Our program aimed to increase knowledge related to fermented foods. Over 400 stakeholders registered for a webinar series that focused on defining fermented foods, health benefits of fermenting foods, and the safety of fermented foods. Participants indicated increases in knowledge and overall satisfaction with the content of the fermentation curriculum. The impact of the COVID-19 pandemic on the program outcomes are discussed.

Evaluation Of Nitrite Concentration In Edible Bird’S Nest (White, Yellow, Orange, And Red Blood), Siti Gusti Ningrum, Bagus Uda Palgunad, Rochiman Sasmita

The color of edible bird’s nest is associated with its nitrite concentration, but this relationship remains inconclusive. This investigation aimed to evaluate the nitrite content in edible bird’s nest of four different colors: white, yellow, orange, and red blood. Fifty-eight edible bird’s nest samples were obtained from five swiftlet farmhouses in Borneo Island, Indonesia and analyzed for nitrite content using Genesys 30 visible spectrophotometer. Results showed that the dark-colored edible bird’s nests (yellow, orange, and red blood) had higher nitrite concentrations of 304, 317, and 309 ppm, respectively, compared with the white-colored one (15 ppm). Fermentation is the process by which primarily lactic acid bacteria (LAB), an environmentally ubiquitous group of organisms, convert carbohydrates into several byproducts, including acid, ethanol and/or gas. Often these resulting byproducts create desirable foods with unique flavor attributes and an increased inherent safety due to acidification. Vegetables such as red beetroot are suitable commodities for fermentation, due to abundant nutrient sources to sustain the LAB population. However, sufficient growth of LAB may lead to the production of harmful biogenic amines, specifically histamine and tyramine which can cause an allergic reaction and poisoning at high levels. Developmental states are criticized for rapid “industrialization without enlightenment.” In the last 30 years, China’s breathtaking growth has been achieved at a high environmental and food safety cost. This article, utilizing a recent survey of China’s livestock industry, illustrates the initiating role of China’s developmental state in the exponential expansion of the country’s livestock production. Although extensive research has been conducted to understand consumers’ knowledge of food safety risks, there is a lack of research on consumers’ knowledge, perceptions, and behaviors towards risks associated with locally grown, processed, and manufactured foods sold at farmers’ markets. Recently, there has been a movement toward purchasing local foods to support local economies, out of concern for food miles, or because of a perception of higher quality goods. In Tennessee, the number of farmers’ markets has doubled in five years. Governments have begun legislating against cage egg production and a growing number of major food retailers, restaurant chains, and foodservice providers worldwide are switching to cage-free eggs. Extensive scientific evidence strongly suggests this trend will improve food safety. All fifteen scientific studies published in the last five years comparing Salmonella contamination between caged and cage-free operations found that those confining hens in cages had higher rates of Salmonella, a leading cause of food poisoning worldwide. This has led prominent consumer advocacy organizations, such as the Center for Food Safety, to oppose the use of cages to confine egg-laying hens.
