Outbreaks of foodborne illness due to fresh produce are a continued threat to both the publichealth and the economy in the United States. Though there are many factors which influence the perpetuation of foodborne pathogens, the inability of the food industry to curtail this issue indicates systemic failure of interventions aimed at improving food safety practices. In this dissertation, we detail the efforts made over the past few decades to provide training to food producers and food handlers as well as recommendations that have been made for improvement based on these studies. Our understanding of the science of anthropogenic climate change and its immediate and indirect impacts has grown within the last decade.Alongside anincrease in concern for the inequities within the industrialized food system, climate change is impacting agriculture and the communities that depend on it in myriad ways. Students are exposed to food concepts in agriculture-based career technical education (CTE) courses which provide a gateway for students to become more aware of food science career pathways. Professional development for Mississippi (MS) CTE teachers is needed to effectively implement food science-based instruction since there is not a food science curriculum framework adopted in MS. The objective of this study was to assess a food science professional development training for MS CTE teachers that would increase their self-perceived knowledge of food science, self-perceived ability to conduct food science skills, and their self-efficacy to implement food science-based instruction. About a third of the food produced annually is wasted. Food waste recycling can be a way to close the loop and attain a more sustainable food system, however, the system must be carefully monitored and managed to avoid the introduction and build-up of contaminants. To study the potential presence of contaminants in food waste, source-separated food waste was collected and screened for five classes of contaminants (physical contaminants, heavy metals, halogenated organic contaminants, pathogens, and antibiotic resistance genes) from two separate regulatory environments (voluntary vs mandated food separation). “Insomniac of the Soil” is a homage to a landscape that has deeply informed Sarah Golibart's life and her artistic voice – the tidewater flatlands of Virginia’s Chesapeake Bay peninsula where her family lives and where Golibart has worked on farms since high school. Both her poems and essays are earthy, imagistic, and grounded – quite literally – in the soil as well as in a sensibility of ecological ethics and sustainability. “Insomniac of the Soil” is also a love song to the fervent and fallow cycles of the soil.

The annual Sigmon Farm Tour was started in 1992 as an agricultural education program where students could experience being on a farm with the goal of increasing the agricultural literacy levels of the participants. Every year the entire 4th grade student population of Rockcastle County spends the day touring the farm and participating in experiential mini lessons given by the cooperating farm service and health agencies. The program has continued for 20+ years without an evaluation as to whether it is achieving its objectives. An Educational Video And Research Experiment On The Longevity Of Chicken Eggs, Kyle Patrick Mcdonald

Agricultural Education and Communication

The purpose of this project was to create a video designed to educate the public about chicken egg storage and refrigeration. The information in the video was based on a research experiment performed by the author, which was designed to measure the chronological decline of internal egg quality over a ten-week period. By creating an educational video about the longevity of chicken eggs, it is hoped that consumers will learn to keep their eggs past their sell-by dates. This project includes an educational video as well as an outline for a research project.
