and 50 or 65% relative humidity (RH) or at 4 °C without RH control, and in high barrier bags (HBB) at 4, 15, 25, and 35 °C without RH control. Descriptive and consumer sensory testing as well as instrumental texture analyses were conducted on the samples over 16 months. Of the 11 samples, four (PPB/25 °C/65% RH, PPB/35 °C/50% RH, PPB/35 °C/65% RH, and HBB/35 …
The Effect Of Breakfast On Energy Metabolism, Appetite, And Food Intake In Young Versus Older Men, Allie Murphy
The Effect Of Breakfast On Energy Metabolism, Appetite, And Food Intake In Young Versus Older Men, Allie Murphy
Human Nutrition and Hospitality Management Undergraduate Honors Theses
As life expectancy continues to rise, it is important to consider optimal nutrition recommendations to improve health outcomes, quality of life, and physical independence in older adults. Previous studies have focused on the impact of breakfast on postprandial appetite in younger adults. Research on the effects of breakfast on appetite in older adults is limited. Several studies have identified protein as a key nutrient for older adults. Protein has been shown to increase satiety for longer periods of time and decrease cravings later in the day when compared to high carbohydrate meals. However, more research is needed to determine the …
Effect Of High Intensity Ultrasound On The Crystallization Behavior Of Interesterified Fats, Jeta Vijay Kadamne
Effect Of High Intensity Ultrasound On The Crystallization Behavior Of Interesterified Fats, Jeta Vijay Kadamne
All Graduate Theses and Dissertations, Spring 1920 to Summer 2023
The process of partial hydrogenation produces trans fats and the fats that undergo this process are called partially hydrogenated fats (PHF). Clinical studies have shown a strong association between PHF and coronary heart diseases. In 2015 The U.S. Food and Drug Administration removed the Generally recognized as safe or "GRAS" status of PHF. These fats were used in confectionary, margarines, shortenings, doughnuts, cookies, cakes, etc. The PHF serve a function in food by providing a higher shelf life and a desired harder structure due to their higher melting point. Hence, the food industry is currently looking for PHF alternatives which …

Characterization Of Lactose Fatty Acid Esters For Their Microbial Growth Inhibitory Activity And Emulsification Properties, Seung-Min Lee
All Graduate Theses and Dissertations, Spring 1920 to Summer 2023
Sugar esters, substances made from bonding fatty acid tails to a sugar head, can play a number of key roles in food systems from antimicrobial agents to emulsifiers. These unique and very useful properties result from their water-loving and water-avoiding ends. Lactose, a sugar found in milk, based esters are important, as they are environmentally friendly and inexpensive, however, they are not very well understood. I created four different types of lactose esters: lactose monooctanoate (LMO), lactose monodecanoate (LMD), lactose monolaurate (LML) and lactose monomyristate (LMM), and then compared them to each other to see which would be the best …
An Assessment Of Daily Plain Water Intake Level And Its Association With Total Energy Intake Among College Students, Maria Alanazi
An Assessment Of Daily Plain Water Intake Level And Its Association With Total Energy Intake Among College Students, Maria Alanazi
Theses, Dissertations and Culminating Projects
Water is an essential nutrient for humans with several vital roles including maintaining body functions, temperature and preventing dehydration. Nevertheless, many population groups in the United States do not drink the recommended amount of water on a daily basis. The literature notes that drinking water is associated with better dietary practices including reduced sugar-sweetened beverages consumption, but few studies investigated the impact of drinking water on the total energy (calories) intake. In this study, an assessment of the intake of both plain water (pure water) and total water (water from pure water, beverages, and foods) is performed, and the intake …

The Non-Additive Effect Of Food And Wine In The Spanish Diet On Total Antioxidant Capacity Of The Spanish Mediterranean Diet, Carol Majkrzak
Theses, Dissertations and Culminating Projects
With an increase in mortality rates related to obesity, cardiovascular disease, heart disease, and other related diseases, a greater understanding of the Mediterranean diet may be important to dietary treatment of these illnesses and comorbidities. While the foods in the Mediterranean diet have been studied in depth for their great health benefits, the potential role of wine in this diet is under examined. Interest in wine and its health benefits has increased within the past decade. While wine is a common component of the Mediterranean diet, very few studies have looked at the possible effects and outcomes of consuming wine …

Antiproliferative Activity Of Carotenoids, Phenolic Compounds, And Volatile Terpenoids In Carrots (Daucus Carota L.), Brittany Frederick
Graduate Theses and Dissertations
Epidemiological studies have shown an association between high carrot consumption and low prevalence of cancer. This observation has been thought to be attributed to carrot carotenoids. Despite this, various intervention trials have displayed no changes in incidence or increased incidence of cancer with carotenoid supplementation. It is possible that carrot phenolics are responsible for this association, though this has not been widely accepted. Volatile terpenoids from carrots have not been studied in this regard. Therefore, the primary objective of this study was to compare the antiproliferative effects of carotenoids, phenolics, and volatile terpenoids extracted from carrots on Caco-2 colon cancer …
How To Be The Perfect Asian Wife!, Sophia Hill
How To Be The Perfect Asian Wife!, Sophia Hill
Art and Art History Honors Projects
“How to be the Perfect Asian Wife” critiques exploitative power systems that assault female bodies of color in intersectional ways. This work explores strategies of healing and resistance through inserting one’s own narrative of flourishing rather than surviving, while reflecting violent realities. Three large drawings mimic pervasive advertisement language and presentation reflecting the oppressive strategies used to contain women of color. Created with charcoal, watercolor, and ink, these 'advertisements' contrast with an interactive rice bag filled with comics of my everyday experiences. These documentations compel viewers to reflect on their own participation in systems of power.

Global agriculture is beset by numerous challenges which must be surmounted to feed a developing world, from combating climate change to the cultivation of sustainable food products. This, in addition to protein and nutrient deficiencies in the developing world, makes considering alternative protein sources, such as a crickets, an attractive option. Crickets use a fraction of the land and water that protein sources like beef cattle do, and can be cultivated in urban environments in stacked boxes. This research investigation aims to quantify the nutrient mineral content (Iron, Sodium, Potassium, Calcium, and Magnesium) of two cricket species (Acheta domesticus …

Whole Tart Cherry Improves Disease Activity Index In Rat Model Of Dextran Sulfate Solution – Induced Ulcerative Colitis By Downregulating The Janus 1 And Janus 3 Kinases And Tnf - Alpha, Johana Alexandra Coronel
LSU Master's Theses
Ulcerative colitis (UC) is a disabling inflammatory bowel disease. UC is characterized by chronic, relapsing inflammation of the colon and rectum. Current treatments such as monoclonal antibodies against TNF-α, IL-6, IL-12/p40, adhesion molecules, Janus kinases (JAK) inhibitors have side effects or lose their effects over time. Alternative approaches with fewer side effects for patients are needed. Montmorency tart cherries (Prunus cerasus) are a good source of anti-inflammatory flavonoids. We hypothesized that regular consumption whole tart cherry (TC) standardized to its major anthocyanin content, namely cyanidin-3-glucosyl-rutinoside, would be effective in reducing inflammation in UC. The aim of this research was to …

Abstract: Raw almonds are a major commodity, yet much is unknown about how storage conditions determine their shelf life. The storage stability, as measured by consumer assessments and chemical measures, of raw almonds was determined for samples stored in cardboard boxes and polypropylene packaging for 2 years at 4, 15, 25, and 35 °C, and at 50% and 65% relative humidity (RH). Samples stored in unlined cartons always failed (>25% rejection) before their counterparts stored in polypropylene bags under identical environmental conditions. Models determined that polypropylene packaging (as opposed to unlined cardboard cartons) extended the time until sample rejection …

Significant research has been devoted to analyzing community gardens, including their benefits and problems. This article contributes to debates about community gardens by using concepts from feminist geography and food justice research to reflect upon the challenges and possibilities of community gardening in small, peripheral cities with large immigrant populations. We argue that these concepts provide a useful framework to enact ecofeminist visions through community gardens, especially in places dominated by immigrant populations that are particularly marginalized in the present political era. Our case study garden, Raíces Del Sur, was located in the City of Passaic, a low-income, post-industrial urban …
Obesity, Noah Rhodes

Global Issues in Public Health
Obesity is a worldwide issue that can be defined as a non-communicable condition which means that it is non-infectious and non-transmissible and it is defined as having a BMI over 30 even though BMI doesn’t account for the person’s muscle mass which causes some athletes to be considered obese just because they weigh a lot for their height. Diagnosing obesity can be a long process which includes a health history being taken, a general physical exam, calculation of BMI, and measuring waist circumference. Diagnosis of obesity also involves checking for problems such as high blood pressure, variation of cholesterol levels …

Global Issues in Public Health
Food insecurity is a global issue and has caused struggles to millions of people, specifically in the United States. This environmental issue involves not having the resources to obtain adequate food supply. The economic and social influences that affect food insecurity leave vulnerable populations, such as low-income families and minority races, at a greater disadvantage. This issue causes serious health complications to arise too, the most common being diabetes. The increased risk of diabetes due to food insecurity has been studied on several occasions and the results all show the correlation, lack of food security increases the risk of diabetes. …
