Food science provides an opportunity to engage high school students in Science, Technology, Engineering, and Mathematics (STEM) by connecting classroom concepts to real-world applications. Despite the field’s relevance to public health, food safety, sustainability, and innovation, food science remains largely absent from high school curricula, and few students recognize it as a viable STEM pathway. This research addressed this gap by evaluating immersive summer camp experiences and teacher-focused curriculum review as strategies to increase food science awareness and interest among students and educators. Urban farming can enhance the lives of communities and help reduce food scarcity. This paper presents a conceptual prototype of an efficient urban farming community that can be scaled for a single apartment building or an entire community across all global geoeconomics regions, including densely populated cities and rural, developing towns and communities. When deployed in coordination with smart crop choices, local farm support, and efficient transportation then the result isn’t just sustainability, but also increasing fresh produce accessibility, optimizing nutritional value, eliminating the use of ‘forever chemicals’, reducing transportation costs, and fostering global environmental benefits.

Multilingual Zambia - Language Issues In Primary/Secondary Schools Of The Eastern/Southern Provinces, Kenzie Steiner

NUTR/GLST 498b: Global Research Experiences in Nutrition and Health

Introduction: Zambia is a multilingual country that uses 8 different languages for instruction including English and 7 other indigenous languages.

Methods: Survey research conducted between May-June 2022 on 6-7th graders within 9 Zambian schools. Classroom observations made and teachers interviewed.

Results: In Eastern and Southern Provinces, Zambian teachers speak an average of 5 languages while students speak an average of 2. Both teachers and students say English remains the most important language followed by first languages.

Conclusion: Continued research on language-in-education policies and impacts on student performance must be conducted if “One Zambia, One Nation” is meant to promote all …

Virginia Cooperative Extension (VCE) educators are uniquely positioned to support the food recovery organizations (FROs) which address hunger-related needs resulting from food insecurity. Based on an online survey to measure how VCE educators have engaged with FROs and their experiences, respondents who previously supported FROs did so across multiple programming areas, and those who had not indicated an interest while also experiencing barriers. Respondents also reported the need for context- and audience-specific resources particular to the spectrum of food recovery. Addressing barriers and resource needs through a transdisciplinary eXtension Food Recovery Community of Practice may support educators in doing this …

Introduction: Fish is an affordable animal source food that provides nutrition and serves as a source of income for many people especially women in Nigeria. Smoking and sun drying are the processing methods in practice that expose the fish products to possible contaminants which may consequentially negate their nutritive value.

Aim: To improve the knowledge of fish processors on nutrition and safe fish handling.

Students are exposed to food concepts in agriculture-based career technical education (CTE) courses which provide a gateway for students to become more aware of food science career pathways. Professional development for Mississippi (MS) CTE teachers is needed to effectively implement food science-based instruction since there is not a food science curriculum framework adopted in MS. A native of Hawaii, Kevin Ponce left the islands after high school to join the US Air Force. After a 20-year career in the Air Force Ponce retired. Having earned a degree in hotel and restaurant management he took the position as an area supervisor for the Oklahoma City Public Schools. This was followed by a position overseeing the procurement of food and equipment. Eventually he took a food service director position, where he moved up to larger and larger districts. Kevin up running a district with over eighty schools before eventually retiring again after another-plus year career.

Beth Rice is a native of Tennessee and studied at University of Tennessee Martin and University of Tennessee, Knoxville, before entering the field of child nutrition. Beth worked in a residential child care institution, for the Tennessee State Department of Education, and as a child nutrition director for Lake County, Tennessee, before joining the Fulton County School District in western Kentucky, from where she retired. Beth now works as a consultant for the Institute of Child Nutrition, instructing other directors in a course called Orientation to School Nutrition Leadership.

A native Oxonian, Beth King has never lived anywhere else. King was educated in the Oxford, Mississippi, public schools before earning multiple bachelor’s and master’s degrees, and then taking a PhD from the University of Mississippi. She worked at the J.D. Williams Library for a number of years before being recruited to move to the National Food Service Management Institute, now the Institute of Child Nutrition, where she helped develop the Institute’s computer technology.

Shirli Self is an Idaho native who has worked in school nutrition both in Idaho and Oregon, in a unique position. The area where she currently works in Oregon is so rural and remote that Oregon pays for her students to finish high school in Idaho after they complete eighth grade in Oregon, because the nearest Idaho high school is much closer than the nearest Oregon high school. She has twenty-one years of school nutrition experience and is a one-woman show, having no employees and being responsible for feeding ninety-three K – 8 students every day.

He spent more than a decade at the district level before moving to the state, where he specialized in troubleshooting financial issues and getting districts back on track. He was also instrumental is creating a statewide purchasing program for the State of Alabama nutrition programs.
