An Environmental Approach To Food Safety Assessment Using Artisan Cheese And Fresh Produce As Model Systems, Marie Limoges

This dissertation examined recently issued regulatory standards using cheese and produce as model systems. FDA's 2015 Domestic and Imported Cheese and Cheese Products Compliance Program Guidelines (CPG) E. coli standards on cheese safety, and the extent to which these standards affect domestic and imported cheese commerce, was assessed. Results from FDA's Domestic and Imported Cheese Compliance Program for samples collected between January 1, 2004 and December 31, 2006 were analyzed. Of 3,007 cheese samples tested for non-toxigenic E. coli, 76% (2,300) of samples exceeded 10/g, FDA's target for regulatory activity. In cheese samples containing E. coli levels of 10/g and …

This dissertation investigates food safety regulations and international trade of agricultural products dividing into three aspects: the signalling effect from U.S. strict food safety regulations on U.S. vegetable exports, political determinants of sanitary and photosanitary non-tariff barriers, and the impact of trade barriers on employment in developing countries. In chapter 2, we investigate the impact of high U.S. maximum residue limit (MRL) standards on U.S vegetable exports to 102 countries utilizing the hierarchical model. Escherichia coli (E. coli) are common and typically innocuous copiotrophic bacteria found in the mammalian gut microbiome. However, over the past 30 years, pathogenic E. coli have been responsible for several outbreaks of foodborne illness linked to contaminated produce. The introduction of Escherichia coli to an agricultural soil, via contaminated water, compost, or raw manure, exposes the bacterium to a medley of ecological forces not found in a mammalian gut environment. This study assesses a variety of abiotic and biotic soil factors that influence the ability of an "invasive" copiotrophic coliform bacterium to survive in compost-amended agricultural soil. Raisins are an important export commodity for Afghanistan, however, Afghan packers are challenged to export to markets seeking high quality products due to limited knowledge regarding their quality and safety. To evaluate this, Afghan raisin samples from pre-, semi-, and post-processed raisins were obtained from a raisin packer in Kabul, Afghanistan. The raisins were analyzed and compared to U.S. standards for processed raisins. The samples tested did not meet U.S. import standards for embedded sand, but the process used to clean the raisins is suitable to maintain food safety standards.

The major focus of this study was to identify the linkage between information and consumer behavior and to examine the role that a new media index played in the identifying the tone of news stories. Past studies have relied on using the number of media stories but, this study tests a new approach, i.e., in order to analyze the effect of information by incorporating the sentiment indices. This senior project investigates the relative efficacy of ozonated water and chlorinated water for the purpose of sanitizing freshly-harvested organic produce. The aim of this study was to assist the Cal Poly Organic Farm in deciding whether or not to invest in an ozone generator. The crops used for testing were grown organically in the same field. Carrots and cilantro were harvested and promptly treated with 5 ppm ozone solution or 25 ppm sodium hypochlorite solution. Food safety is an important public health issue. Product recalls are an important part of the overall food safety system and occur when potentially unsafe products enter the marketplace. However, it is important that information about the recall ultimately reaches the public. This research assesses the publicity that recalls receive by the popular media. The focus is specifically on recalls of meat and poultry products. Publicity is measured by coverage in the AP Newswire. Household-level Canadian meat purchases from 2002-2008, a Food Opinions Survey conducted in 2008 at the national level and household-level egg purchases from 2002-2005 in Alberta and Ontario were used to explore consumer responses to Bovine Spongiform Encephalopathy (BSE) in Canada.

The opinions survey focused on nutritional priorities, general and specific food safety concerns, and trust in government and food industry decision makers. The egg data set contained specific product information allowing us to distinguish purchases of conventional eggs from those of value-added eggs with perceived health attributes. Food safety events receive substantial media coverage and can create devastating economics losses for agribusiness firms. It is unclear what factors influence consumers’ purchasing decisions before or after a food safety event occurs. The objectives of this study is to identify these factors that influence purchasing decisions, determine how consumers respond to hypothetical food safety events, and compare these findings across different products and geographical regions.
