The demand for clean-label meat products has increased interest in natural alternatives to synthetic antioxidants and antimicrobials. This study evaluated the effects of buffered dry vinegar (BDV), fermented onion juice (FOJ), and their combination (CMB) on microbial stability and sensory quality of pork sausage during 9 days of refrigerated storage. Sausages were assigned to control, FOJ (0.5%), BDV (0.5%), or CMB (0.25% each) treatments. BDV and CMB significantly reduced aerobic and psychrotrophic counts by days 7-9, while yeast increased across all treatments over time, reaching ~7 Log CFU/g by day 9. Two studies investigated various aspects of channel and hybrid catfish production and processing. The first study examined the effects of ammonia stress (15 mg/L vs. 1 mg/L control) on growth performance and fillet quality. While channel catfish demonstrated superior growth, ammonia stress minimally impacted the sensory profiles of both species. Gut microbiota analysis revealed species-specific differences, with Lactococcus lactis dominating hybrid catfish communities. The second study evaluated buffered vinegar treatment (1.5%) on fillet shelf life during refrigerated storage. Vinegar-treated fillets maintained better microbiological quality, with aerobic plate counts remaining below 7 log cfu/g through day 6, while untreated fillets exceeded …

The objective of this research was to investigate the biopreservative effects of chitosan and lemon essential oil in slush ice treatments on the microbial shelf life of refrigerated catfish fillets. Catfish fillets were stored in slush ice treatments containing chitosan (CH), lemon essential oil (LO), a combination (CH+LO), water (CTRL), and no slush (NS) for three d at 4 C, then stored at 4C for twelve d post-slush. The growth of background microflora in catfish fillets treated with CH and CH+LO was reduced (P<0.05), maintaining total aerobic counts below 4.5 log CFU/g, while the control reached spoilage levels (>7 log CFU/g) by Day 6. Salmonella contamination in cookie dough poses a threat to consumers. This study investigated the effect of X-ray irradiation on Salmonella-inoculated ready-to-bake chocolate chip cookie dough and its impact on dough quality. A Salmonella cocktail (~10 log CFU/g) was prepared and inoculated into cookie dough samples (~6.5 log CFU/g) and then treated with X?ray irradiation (0.25, 0.5, and 1 kGy). Salmonella decreased by 1.15, 1.79, and 2.49 log CFU/g, at an exposure of 0.25, 0.5, and 1 kGy, respectively. Quality parameters (pH, aw, and colorimetry) were evaluated for two brands. Understanding the bacterial profile of chicken during processing is essential to identify spoilage-related bacteria. Using advanced methods like Oxford Nanopore sequencing, specific bacterial species on chicken meat can be identified. This study aimed to characterize bacterial composition and diversity on chicken breast during processing. Results showed a reduction in aerobic bacteria, E. coli, coliform, and lactic acid bacteria counts. However, three thermophilic bacteria, Anoxybacillus contaminants, Neobacillus thermocopriae, and Anoxybacillus flavithermus, dominated across processing steps. Notably, Pseudomonas species were undetected by conventional plating but identified via Nanopore sequencing, highlighting the need for molecular detection methods. Hummus consumption has risen but multiple foodborne outbreaks due to Salmonella contamination have been reported. Essential oils (EOs) eugenol and carvacrol have been found to inhibit the growth and survival of Salmonella in food products. The objective was to evaluate antibacterial properties of various concentrations of eugenol (EU) and carvacrol (CA), alone or in combination (EUCA) against Salmonella in vitro and in hummus. Eugenol demonstrated a MIC of 0.125 mg/mL and an MBC of 0.25 mg/mL, while carvacrol showed a MIC of 0.0625 mg/mL and an MBC of 0.125 mg/mL. In the hummus study, 2% EUCA was the most effective …

Sweet potatoes are a worldwide staple crop and granola bars are popular with consumers. This study aims to create a granola bar utilizing sweet potatoes and to assess its changes over time. Initial formulations tested minimum and maximum concentration of sweet potato (SP) puree, formulations, cooking type and time/temperature, humectants and preservatives. Bars containing 30 and 45% SP butter were chosen. Dry-cured hams may become infested with Tyrophagus putrescentiae (ham mites) during the aging process. Traditionally, methyl bromide (MB) fumigation has been used to control these infestations, but its phase-out due to environmental concerns has prompted the need for alternative methods. This study evaluated the effectiveness of acetic acid-coated ham nets and carboxymethyl cellulose (CMC)-based edible films with propylene glycol (PG) in mitigating mite infestations. Laboratory trials assessed the impact of these treatments on mite orientation, reproduction, infestation rates, and sensory quality. This study examined the effects of wet aging on water-soluble flavor compounds, descriptive flavor, consumer acceptability, and willingness-to-pay of beef strip steaks. Twenty USDA Select boneless beef loins (NAMP #180) were dorsally divided into four equal portions, which were randomized to receive either 0, 7, 14, or 21 d of wet aging. Short-chained peptide concentration increased from 4.11 mg/g on d 0 to 5.12 mg/g on d 7 (P = 0.011) and subsequently increased to 7.14 mg/g on d 21 (P < 0.001). Cooked beef contained 1.85 mg/g less short-chained peptides than raw beef (P < 0.001). Wet aging for 21 d increased the concentrations of amino acids, which are precursors for the Maillard reaction, including methionine, threonine, cystine, serine, tryptophan, and phenylalanine (P < 0.001). This study examined the effects of electrical stimulation on water-soluble flavor compounds in beef semimembranosus muscle, collected immediately after exsanguination (PRE), immediately after stimulation (POST), and 24 h postmortem (H24) from both stimulated (ES) and non-stimulated (CON) carcasses. Short-chained peptides were greater in ES at H24 (P = 0.007). Glutamic acid concentration was above its taste threshold (0.044 mmol/kg) and was less in ES at PRE and POST by 0.030 mmol/kg (P ≤ 0.028) but was similar in both ES and CON by H24 (P = 0.142). The purpose of this study was to describe diet and/or physical activity-based interventions and their control in cardiometabolic risk factors of diabetes for the South Asian (SA) population. A systematic review was conducted in accordance with the PRISMA guidelines. Seventeen randomized control trials meeting the inclusion criteria were included for analysis. Interventions with type-2 diabetic SA showed significant improvements in HbA1c% (4/5 studies), fasting blood glucose (3/4 studies), and postprandial glucose (2/2 studies). Interventions with at-risk/prediabetic and non-diabetic SA showed a modest change in overall outcomes, with significant change reported for post-prandial insulin (3/4 studies), BMI and weight (2/4 studies), …

This study identified marginal agricultural lands in the Lower Mississippi Alluvial Valley using crop yield predicting models. The Random Forest Regression (RFR) and Multiple Linear Regression (MLR) models were trained and validated using county-level crop yield data, climate data, soil properties, and Normalized Difference Vegetation Index (NDVI). The RFR model outperformed MLR model in estimating soybean and corn yields, with an index of agreement (d) of 0.98 and 0.96, Nash-Sutcliffe model efficiency (NSE) of 0.88 and 0.93, and root mean square error (RMSE) of 9.34% and 5.84%, respectively. Converting lignin, the second most natural abundant polymer on earth, into lignin nanoparticles (LNPs) form has potential applications. LNPs’ emulsifying, antibacterial and antioxidant properties of three different lignins, softwood kraft lignoboost (LB), hardwood birch (BB) and alkali protobind 1000 (PB) were evaluated in a comparative study at different pH and concentrations. This study focused on evaluating the antimicrobial activity of chlorine dioxide (ClO2) and different plant-based antimicrobials (carvacrol, thymol, and eugenol as bioactive compounds and muscadine extract- ME and blueberry extract- BBE as plant extracts) against selected foodborne pathogens under in vitro conditions and on produce (spinach and blueberries). This study determines the differences in survival of eight Salmonella strains concentration of BAC in water, followed by regrowth in high and low nutrition conditions containing sublethal concentration of BAC. Our results show strain difference in survival, persistence of Salmonella in BAC at different concentrations. All eight strains of Salmonella were non-recoverable when exposed to 40 to 48 µg/ml BAC for 1h in water. When exposed to 24 µg/ml of BAC for 1 h in water, S. Typhimurium ATCC 14028 and S. Frozen, thawed and osmotically-dehydrated highbush (HB) (Vaccinium corymbosum) and rabbiteye (RB) (V. virgatum) blueberries were analyzed under a scanning electron microscope (SEM) to observe microstructural differences in their skin. Rabbiteye blueberries of both frozen, thawed and osmotically-dehydrated treatments, had thicker skins than highbush blueberries. Rabbiteye blueberries, collected from local farms, packed and blast frozen (PBF), had thinner skins than individually quick-frozen (IQF) blueberries. Washing berries prior to freezing had no effect on skin thickness. This case study describes how Alternative Retail Food Outlets (ARFOs) managers and owners in a county in South Texas near the U.S. – Mexico border I am calling Esperanza County, decide what food to eat and to sell. Data from qualitative interviews reveals that the South Texas socioeconomic – cultural context and informants’ economic constraints shaped two different conceptions of good food. Inosine 5’- monophosphate (IMP) was the most abundant nucleotide in meat known to impart umami taste which thus far had been overlooked in meat flavor studies. The objectives of this study were to determine the umami taste threshold of inosine 5'-monophosphate (IMP), the effects of spiking IMP on the sensory descriptive attributes of various USDA graded beef strip steaks, and to differentiate beef by IMP content using electrochemistry. Raw milk sales are legal in 30 states, including Mississippi, where regulations are largely management-based and not food-safety related. The research objectives were to analyze the microbial profile of raw goat milk from Mississippi farms and assess food safety practices and perceptions of dairy goat farmers. Deficiencies and opportunities for improvement in raw goat milk safety were identified. Staphylococcus spp. was present in most (70%) milk samples but aligned with drying-off. E. coli, Enterobacteriaceae, and coliforms were observed in 4, 10, and 12 samples, respectively; no Salmonella spp. or Listeria monocytogenes were detected. The survey highlighted farmers' need for …
