Evaluating The Costs Of Alternative Malting Grains For Market Adaptation: A Case Study On Rice Malt Production In The U.S, Bernardo P. Guimaraes, Lawton L. Nalley, Scott Robert Lafontaine

Food Science Faculty Publications and Presentations

Climate change, import restrictions, and global conflicts are significantly impacting brewing raw material supply and costs. To shield the malting and brewing industries from these disruptions, alternative crops to barley must be explored. Rice presents a promising option, yielding twice as much per hectare as barley and showing greater climate resilience. Monte Carlo simulations estimated the economic and agronomic impact of using rice for malting. While rice malt is more expensive to produce, it remains an attractive gluten-free alternative. Beer brewed from 100% rice malt costs 33% more than barley-based beer but reduces acreage requirements by 50-67%. Using rice malt …

Assessing Health Implications Of Monarch Butterfly Populations And Behaviors, Kira Goldman, Kelsey E. Fisher Dr. May 2024

Assessing Health Implications Of Monarch Butterfly Populations And Behaviors, Kira Goldman, Kelsey E. Fisher Dr.

Honors Scholar Theses

Pollinator populations have seen massive declines over the past decade due to anthropogenic activity and climate change posing serious threats to the health of humans and ecosystems (Ulyshen & Horn, 2023). As agents responsible for the production of about 35% of micronutrient rich food crops necessary for adequate nutrition to lead healthful lives and prevent nutrition associated diseases, pollinator decline is a public health concern (Aizen et al., 2009). Monarch butterflies (Danaus plexippus) serve as bio indicators for the health of pollinator populations because of their analogous habitat and food resources shared with many other pollinator species, including bees and …

Environmental Implications Of Modern Food Production: An Analysis For The Conscious Consumer, Jessica T. Coming Jan 2024

Environmental Implications Of Modern Food Production: An Analysis For The Conscious Consumer, Jessica T. Coming

Cal Poly Humboldt theses and projects

This project explores the pathways by which agriculture affects the environment and determines which foods have the greatest climate, water, and land impacts. Agricultural effects on the environment are extensive, from loss of habitat and declines in regional biodiversity to disruption of global nutrient cycles and climate change. Global food production accounts for 26-34% of annual anthropogenic greenhouse gas emissions, makes up 38-46% of habitable land, and is responsible for 70% of freshwater extraction. The effect of agriculture on the environment is most significantly dictated by what type of food is being produced. Animal-based food products consistently have the highest …

Arusha Climate and Environmental Research Centre

Global and regional agri-food value chains feed societies and are an income source for hundreds of millions of farmers around the world. They are also target areas for action to achieve a global sustainability transformation. Agri-food chains are highly vulnerable in the context of multiple crises, including the global environmental crisis, geopolitical fragmentation, armed conflicts and wars, and the aftermath of the COVID-19 pandemic. Measures to increase chain resilience are widely discussed; however, some such measures contradict sustainability measures. While there has been considerable research on the sustainability and resilience of agri-food chains, few studies have integrated both perspectives or …

Vulnerable Vegetables And Efficient Fishers: A Study Of Primary Production Food Losses And Waste In Ireland, Tracey O'Connor, Rosanna Kleeman, Jennifer Attard

Publications

From 2022, the European Union Waste Framework Directive (WFD) requires member states to report annual food waste from each food supply chain stage. Comprehensive food losses and waste (FLW) data can be challenging to obtain for the primary production stage, i.e., farming and fishing. However, this information is vital in developing FLW mitigation actions appropriate to each country. This study describes the nature and extent of FLW from primary production in Ireland, using methods approved for WFD reporting. Causes of FLW and FLW as a proportion of total production were determined through interviews with Irish primary production stakeholders and using …

Undergraduate Theses, Professional Papers, and Capstone Artifacts

Our understanding of the science of anthropogenic climate change and its immediate and indirect impacts has grown within the last decade.Alongside anincrease in concern for the inequities within the industrialized food system, climate change is impacting agriculture and the communities that depend on it in myriad ways. These challenges have catalyzed investment in sustainable agriculture, “eat local” food movements, and rethinking of all aspects of food systems, including consumers, producers, retailers, and distributors. The body of literature on food systems primarily focuses on the connection between consumers and retailers; however, there is a notable absence of literature on the relationships …

Averting The Looming Food Crisis: A Clarion Call To Immediate And Near-Term Policy Action, Alwan A. Hassan

Economic and Financial Review

Nigeria suffers from food insecurity and poverty. It is estimated that the number of hungry people in Nigeria is over 53 million, which is about 25.0 per cent of the country’s total population of about 212 million. Also, about 43.0 per cent of Nigerians live below the poverty line. These statistics are worrisome, given that Nigeria, in the 1950s and 1960s, was not only self-sufficient in food production, but was also a net exporter of food to other regions of the continent (Ajayeoba, 2010). A nation is food secure when food is available and accessible in sufficient quantity and quality …

Averting The Looming Food Crisis: A Clarion Call To Immediate And Near-Term Policy Action, Adeleye O. Oyebade Mni

Economic and Financial Review

Food is defined by Britannica, a web-based encyclopaedia, as any substance consisting of protein, carbohydrate, fat, and other nutrients used in the body of an organism to sustain growth and vital processes, and to furnish energy.8 In a similar definition, Wikipedia described food as any substance consumed to provide nutritional support for an organism; adding that food is usually of plant, animal or fungal origin, and contains essential nutrients. The above definitions explain why food is viewed as an essential need of life. However, the production of food has been declining in recent times for some reasons, including the adverse …

Averting The Looming Food Crisis: A Clarion Call To Immediate And Near-Term Policy Action, Emmanuel A. Onwioduokit

Economic and Financial Review

Discussions on food security have gained traction in the recent past, especially in Africa and other developing economies. Several horrifying images of famished families, particularly around “The Horn of Africa” including Somalia, Ethiopia, and some parts of Kenya, projected globally in both the print and electronic media vividly illustrate the perils of food crises. In Nigeria, food constitute a substantial share of family budgets, particularly for low-income households. When prices of essential foods items increase poorer people suffer the adverse impacts more disproportionately. While clothing and shelter are basic necessities of life, food remains the most vital, given its centrality …

Novel Pilot Development Of A Closed-Loop Sustainable System Between Biogas Renewable Energy, Distilling, And Aquaculture By Vermiculture Of Stillage Wastes, Samuel C. Kessler Sep 2021

Novel Pilot Development Of A Closed-Loop Sustainable System Between Biogas Renewable Energy, Distilling, And Aquaculture By Vermiculture Of Stillage Wastes, Samuel C. Kessler

The Cardinal Edge

This study provides a mixed-methods approach in analyzing a potential closed-loop system between renewable biogas production from anaerobic digestion, vermiculture production, aquaculture production, and organic wastes with a particular focus on stillage wastes. Such system may hold significant promise for significantly reducing organic carbon and methane emissions from its components, and should be assessed for such. The 2021 IPCC report essentially identified methane reduction as the single fastest way to slow global warming (IPCC, 2021), making the study and implementation of methane-reducing systems and supportive policy for them critical. Knowledge gaps to implementing this system were qualitatively identified as disconnect …

An Analysis Of Crispr-Cas Gene Editing In Agriculture, Ashley Laliberte

Honors Scholar Theses

The CRISPR-Cas system is a promising form of gene editing, especially for the agriculture industry. The ability to make single-nucleotide edits within a gene of interest, without the need to introduce foreign DNA, is a powerful tool for designing healthier and more efficient crops and food animals. This system provides opportunity for increased nutritional value, decreased food waste, and more economically and environmentally sustainable food production. Though this biotechnology is facing mechanistic limitations due to off-target effects and inefficient homology-directed repair, vast improvements have already been made to improve its efficacy. The CRISPR-Cas system is already the most advanced form …

Paleoethnobotanical Evidence Of Early Formative Period Diet In Coastal Oaxaca, Mexico, Éloi Bérubé, Guy David Hepp, Shanti Morell-Hart

Anthropology Faculty Publications

In this paper, we discuss dietary and possible medicinal practices of an Early Formative period (2000–1000 BCE) community transitioning from Archaic-style to Formative-style lifeways. The results we present come from the analysis of plant residues, including microbotanical and macrobotanical remains, which were excavated at the village site of La Consentida in coastal Oaxaca, Mexico. Phytoliths and starch grains were recovered by sonication from twenty ceramic and lithic artifacts. The microbotanical analyses identified plant remains from four different families: Bombaceae (flowering plants), Dioscoreaceae (yam family), Fabaceae (bean family), and Poaceae (grasses, including maize). We also report on limited macrobotanical analysis, including …

Feeding The Future Meat Doesn’T Come Cheap, Lukas C. Southard

Capstones

Cultured – or as it is referred to by companies innovating the technology clean – meat is expected to be the next innovation to change the way the world gets its animal protein. Meat from animal cells grown in a lab seems like science fiction but it is around the corner from hitting your supermarket shelves. The technology has been developed but how these companies intend on scaling up their production to meet retail demands remains a mystery. So far companies have relied on seed and early stage investment from venture capital companies and private sources to fund research. Predictions …

Why Csas Matter: (Re)Localizing For People-Based Food Networks, Gretchen Alexander Jan 2019

Why Csas Matter: (Re)Localizing For People-Based Food Networks, Gretchen Alexander

Scripps Senior Theses

This thesis details the history of Claremont Market Shares, a Community Sourced Agriculture (CSA) project based out of Claremont, California. By using this project as a jumping off point for discussing local food networks, buzzwords such as "organic" and "local" are analyzed and re-defined. I argue for a people-based food network model over the currently popular 'place-based' that prioritizes producer-consumer relationships. The CSA functions as a sustainable model of this ideology.

The following report details a life cycle assessment of several dietary and meal scenarios with and without pork. The goal of the LCA was to identify the impacts of greenhouse gas emissions, water use, and land use of pork containing and porkless diets and meal plans in a field-to-fork analysis. The dietary and meal plan scenarios are iso-caloric meaning they contain the same number of calories. The first set of diets is based on a USDA consumption pattern, 2000 kcal per day. This diet was used to create three other dietary scenarios with and without pork. The USDA recommended food …

Testing Predictions Used To Build An Agrivoltaics Installation On A Small-Scale Educational Model, Katie Kinney, Rebecca Minor, Greg Barron-Gafford Oct 2016

Testing Predictions Used To Build An Agrivoltaics Installation On A Small-Scale Educational Model, Katie Kinney, Rebecca Minor, Greg Barron-Gafford

STAR Program Research Presentations

Models are valuable tools for explaining and testing systems. Small-scale models can be especially useful for educational purposes. For models to be useful, they have to accurately depict the larger system that they are describing. A novel man-made system, known as an agrivoltaic structure, is being constructed at Biosphere 2 near Oracle, Arizona. The word agrivoltaic is a combination of agriculture and photovoltaics, or solar farming. My research involved creating a small-scale version of this system for educational purposes. The model of this system tested two predictions: that plants will grow better in the shade of a panel and that …

Urban Agriculture As Embedded In The Social And Solidarity Economy Basel: Developing Sustainable Communities, Isidor Wallimann Sep 2016

Urban Agriculture As Embedded In The Social And Solidarity Economy Basel: Developing Sustainable Communities, Isidor Wallimann

Program for the Advancement of Research on Conflict and Collaboration

The Social and Solidarity Economy (SSE) is a viable strategy in dealing with some contemporary problems known both in industrial and developing countries. Addressed is how local populations could reach certain objectives and satisfy certain needs using techniques characteristic of SSE and, thus, carve out a social and economic space of their own vis-à-vis anonymous markets, global actors, local and national elites. Illustrated further is this strategy on the example of Urban Agriculture Basel, a unit of the Social Economy Basel. Within this self governed space, it is suggested, a path can be laid for the necessary transition towards local, …

Cla-Rich Soy Oil Shortening, Chocolate Paste, And Chocolate Bar Production And Characterization, Elizabeth Sarah Mayfield

Food Science Undergraduate Honors Theses

Conjugated linoleic acid-rich soy oil (CLARSO) has been shown to have numerous health benefits, including anti-obesity and anti-carcinogenic properties. This oil was previously used to produce CLA-rich margarine that provided the recommended daily value of CLA and showed physical characteristics similar to commercially available margarine. The objectives of this study were to produce CLA-rich shortenings and analyze their physical properties relative to commercially available shortenings and soy oil control shortenings and to produce CLA-rich chocolate bars and pastes by replacing a portion of the fat with CLARSO and compare the physical properties of these pastes/bars to controls made with either …

Our Gendered Food Chain, Jasmine T. Colahan Nov 2013

Our Gendered Food Chain, Jasmine T. Colahan

SURGE

Over the past four decades, the number of women-operated farms has nearly doubled. Including both primary and secondary operators, one million women make up thirty percent of all U.S. farmers.

Headlines such as “Females Take the Reins,” “Meet the New face of Agriculture,” “Old McDonald Might Be a Lady” demonstrate this gender shift. And, it is true in my life too. As I worked on the Painted Turtle Farm this summer, the majority of my role models, co-workers, and mentors working in agriculture, whether rural or urban, were primarily women. [excerpt]

Food Security And State: Policy Considerations For The Contemporary Food Crisis, Mangala Subramaniam, Christopher Bunka Jun 2013

Food Security And State: Policy Considerations For The Contemporary Food Crisis, Mangala Subramaniam, Christopher Bunka

Purdue Policy Research Institute (PPRI) Policy Briefs

In 1996, The World Food Summit (WFS) set a target to eradicate hunger in all countries and an immediate goal to half the number of undernourished people by 2015. Backed by the United Nations (UN), international organizations launched a global effort with the intent of achieving food security for all people. A variety of approaches were employed, including the distribution of food aid and farming supplies, skills training in agricultural development, funding for country-specific research, and legal counsel for states. Despite international efforts, over a decade later the number of undernourished was calculated to have risen by nearly 60 million …

A Portrait Of A Farm: A Short Film Documenting Small-Scale Livestock Production On Hayters Hill Farm In Byron Bay, Noah Throop

Independent Study Project (ISP) Collection

Over the past two-hundred years, the industrialization and mechanization of agriculture has slowly dissolved the centuries-old bond between human beings, the land and their food. Today, this disconnect threatens to exacerbate wide scale environmental degradation and a wide array of chronic diseases. However small, local farms that sell their produce directly to consumers are in a position to reverse this trend and reconnect consumers with their food. Small-scale farmers are able to see the health of the environment as instrumental to their economic and personal wellbeing and are able to be held accountable for their farming practices by their customers. …
