Vineyard Age Effect On Juice Chemistry, Anthocyanins, And Total Phenolics, Eric L. Camera

Grapevines (cv Zinfandel) planted in the same vineyard 100 years apart were analyzed for juice chemistry and phenolic content of the fruit. The vineyard was dry farmed, and vines from the original 1890 vineyard were compared to vines inter-planted in 1990. As “old vine” wines can command higher prices in the market due to a perceived difference in fruit characteristics. This study attempted to observe if there was a measurable difference in fruit characteristics, or if it is simply an effective marketing strategy. Wine Flavor Perception In A Person With Isolated Congenital Aglossia, Naïve Wine Taster, And Sommelier, Kristin Mahood, Long Wang, Betty Mcmicken, Cheryl Rock

Objective: This study aimed to augment previous research that investigated flavor perception in isolated congenital aglossia by a whole food/beverage approach. Isolated congenital aglossia is the rare condition of absence of a tongue at birth without the presence of other symptoms. Previous studies confirmed taste perception in isolated congenital aglossia using single taste solutions including sour, salty, sweet, bitter, and umami.

Methods: The current randomized, double-blinded study age- and sex-matched a naïve wine taster and sommelier to the 46 year-old female with isolated congenital aglossia. A Nose and Palate Survey with 54 variables created based on the Court …

One of the most effective methods of reducing pesticide application in vineyards is breeding hybrid varieties for disease resistance. The new varieties must be assessed for disease resistance and viticultural traits. This thesis focuses on seven new varieties from a cross of ‘Norton’ and ‘Cabernet Sauvignon’. ‘Norton’ was chosen because of its disease resistance and cold hardiness. ‘Cabernet Sauvignon’ was selected because of its high-quality wine making berries. Over 500,000 tons of organic materials such as food scraps are disposed of each year in Wisconsin. A large percentage of this material could be composted or turned into useful products. The purpose of this article is to educate farmers and organizations on how to turn food waste into a high value food source for livestock. Yeast can be grown at any time of the year without the large inputs of agricultural chemicals and machinery that is common with other feed production methods.
