This study was developed to assess whether microencapsulation of amino acids (AA) improves their absorption to increase broiler growth performance and reduce nitrogen excretion compared to standard feed-grade AA. Five hundred and sixty Ross 708 male broilers were randomly distributed to 70 battery cages and reared for 21 days. Reported data is grouped into periods: 0-7 days, 0-14 days, and 0-21 days. A total of 5 treatment diets were fed: an industry-based control and 4 diets with decreased levels of methionine, lysine, and threonine in either encapsulated or free forms, with or without a botanical feed additive. Bacillus spp. are ubiquitous, Gram-positive, spore forming bacteria that are commonly recovered from the environment and gastrointestinal tract (GIT) of poultry. These spores are capable of withstanding harsh condition such as feed pelletization, which facilitates inclusion in poultry feeds. Once ingested by the bird, spores germinate into metabolically active vegetative cells which can produce extracellular enzymes which can hydrolyze otherwise indigestible components of the feed. Soybean meal (SBM) is the gold standard vegetable protein source for non-ruminant animals worldwide and is included in practically all poultry diets in the United States at levels ranging from 10 to more than 30%. …

This course provides students with a farmer’s perspective on the management, production and marketing of poultry and pigs on a small farm. This course will address the advantages of having pigs and poultry and will review basic care, processing options, regulations, marketing and finances. The course will be structured around lectures, farm visits, guest lectures and acquiring hands on skills. We will explore different alternative farming systems that utilize animals to enhance their production. At the end of this course, students will be able to utilize pigs and poultry as an integral part of their small farm plan.

Broiler breast myopathies, including woody breast, white striping, and spaghetti breast, negatively impact the industry. Therefore, evaluation, prediction, and frequency of these muscle abnormalities on modern birds are important for decision making. Modern broilers are not highly active and often sit with the breast of the bird resting on the floor. Therefore, the first experiment was to promote bird movement and explore the impact on the breast myopathies. Over the past few decades, broiler breast meat has changed in terms of meat quality. Meat quality has deteriorated with the rise in the occurrence of muscle myopathies. Conditions such as woody breast, which is described as pale and bulging areas of distinct hardness, compromise both the textural and technological traits that have been associated with breast meat. The Meullenet-Owens Razor Shear (MORS) method is a common method for indirectly assessing poultry meat tenderness. Campylobacter jejuni, a leading cause of bacterial gastroenteritis worldwide, is strongly associated with the consumption and/or mishandling of raw contaminated poultry products. Thus, interventions aiming to reduce C. jejuni counts on poultry products could greatly reduce the incidence of human campylobacteriosis. In the first study, the efficacy of a generally recongnized as safe (GRAS) compound, carvacrol (CR; derived from oregano oil), as an antimicrobial wash treatment to reduce C. jejuni on chicken skin was evaluated. An increase in the consumption of poultry has generated an increase in demand for higher yielding broilers. This has led to an increase in atypical meat and issues with appearance. Color is a direct result of a pH decline as meat goes through rigor mortis with meat generally becoming lighter. If the pH declines too rapidly or too slowly, meat quality can suffer. Physical properties of meat can be altered by pH. A fast pH decline results in pale meat with decreased tenderness. A slow pH decline can result in darker meat with a reduced shelf-life.
