Childhood obesity in American children has tripled in the last 20 years, and 85% of current healthcare spending is linked to diet-related diseases. The consumption of highly processed foods is linked to these trends and makes up more than half of an average American youths’ diet. Reducing the consumption of highly processed foods in children’s diets can be addressed, in part, by addressing childhood neophobia (willingness to try new foods) associated with whole foods like fruits and vegetables. Ever since the eighteenth century, experts have tried to tell farmers how to farm. The agricultural enlightenment in Europe marked the beginning of a long arc of new experts aiming to change agricultural knowledge and practice. This dissertation analyzes the pivotal period in the late nineteenth and early twentieth century in Germany and the United States when scientists, improvers, and market agents began to develop comprehensive ways to communicate agricultural innovation to farmers. Malnutrition in some form impacts nearly one-third of the global population. Across the world, countries are undergoing the Үutrition transitionӠfrom traditional and largely unprocessed diets to Western-style, energy-dense diets. At the same time, rates of overweight and obesity and diet-related chronic diseases continue to climb. Ultra-processed foods (UPF), sugar-sweetened beverages (SSB), and vegetable oils are three of the foods driving the nutrition transition. The purpose of this study is to determine if a optimal time of year exists for beef producers to have cows give birth in southwest Missouri for maximal net returns from calf sales and increased cow reproductive performance. To make this determination, data were collected which included year-round forage nutritive value, calf pre-weaning growth, cow energy efficiency and reproductive performance, and income and cost values. Cow and calf field data were gathered for the 2014-2018 production years at Missouri State University’s Leo Journagan Ranch. In Sub-Saharan African countries, soil fertility is low due to unsustainable agricultural practices and little to no access to chemical fertilizer. Poor yields have resulted in many of these countries struggling to produce enough food to feed their growing populations. Human urine has been used as an effective, low-cost alternative to chemical fertilizers in greenhouse and plot trials on a variety of vegetables, but its effects on elemental grain composition in cereal crops are largely unknown. Here we tested whether diluted human urine applied as a fertilizer can increase maize crop growth, yield and nutritional content on small family-owned plots. …

The objective is to determine the effect of reducing nitrogen input through feeding low rumen degradable protein (RDP) and rumen undegradable protein (RUP) proportions on milk production, nitrogen efficiency and metabolism in heat-stressed cows. Forty-eight mid-lactating, Holstein cows were assigned to treatments using a randomized block design in a 2x2 factorial arrangement of treatments (n = 12/treatment). Treatments included two levels of RDP (10 and 8%) and two levels of RUP (8 and 6%). This thesis seeks to explain the relationship between a household's choice of fuel and the health and nutrition outcomes of children below the age of 5 in Uganda. The first objective is to examine the association between the choice of fuel and the incidence of acute respiratory infection (ARI). The second objective is to measure the relationship between choice of fuel, ARI and nutrition outcomes of children. ^ I use data from the 2006 and 2011 Uganda Demographic and Health Surveys (UDHS). This study examines models of community gardens and urban farms and determined a successful hybrid model for future implementation at the Huerta del Valle Community Garden. This was accomplished through analyzing the unique benefits and drawbacks of community gardens and urban farms as defined by the author, and then determining the components of each model that would maximize Huerta del Valle’s social and economic potential.
