As requirements for entry-level dietitians advance to the master’s degree level, the Accreditation Council for Education in Nutrition and Dietetics has published a Future Education Model (FEM). At present, FEM utilizes Competency-Based Education (CBE) for optional program implementation at early adopter demonstration sites. A limited number of CBE programs exist within the field of dietetics, and there is little published literature on its use in this arena. Multilingual Zambia - Language Issues In Primary/Secondary Schools Of The Eastern/Southern Provinces, Kenzie Steiner

NUTR/GLST 498b: Global Research Experiences in Nutrition and Health

Introduction: Zambia is a multilingual country that uses 8 different languages for instruction including English and 7 other indigenous languages.

Methods: Survey research conducted between May-June 2022 on 6-7th graders within 9 Zambian schools. Classroom observations made and teachers interviewed.

Results: In Eastern and Southern Provinces, Zambian teachers speak an average of 5 languages while students speak an average of 2. Both teachers and students say English remains the most important language followed by first languages.

Conclusion: Continued research on language-in-education policies and impacts on student performance must be conducted if “One Zambia, One Nation” is meant to promote all …

The Academy of Nutrition and Dietetics is currently promoting the advancement of cultural humility as a means for nutritional professionals to better appreciate the lived experience and identities of others as well as the power dynamics that create health inequalities. At the same time, the Academy has struggled to advance services to underserved populations such as those with Intellectual and Developmental Disabilities (IDD) and autism spectrum disorder. CBH is a comprehensive nutrition curriculum designed to teach adult SNAP-Ed participants how to eat well and be active on a budget. CBH combines nutrition and physical activity recommendations from United States Department of Agriculture (USDA). Each lesson has three components: a nutrition topic based on the current Dietary Guidelines for Americans, a physical activity discussion based on USDA recommendations, and a Create recipe demonstration and sample. The components are woven together in eight lessons that are designed to keep participants engaged, while actively learning the skills needed to create a healthier lifestyle.

Introduction: Nutrition professionals face implementation challenges due to their lack of knowledge to incorporate D&I science into intervention design. To improve intervention outcomes, nutrition professionals must be trained in D&I science, which are currently absent in the field.

Aims: To identify and assess nutrition educators and practitioners perceived motivations, self-efficacy, and attitudes in using D&I science to inform the educational design and strategies of a nutrition-specific D&I curriculum for nutrition educators. The purpose of this pragmatic mixed-methods study was to identify the factors that impact a nutrition professional’s preceptorship decision and potential solutions to combat preceptor shortages within accredited nutrition and dietetics programs. Homan’s social exchange theory provided the theoretical framework that if perceived costs of preceptorship outweigh the perceived benefits, then the activity will cease.

Phase one of the study included an online mixed-methods questionnaire. Phase two included a qualitative focus group and interview with self-identified volunteers from phase one. Quantitative analysis through SPSS included descriptive statistics (means and standard deviations) and inferential statistics (one-way ANOVA). Qualitative data for both …

The prevalence of childhood obesity in the United States has more than tripled over the last four decades from 5 percent in 1978 to 18.5 percent in 2016, and according to the Mississippi Obesity Action Plan, 40.4% of Mississippi elementary school children (grades K-5) were either overweight or obese. Some reports have suggested that Mississippi’s overall obesity rate could reach 66.7% by 2030. Through the ROCKETS Project in-school sessions, youth with disabilities are provided additional opportunities to belong to a larger group of youth through the Georgia 4-H Program. The rate of overweight and obesity among adolescents aged 12-19 years has more than tripled since 1980, and disproportionately impacts low-income and marginalized populations. Reduction in adolescent obesity rates may result in decreased health risks, decrease healthcare costs, and increased quality of life. Effective intervention methods for adolescent participants have incorporated nutrition knowledge and culinary skill building into afterschool programs. This study examines whether building knowledge, skills, and confidence through a culinary intervention can improve adolescent participants’ choices of healthful foods through increased fruit and vegetable intake.

The “Healthy Me, Healthy Earth” program was an eight week after-school program for first through fourth graders at the Woodman Park Elementary School in Dover, NH conducted during the Fall of 2017. The program used a cost-effective, food system-based curriculum to promote health and environmental literacy to students who participated. An interdisciplinary approach was used to assess the knowledge, attitude, and behavioral changes of the students. There was a noted improvement in comprehension of food system concepts.

School gardens have existed since the late nineteenth century and today are becoming increasingly popular in many parts of the world, including where I studied in Maine and Australia (AUS). Multiple organizations support school gardens in Maine, including the Maine School Garden Network, which has over 125 registered school gardens. In AUS, the Stephanie Alexander Kitchen Garden Foundation primarily supports the school garden movement and has over 800 registered school gardens. This thesis discusses the importance of school gardens. First, two current environmental and societal problems are highlighted: the industrialized food system and what Richard Louv has termed, "Nature Deficit Disorder," in children. School gardens are then presented as an effective tool that can address and remedy such issues. Lastly, a how-to manual for implementing such projects in schools is provided as well as a few sample lesson plans to be used in conjunction with the garden in each subject across the curriculum.

Growing an edible garden in a poverty-affected school serves multiple purposes. It provides a way to increase parent involvement at the school while increasing student knowledge of nutrition. This comprehensive plan prepares a school to implement a school garden run solely by teacher, students, parents, and community volunteers. The potential results are that parents will get involved at their child's school while the students can learn about nutrition along with their families.
