Stigmasterol has been studied for its numerous biological effects on various metabolic diseases, but its potential role as a ubiquitous biomolecule in the plant kingdom is still in its infancy. Efficient utilization of stigmasterol’s properties, such as antimicrobial, antioxidant, and self-assembly, is necessary for the food industry to effectively prevent microbial growth in food., in addition, to delaying rancidity by slowing down lipid oxidation. Pomegranate cultivation has spread to various parts of the world. Pomegranate has been grown almost anywhere in the world, mostly in Iran, India, China, Turkey and the United States. ‘Hicaznar’, ‘Katina’ and ‘Suruç’ pomegranate varieties were used as materials in this study. Analyses of antioxidants, sugars, anthocyanins, organic acids, and colourless phenolic compounds in the juices of these fruits were performed by HPLC and DPPH methods. In this study, the effects of 1-methylcyclopropene (1-MCP) treatment on the antioxidant enzymes and fruit quality parameters of baby squash (Cucurbita pepo L., cv. Soleil F1 and İskender F1) during cold storage was investigated. After being freshly harvested, the İskender F1 (green-skinned) and Soleil F1 (yellow-skinned) baby squash were treated with 250 and 500 ppb concentrations of 1-MCP and stored at 10 °C for 14 days. The 250 ppb 1-MCP treatment suppressed the loss of total soluble solid, ascorbic acid, total phenolic, and total flavonoid contents during storage in the Soleil F1 squash. The phytochemical influence of rootstocks on the Hacıhaliloğlu apricot cultivar was examined in this study. Myrobolan 29-C, Myrobolan GF-31, Marianna 2624, Pixy, and Tokaloğlu rootstocks were used and organic acid, sugars, vitamin C, total antioxidant capacity, and phenolic compounds were identified. The highest phenolic compounds and antioxidant capacity were observed in Tokaloğlu rootstock. While Myrobolan GF-31 stood out in terms of organic acids and vitamin C, Pixy stood out in terms of sugar. The highest sugar content (sucrose) was recorded as 24.178 mg 100 g-1 in 'Pixy'. In this study, the effects of cooking and the addition of extra virgin olive oil on the in vitro bioaccessibility of carotenoids in tomato sauce were evaluated. The results indicated that total antioxidant activity, α-tocopherol, lycopene, β-carotene, lutein, and chlorophyll a contents were positively affected by the combination of cooking and addition of extra virgin olive oil. Moreover, after in vitro digestion, for intestinal phase, lycopene and Β-carotene were observed in all samples, whereas α-tocopherol and chlorophyll a were not detected in any of the samples. Lycopene (≈8.5-fold) and β -carotene (≈5-fold) were significantly improved (P < 0.05) by the effect of cooking and addition of extra virgin olive oil to the samples compared to control tomato sauce (without oil and cooking).

The main objective of this study is to investigate three equalized batches of a wild Mentha longifolia (ML) population from northern Hungary for extractability by gentle ultrasonic extraction, antioxidant activity, and phenolic constituents. This is the first analytical investigation in a Hungarian population of this species. Antioxidant properties of ML extracts were evaluated with DPPH, photochemiluminescence-O2-. scavenging assay, FRAP, and total polyphenol measurements. HPLC-DAD determination was performed for the main phenolic constituents. The extracts are medium or strong antioxidants in DPPH and FRAP assays and show strong O2-? scavenging capacity. Ten different Persian walnut cultivars were examined for their compositional data, including eight Hungarian and two introduced varieties. Oil content and fatty acid composition were determined, as well as oxidative stability (indicated by induction time). Antioxidative capacity, total polyphenol measurements, and individual phenolic compounds were also determined. Not only dry samples but fresh and stored samples were included in this study. Large differences were found among the varieties within these parameters, for example in oxidative stability, which contributes to antioxidative capacity. Blackberry is commonly used both in the fresh and the processing market. In the present study antioxidant capacity, organic acids, phenolic compounds, vitamin C, and sugars content of blackberry cultivars grown in the east of Turkey were determined. Phenolic compounds, organic acids, vitamin C, and sugars were determined by HPLC. Antioxidant capacity was determined by spectrophotometric methods. The cultivar Cherokee had the highest antioxidant capacity (48.900 μmol TE g-1), and the cultivar Jumbo had the lowest antioxidant capacity (30.855 μmol TE g-1). This study aimed to determine the antioxidant capacity; the total phenolic, total carotenoid, sugar, and ascorbic acid contents; and some pomological characteristics of Citrus species (Citrus reticulata, Citrus sinensis, and Citrus paradisi) and mandarin (Citrus reticulata) and their new hybrids developed for yield at the Alata Horticultural Research Institute in Mersin, Turkey. Black grape and sour cherry are high in phenolic substances and anthocyanin compounds, which are important for human health. Adding black grape and sour cherry fruit syrups into Turkish delight (lokum) could make the product healthier. While the highest antioxidant activity (AA) was found in the products produced with 7.5% black grape syrup (BGS) and sour cherry fruit syrup (SCS), the lowest AA was obtained from the control sample. The present study was carried out to determine the effects of methyl jasmonate (MeJA) treatments on the fruit peel color parameters, anthocyanin content, ethylene biosynthesis, phenolic content, and antioxidant capacity of Braeburn apples. Experimental trees were treated with 1120, 2240, or 4480 mg L-1 MeJA at 1- and 2-week intervals between the 105th and 175th days of growth after full bloom. L* and hue decreased linearly with increasing MeJA concentrations in both experimental years. This study aimed to determine the physicochemical properties of the green tea powders produced from 2 different Turkish tea [Camellia sinensis (L.) O.Kuntze] clones (Derepazarı 7 and Fener) grown under different shade levels and harvested during 2 consecutive shooting periods. Moisture, ash, crude fiber, and total phenolic contents of the green tea powders were determined based on the experimental factors. Products were also evaluated for their water activity, bulk density, particle size, color, extraction yield, and antioxidant activity.
